- Preheat oven to 425°. In a large skillet over medium heat, heat oil. Add onion and cook until soft, 5 minutes, then add ground beef and Worcestershire and cook until no longer pink, 6 minutes more. Season with salt and pepper and drain fat.
- Spread half the tortilla chips in an even layer onto the baking sheet. Top with half the ground beef and half the cheese. Repeat one more layer and bake until cheese is melty, 12 to 15 minutes.
- Drizzle with ketchup and mustard and top with tomatoes, lettuce and pickles. Serve.

- Preheat the oven to 350 degrees F. Brush both sides of the tortillas with 1 tablespoon oil. Stack the tortillas and cut the pile into quarters. Spread the chips out in a single layer on a baking sheet and bake until crisp and just beginning to turn golden brown, rotating the pan halfway through, 14 to 16 minutes. (Leave the oven on.)
- Meanwhile, mix the pickles and onions in a small bowl and set aside. Heat the remaining tablespoon oil in a medium skillet. Add the ground beef and 1/2 teaspoon salt and cook over medium heat, breaking it up into small pieces and stirring occasionally, until browned and cooked through, 8 to 10 minutes. Stir in 16 pieces of the American cheese and cook, stirring often, until the cheese is melted, 2 to 3 minutes.
- Evenly divide the beef mixture among the tortilla chips. Place one piece of American cheese over the beef on each chip and bake until the cheese is melted, 4 to 5 minutes. Evenly top each chip with the pickle mixture, and then with some bacon. Top the chips with a squeeze of ketchup and mustard and serve.
CHEESEBURGER POTATO SOUP
Steps:
- For the toasted sesame buns: Set the oven to broil. Toss the sesame bun chunks on a sheet pan with the oil and a pinch of salt and pepper. Broil until golden brown, about 5 minutes.
- For the cheeseburger potato soup: In a large Dutch oven, cook the bacon over medium heat until crispy, about 7 minutes. Remove to a paper towel lined plate to cool, then roughly chop. Set aside.
- Add the beef and a pinch of salt to the Dutch oven and cook, breaking up with a spoon, until browned, 4 to 5 minutes (it will continue to cook through). Add the onion, carrot, celery and a good pinch of salt and pepper and cook until translucent, about 10 minutes. Add the garlic and mustard powder and cook for another minute. Add the potatoes, stock, parsley, 1 1/2 teaspoons salt and a bunch of turns of pepper and bring to a boil, then simmer until the potatoes are tender (pierce with a fork to check), 30 to 40 minutes.
- Add the heavy cream and 8 ounces cheese and stir until the cheese is melted.
- Finish the soup with the pickle brine. Taste and adjust for seasoning as desired. Ladle the soup into bowls, then top with some of the remaining shredded cheese, pickles, bacon, a drizzle of ketchup, mayo if you're freaky, and toasted sesame buns.

- Preheat oven to 350 degrees.
- In a large bowl combine potato wedges and 2 tbsp olive oil, toss to coat.
- Place potatoes on a large sheet pan.
- Bake for 20 minutes, turning each wedge over after 10 minutes.

Steps:
- Peel the potatoes and cut into 1/2-inch dice.
- Fry the bacon in a skillet over medium heat until crisp. Transfer to paper towels to drain. Drain the fat from the skillet.
- Cook the beef in the skillet over medium heat, breaking it up into small pieces. When it is no longer pink, use a slotted spoon to transfer it to a plate.
- Add the onion to the pan and cook for 5 minutes, or until soft.
- Stir in the sugar, flour, salt, dill, thyme, parsley, garlic, onion powder, and pepper. Cook, stirring, for about 2 minutes, or until the flour starts to brown. Add the water and vinegar and simmer for 2 to 3 minutes, stirring to make a smooth sauce. Crumble the bacon into the sauce and add the cooked beef. Add the potatoes and stir gently to coat with sauce.
- Pour into a serving dish and sprinkle with cheese.
- Serve hot.
- VARIATION: To reduce the fat in this dish, use turkey bacon. Add 2 teaspoons olive oil to the pan before cooking the onion. Use grated Parmesan cheese instead of Cheddar, or omit the cheese altogether.
