PEARS AND DRIED FRUITS IN A TAGINE
Pears and other dried fruits with lemon and honey cooked in a tagine.

Steps:
- Preheat the oven to 375 degrees F (190 degrees C).
- Wash lemon and remove peel with a knife, trying to keep it in one long string. Squeeze juice from 1/2 of the lemon into a small saucepan. Add honey, cinnamon stick, and vanilla bean. Bring to a boil, then lower heat and simmer until fragrant and syrupy, about 5 minutes.
- Arrange pears, core-sides up, in a tagine. Add prunes, apricots, almonds, and lemon peel around the pears and on top if necessary. Pour lemon juice mixture over top allowing cinnamon stick and vanilla bean halves to fall into the tagine. Cover.
- Cook in the preheated oven for 20 minutes. Remove from the oven and take off the cover, allowing any condensation to fall back into the tagine. Turn pears over and add pine nuts. Replace the cover and cook for 10 minutes. Turn the oven off, and allow the tagine to sit in the hot oven until sauce thickens a bit, about 10 minutes. Serve.

- Trim fat from beef.
- Cook beef in nonstick Dutch oven over medium heat until brown on all sides; drain. Sprinkle with salt and pepper. Add wine, onions and tomatoes. Heat to boiling; reduce heat. Cover and simmer 3 hours.
- Add yams, peaches and pears. Cover and simmer about 30 minutes or until yams and meat are tender.
- Remove beef, fruit and vegetables; keep warm. Skim any fat from liquid in Dutch oven. If necessary, add enough water to liquid to measure 2 cups.
- Mix cornstarch and cold water; gradually stir into liquid. Heat to boiling, stirring constantly. Boil and stir 1 minute. Serve with beef, fruit and vegetables. Garnish with chopped fresh parsley if desired.

ROASTED PEARS WITH DRIED APRICOTS AND PISTACHIOS RECIPE - (4/5)

- Adjust oven rack too middle position and heat oven to 450 degrees. Melt 1½ Tablespoon butter in oven safe 12 inch skillet on medium-high heat. Place pear halves, cut side down in skillet. Cook, without moving them until pears are just beginning to brown, 3-5 minutes. Transfer skillet to oven and roast pears for 15 minutes. Using tongs, flip pears and continue to roast until tender, 10-15 minutes longer Using tongs, transfer pears to platter. Return skillet to medium-high heat and add wine, apricots, sugar, cardamom, salt and remaining 1 tablespoon butter. Bring to simmer, whisking up any browned bits. Cook until sauce is the consistency of maple syrup, 7-10 minutes. Remove pan from heat and stir in lemon juice. Pour sauce over pears, sprinkle with pistachios, and serve.

- Preheat oven to 400 degrees. In a 9-by-13-inch baking dish, whisk together apple cider, 2 tablespoons sugar, and butter. Add pears, dried cherries, prunes, and lemon zest and juice; toss to combine.
- Cover with aluminum foil, and bake 15 minutes; remove foil and continue to bake, tossing once, until fruit is tender and beginning to brown, 20 to 25 minutes more.

- Preheat oven to 450°F.
- In an ovenproof 10-inch heavy skillet toast almonds in one layer in middle of oven until golden, about 5 minutes, and transfer to a bowl.
- Halve pears lengthwise and cut each half into 3 wedges, discarding cores. Quarter figs lengthwise.
- In skillet melt sugar and butter over moderate heat, stirring occasionally, until sugar is melted completely and remove skillet from heat. With a knife halve vanilla bean lengthwise and scrape seeds into butter mixture. With a wooden spoon stir in vanilla pod, cinnamon, allspice, pears, and figs until coated and roast in middle of oven 20 minutes, or until pears are just tender. Remove pod and with spoon stir in almonds until coated well.
- Serve fruit mixture warm with sour cream.

- Adjust oven rack to center position and heat oven to 400 degrees. Place butter in a baking pan large enough to hold the pears in a single layer: set in the heating oven until it melts.
- Sprinkle sugar over melted butter, then place pears, cut side down, on top. Bake until tender, about 30 minutes.

- In a small bowl, toss pears with 1 teaspoon oil. Place in a 15x10x1-in. baking pan coated with cooking spray. Bake at 400° for 10 minutes. - Preheat oven to 350°F.
- Peel, if you wish (I leave them unpeeled) Slice pear in half lengthwise, scoop out seeds to make a nice circle. Spray with veggies spray and set aside in a gratin dish sprayed with veggie spray, cut side up.
- In a small bowl mix together, cream cheese, salt, nutmeg and 1 teaspoon honey. Fill each pear half cavity with half of the cheese mixture.
- Place a half walnut on top of the cheese mixture; lightly press it down. Drizzle pear halves with remaining teaspoon of honey.
- On centre grate in oven, roast at 350°F for about 1 hour or until soft. Test with a toothpick at about 45 minutes.
CINNAMON-ROASTED PEARS WITH DRIED CHERRIES AND CARAMEL SAUCE
In responding to a recipe request here on Zaar, I found this recipe on the Readers Digest website. The requester wanted a non-dairy caramel sauce and I will post that separately. The sauce in this recipe is NOT dairy-free. This recipe includes instructions if you want to make the pears one day ahead of time and the sauce up to one week ahead of time. I have not tried this, but it sounds delicious!

- Preheat oven to 350°F.
- Put cherries in small bowl.
- Heat orange liqueur almost to boiling.
- Pour hot liqueur over cherries.
- Set aside until liquid is absorbed.
- In a small saucepan over low heat, melt butter.
- Stir in cinnamon.
- Arrange pears in an ungreased 13-inch x 9-inch baking dish, cut-side-up.
- Brush pears with some of the cinnamon butter.
- Spoon some softened cherries into each pear half.
- Bake pears, uncovered, 30 to 35 minutes, or until fork-tender, brushing occasionally with cinnamon butter.
- (Can be made up to 1 day ahead to this point if covered and refrigerated,before serving, bake at 325°F 15 minutes, or until heated through).
- In a medium saucepan over medium heat, combine sugars, corn syrup, cream, and salt.
- Heat to boiling, reduce heat to low, and cook until mixture reaches 238°F* on a candy thermometer or until it forms a soft ball when a small amount is dropped into cold water.
- (Can be made up to 1 week ahead to this point if covered and refrigerated, warm over low heat before serving).
- To serve, spoon some warm caramel sauce onto a small plate.
- Arrange 2 pear halves on top of sauce and drizzle with a bit more sauce.

- Grind first 2 ingredients in processor until lavender is finely chopped. DO AHEAD: Lavender sugar can be made 1 month ahead. Store airtight at room temperature.
- Preheat oven to 425°F. Generously butter large rimmed baking sheet. Toss pears, lemon juice, and 3 tablespoons lavender sugar in large bowl. Transfer pears, 1 cut side down, to baking sheet. Roast 20 minutes. Turn pears, placing other cut side down. Sprinkle with 1 tablespoon lavender sugar; roast 20 minutes. Turn pears, skin side down. Preheat broiler. - Heat oven to 225 degrees. Line a pan with parchment. Cut each pear lengthwise into 1/8- to 1/4- inch-thick slices. Remove seeds and fibrous bits from each slice; arrange on pan, spaced 1/2 to 1 inch apart. Sprinkle with sugar.
- Transfer to oven; dry until pears become firmer, slightly chewy, and shriveled around edges, 1 1/2 to 2 1/2 hours. Transfer to a wire rack. Store in an airtight container, refrigerated, up to 2 days or frozen, up to 6 weeks.
