"I grew up enjoying these sweet crepes, which my grandmother, aunts and uncles always called 'Swedish pancakes'. My husband, Chuck, sometimes makes this delicious dietary version for me on weekends," relates Cheryl Erikson of Grass Valley, California.

1-1/4 cups fat-free milk
3/4 cup egg substitute
3/4 teaspoon vanilla extract
1 cup all-purpose flour
1 teaspoon sugar
1/4 teaspoon salt
2/3 cup strawberry spreadable fruit
3 cups chopped fresh strawberries
2 teaspoons confectioners' sugar

Steps:

  • In a large bowl, combine the milk, egg substitute and vanilla. Combine the flour, sugar and salt; add to milk mixture and mix well. Cover and refrigerate for 1 hour., Coat a 7- or 8-in. nonstick skillet with cooking spray. Heat skillet over medium heat. Pour about 2 tablespoons batter into the center of skillet. Lift and tilt pan to evenly coat bottom. Cook until top appears dry; turn and cook 15-20 seconds longer. Remove to plate; keep warm. Repeat with remaining batter, coating with additional cooking spray as needed., Spread each crepe with about 2 teaspoons spreadable fruit. Top with about 3 tablespoons strawberries. Roll up. Sprinkle with confectioners' sugar.

2 tablespoons sugar
1 (8 ounce) package cream cheese, softened
1/4 cup sugar
1 teaspoon vanilla
2 (8 ounce) cans crescent rolls
2 cups oil

Steps:

  • Line large plate with paper towels. In small bowl, mix 2 tablespoons sugar and 1 tablespoon ground cinnamon. Set aside.
  • In small bowl using handheld blender or mixer, beat 1 package (8 oz) cream cheese, softened, until creamy. Add 1/4 cup sugar and 1 teaspoon vanilla; blend until well combined. Set aside.
  • Lightly flour flat work surface. Unroll 2 cans (8 oz each) Pillsbury™ Crescent Recipe Creations™ refrigerated seamless dough sheet on surface. Slightly roll out each sheet of dough until about 1/2 inch longer. Cut each sheet into 6 squares to make a total of 12 squares.
  • Place about 1 tablespoon cream cheese filling in center of each square; spread crosswise to form long line of filling. For each roll-up, roll side closest to you up over filling then roll to opposite side while slightly pulling edges to make roll longer. Use pizza cutter or sharp knife to cut off ragged edges of roll-ups. Pinch seam into dough to secure filling in roll-up.
  • In skillet, heat canola oil to 325°F. Carefully place roll-ups in hot oil; fry on one side 30 to 60 seconds. Turn roll-ups; fry until golden brown. Remove from oil; place on paper towel-lined plate.
  • Immediately sprinkle with cinnamon-sugar mixture. Place roll-ups on cooling rack or another plate; cool about 10 minutes before serving.

Crepe rollups make a tasty lunch, an eye-catching party appetizer, or a fun way to introduce "sushi" to the kids. Whichever variation you choose, Asparagus and Prosciutto or Smoked Salmon and Scallion, these salty bites are a treat.

Yield 2 Asparagus and Prosciutto or 2 Smoked Salmon and Scallion Rollups (about 12 pieces of crepe "sushi")

Number Of Ingredients 8

2 Simple Crepes
3 tablespoons cream cheese, room temperature
1/2 teaspoon grated lemon zest, plus 1 teaspoon juice
Kosher salt and freshly ground pepper
4 asparagus spears, trimmed and blanched
4 thin slices prosciutto (2 ounces)
1 tablespoon chopped scallion (from one scallion), green parts only
4 thin slices smoked salmon (2 to 3 ounces)

Steps:

  • Lay crepe flat on a clean work surface. In a bowl, stir together cream cheese, lemon zest, and juice; season with salt and pepper. Spread evenly to edges of crepe. Cut crepe in half.
  • Blanch asparagus in generously salted boiling water until crisp tender, 2 to 3 minutes. Transfer to an ice water bath until cold; drain and pat dry. Top each crepe half with 2 slices prosciutto and 2 blanched asparagus spears, laying them parallel to long, cut side of crepe, leaving a 1/2-inch border at cut edges.
  • Starting at rounded ends, tightly roll each half to enclose filling, gently pressing long, cut end to adhere. To serve, trim ends and cut crosswise into approximate 1-inch pieces of "sushi."
  • For salmon variation, sprinkle chopped scallions over cream cheese, replace prosciutto with smoked salmon, and omit asparagus.

Here's what you need: vegetable oil, white onion, red bell pepper, green bell pepper, kosher salt, garlic powder, pepper, flank steak, provolone cheese

1 tablespoon vegetable oil
1 white onion, sliced
1 red bell pepper, seeded and sliced
green bell pepper, seeded and sliced
1 tablespoon kosher salt, plus 2 teaspoons, divided
1 teaspoon garlic powder
1 tablespoon pepper, plus 1 teaspoon, divided
2 lb flank steak
14 slices provolone cheese, divided

Steps:

  • Preheat the oven to 425°F (220°C).
  • Heat the vegetable oil in a large pan over high heat. Add the onion and cook for 10 minutes, until translucent and the edges start to brown.
  • Push the onion to one side of the pan and add the red and green bell peppers to the pan. Season with 2 teaspoons of salt, 1 teaspoon of garlic powder, and 1 teaspoon of pepper, and cook until the peppers soften, about 5 minutes. Remove from the pan and set aside.
  • Place the steak on the cutting board, and cover with a piece of plastic wrap. Pound with a meat mallet or rolling pin to about ½-inch (1 ¼ cm) thick.
  • Remove the plastic wrap and season the steak on both sides with 1 tablespoon of salt and 1 tablespoon of pepper.
  • Line 7 slices of Provolone cheese along the bottom edge of the steak. Place the sautéed vegetables on top.
  • Starting from the bottom, roll up the steak, encasing the cheese and vegetables inside.
  • Top with the remaining 7 slices of Provolone and secure with skewers or toothpicks.
  • Transfer the steak roll to a baking sheet and bake for 30 minutes, until cheese is melty and the steak is cooked through to your preference.
  • Rest for 10 minutes before slicing between the skewers and serving.
  • Enjoy!

1 tube (16.3 ounces) large refrigerated flaky biscuits, such as Pillsbury Grands!
1 cup whipped cream cheese
2 tablespoons honey
3/4 cup frozen wild unsweetened blueberries
1 tablespoon butter, melted
1 teaspoon sugar
1/3 cup confectioners' sugar
2 tablespoons 2% milk
1/2 teaspoon lemon juice

Steps:

  • Preheat oven to 350°. On a lightly floured surface, separate biscuits and flatten each to a 5-in. circle. In a small bowl, combine cream cheese and honey; gently fold in blueberries. Place 2 tablespoons mixture in center of each circle. Bring edges of dough together above filling; twist and pinch to seal., Place on parchment-lined baking sheets, seam side down.
