CHOCOLATE CHEESECAKE STRAWBERRIES

I saw these featured on the Food Network a few months ago, but there was no recipe. I have been dying to try them since, and finally made up my own recipe. Who wouldn't love a plump strawberry surrounded by New York Cheesecake and then dipped in chocolate??!

30 medium strawberries
1/4 new york cheesecake (I used #57025)
1 1/2 cups semi-sweet chocolate chips
2 tablespoons corn syrup
6 tablespoons butter (3/4 stick)

Steps:

  • Wash strawberries and pat dry. Place on paper towels until they reach room temperature.
  • Mash cheesecake with a mixer until the graham cracker crust in mixed throughout. Cheesecake mixture should be soft and workable, like a cookie dough.
  • With your fingers, pick up a small ball of cheesecake and press against the strawberry, leaving the stem and leaves visible. Bottom 1/2 to 2/3 of the strawberry should be covered with the cheesecake. Set aside on waxed paper. May need to be chilled until ready to dip.
  • Melt chocolate chips, corn syrup and butter in a double boiler, stirring occasionally.
  • Remove from heat and dip each cheesecake-covered strawberry into chocolate, coating ¾ of strawberry.
  • Allow excess chocolate to drip off, then return strawberry to the waxed paper covered baking pan or cookie sheet.
  • Refrigerate until set, about 15-20 minutes.
  • Strawberries should be stored in refrigerator until ready to serve.

OMG.. These are like heaven in your mouth! Talk about great taste sensations... I made these for one of my cooking and recipe events that I hold monthly, and these were a HUGE hit... A must try for sure! You can use low fat cream cheese to make these lighter if you like. You can also dip the ends with any kind of finely chopped nuts, mini chocolate chips, graham cracker crumbs, sprinkles, or dip the ends in chocolate or drizzle with chocolate. You might even try adding some cocoa powder to the cream cheese and make it a chocolate filling. The sky is the limit here, just use your imagination!

24 large strawberries, hulls removed
12 ounces cream cheese, at room temperature
1 teaspoon vanilla
3 tablespoons confectioners' sugar
1/2 cup almonds, chopped fine in the blender

Steps:

  • Place cream cheese in a bowl, and microwave for 30 seconds, so that it's soft.
  • Whip together the cream cheese, vanilla, and sugar.
  • In the center of each strawberry, using a sharp knife, make a hole in each one, as deep as you can without going out the bottom.
  • Spoon or pipe the filling into each hole.
  • Dip cheesecake end of strawberry into chopped almonds, making sure you completely cover the cheesecake filling with the nuts.
  • Lay strawberries in a pretty serving dish.
  • Sprinkle with any leftover nuts around the dish.
  • Chill, and serve.
  • Makes 24 servings.

  • Wash the strawberries and pat dry with a paper towel. Use a melon baller to remove the stems and create a small whole in the strawberries for the cheesecake to sit. Set aside.
  • In a medium bowl beat the cream cheese and sour cream until fluffy. Add in the vanilla and powdered sugar. Beat until smooth and combined. Place cheesecake mixture into a piping bag or zip close bag, with the corner snipped off.
  • Squeeze a little bit of the cheesecake mixture into each strawberry. Place on a wax paper lined baking sheet when done and let chill in the fridge until ready to dip.
  • Place the chocolate chips in a metal or glass bowl that is big enough to sit on top of a small pot that's filled with 1 inch of water. Bring the pot of water to a boil and place the bowl of chocolate on top. Use a rubber spatula to gently stir the chocolates until they are smooth and completely melted. Turn stove off but leave chocolate bowl on top of pot to keep it warm while dipping.
