Steps:
- Preheat oven to 400 degrees F (200 degrees C). Place butter in a 9x13-inch casserole dish.
- Place casserole dish in the preheating oven until butter is melted, about 5 minutes.
- Spread onion slices in the bottom of the casserole dish. Place cod skin-side down over onion. Sprinkle seasoned salt evenly on top.
- Mix mayonnaise, Parmesan cheese, provolone cheese, mozzarella cheese, and fresh parsley together in a bowl. Spread over cod.
- Bake in the preheated oven until cod flakes easily with a fork, 20 to 25 minutes.

EASY CHEESE BAKED FISH
I quite often bake my fish this way. Easy & simple, nothing fancy, but we like the result. I actually do not even measure the ingredients anymore and just throw it together, but these are the original measurements. Sometimes I add a little lemon juice or lemon pepper seasoning and top it all off with a sprinkling of parsley for a little colour.

Steps:
- Place fish in a greased pan with dabs of butter on top.
- Season with salt& pepper to taste.
- (this is where I sprinkle on lemon juice or lemon pepper if using) Cover with sliced onion.
- Pour on milk.
- Bake at 400 degrees for 12-15 minutes.
- Remove from oven and sprinkle with grated cheddar cheese and a little parsley if desired.
- Return to oven until cheese melts.

- 1. Place flour on plate (may be paper); place eggs in shallow bowl. Place Cheetos in large zip-top bag; seal tightly and crush with fingertips until finely ground. Add panko, parsley, coriander, and pepper; mix until well-blended. Place mixture in second shallow bowl. 2. Dip each fillet in flour, coating both sides; shake off excess. Dip each fillet into egg, allowing excess to drip off. Finally, dip into Cheeto mixture, coating both sides; press with fingertips to coat evenly. 3. Preheat oil for frying in large sauté pan on medium heat. Add 1/2 of the fish fillets; cook 3-4 minutes on each side or until golden and crisp. Place on paper towels to drain. Repeat with remaining fillets, adding more oil if needed. Serve immediately. Makes 4 servings.

- Rinse fish fillets under cold water, and pat dry with paper towels. Lay fillets side by side in the prepared baking dish. Pour the salsa over the top, and sprinkle evenly with the shredded cheese. Top with the crushed corn chips.

- Preheat the oven to 230/Gas 8/fan oven 210C. Put the potatoes in a pan of salted boiling water and bring back to the boil for 2 minutes. Carefully add the eggs to the pan and cook for a further 8 minutes until hard-boiled, by which time the potatoes should also At the same time, steam the spinach in a colander above the pan. This will only take a minute. When the spinach is done, remove from the colander and gently squeeze any excess moisture away. Drain the potatoes in the colander. Remove the eggs, cool under cold water, then peel and quarter. Set aside.
- In a separate pan, slowly fry the onion and carrot in a little olive oil for about 5 minutes, then add the double cream and bring just to the boil. Remove from the heat and add the cheese, lemon juice, mustard and parsley.
- Put the spinach, fish and eggs into an earthenware dish and mix together, then pour over the creamy vegetable sauce.
- The cooked potatoes should be drained and mashed-add a bit of olive oil, salt, pepper and a touch to nutmeg if you like. Spread on top of the fish. Dont bother piping it to make it look pretty-its a homely, hearty thing.
- Sprinkle on the Parmesan Cheese topping and place in the oven for about 25-30 minutes until the potatoes and cheese topping are golden
