This easy dinner recipe is a family favorite! With only one pan and minutes of prep, it layers the flavors of tender chicken, tangy BBQ sauce, crispy bacon, all over sweet baked onions.

2 lbs boneless, skinless chicken breast (3-4 chicken breasts)
1 sweet yellow onion
1/2 tsp salt
1/2 tsp pepper
1/2 tsp garlic powder
1/2 tsp onion powder
1/3 cup BBQ sauce
1/2 cup cheddar cheese
1/4 cup crumbled bacon
2 tbsp chopped green onions

Steps:

  • Preheat the oven to 400˚F.
  • Thinly slice the onion and place it in the bottom of a casserole dish.
  • Combine the salt, pepper, garlic powder, and onion powder and season both sides of the chicken. Lay the chicken on top of the onions.
  • Spread the BBQ sauce equally over each chicken breast. Sprinkle cheese over the top of the dish.
  • Cover and bake covered for 25 minutes, then uncovered for an additional 15-20 minutes or until chicken is cooked through (165˚F internal temperature.)
  • Top with crispy crumbled bacon and green onions. Enjoy!

Steps:

  • Preheat oven to 350°.
  • Spray 3-quart baking dish with cooking spray.
  • Place chicken in prepared dish; sprinkle with salt and pepper.
  • Spoon sauce over.
  • Bake 20 minutes, until internal temperature registers 160°.
  • Place 2 slices of cooked bacon over each chicken half and sprinkle cheese on top.
  • Bake an additional 5 minutes.
  • Top with the diced tomato and scallion.

  • HEAT grill to medium-high heat.

4 skinless, boneless chicken breasts (about 8 ounces each)
3 slices bacon
2 tablespoons unsalted butter, melted
1 large buttermilk biscuit, crumbled (about 1 cup)
2/3 cup shredded sharp cheddar cheese
2 tablespoons chopped fresh chives
2 tablespoons chopped fresh parsley
Kosher salt and freshly ground pepper
Vegetable oil, for the grill
1/4 cup barbecue sauce

Steps:

  • Preheat a grill to medium. Prepare the chicken: With your knife parallel to the cutting board, slice each chicken breast in half horizontally without cutting all the way through; open like a book. Cover with plastic wrap and pound until 1/2 inch thick.
  • Make the filling: Cook the bacon in a skillet until crisp; crumble. Mix 2 tablespoons bacon drippings with the melted butter in a bowl. Combine the buttermilk biscuit, bacon, half of the drippings mixture, the cheese, chives and parsley in a separate bowl. Stir in 2 to 3 tablespoons water; season with salt and pepper.
  • Season the pounded chicken on both sides with salt and pepper and brush with the remaining drippings mixture. Spoon the filling over the top, leaving a 1-inch border around the edges. Roll up the chicken toward the pointy end; tie with 3 pieces of kitchen twine.
  • Brush the grill grates with vegetable oil. Grill the chicken breasts, turning, until cooked through, 18 to 20 minutes, brushing with the barbecue sauce during the last 2 minutes of cooking. Transfer to a cutting board and let rest 5 minutes, then remove the twine and slice.

4 slices crisp cooked bacon, crumbled

1 egg, beaten
1/4 cup milk
1/2 cup self-rising flour
1/3 cup barbecue sauce, divided (I used Sweet Baby Ray's Hickory and Brown Sugar)
1/4 cup shredded sharp cheddar cheese
canola oil, enough to fry chicken

Steps:

  • Pound chicken breasts to 1/2 inch thickness( you could make them thinner to speed up cooking).
  • Mix milk and egg in a shallow dish or bowl.
  • Pour flour onto a plate.
  • Place both chicken breasts in egg/milk mixture,coating well.
  • Then coat each piece of chicken with flour.( coating each side well).
  • Place both pieces in pre-heated oiled skillet.
  • Fry until golden brown in color, about 10 to 15 minutes,drain oil from skillet if needed.
  • Coat both sides of fried chicken with barbecue sauce.
  • Place 1/8 cup of shredded cheese on each chicken breast, top with equal amounts of bacon.
  • Cover with lid until cheese is melted, about 5 minutes.

1 tablespoon olive oil
2 cups Italian bread crumbs, divided
4 slices peppered bacon
4 (5 ounce) skinless, boneless chicken breast halves
½ cup shredded Parmesan cheese, divided
2 large eggs, well beaten

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Grease a baking dish with olive oil, then sprinkle 3 pinches bread crumbs across the bottom.
  • Place bacon in a large skillet and cook over medium-high heat, turning occasionally, until evenly browned and crispy, 10 to 11 minutes. Drain bacon slices on paper towels.
  • Filet chicken breasts 90% of the way through and open like a hot dog bun. Spread 2 tablespoons chopped Parmesan cheese on one side of each breast. Top each with a bacon slice and 1 1/2 tablespoons shredded Parmesan.
  • Close the breasts. Dip in beaten egg, then in bread crumbs. Place in the prepared baking dish. Sprinkle remaining shredded Cheddar over top.
  • Cook in the preheated oven until chicken is no longer pink in the center and the juices run clear, about 35 minutes. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C).

2 tablespoons barbecue seasoning
2 slices cooked bacon
3 slices Cheddar cheese

Steps:

  • Heat oven to 425°F. Spray 13 x 9-inch (3-quart) baking dish with cooking spray.
  • Make cuts 1/2 inch apart on each chicken breast from top to almost bottom, forming pockets, being careful not to cut all the way through.
  • Sprinkle barbecue seasoning all over chicken. Cut bacon slices into thirds to make 6 pieces. Cut Cheddar slices into fourths to make 12 pieces.

16 ounces bbq sauce
16 ounces bacon (fully cooked)
2 cups shredded cheddar cheese
8 rolls (or buns)

Steps:

  • Spray slow cooker with non-stick cooking spray. Place chicken breasts in the slow cooker and pour bottle of BBQ sauce on top of them.
  • Cook on low for about 6-7 hours or high for 3-4 hours.
  • Shred chicken and set aside.
  • Set oven at 425 degrees. Split onion rolls in half and lay on a large baking sheet covered in foil.
  • Put some shredded BBQ chicken on the top of half of the bun. Place 2-3 strips of bacon on top of the chicken and top with a handful of shredded cheese.

  • Cook bacon to crisp according to package instructions Crumble the bacon into small pieces and set aside.
  • Pre-heat the oven to 400. Line a baking sheet with parchment paper and set aside. Use a pastry brush to brush the outsides of both sides of the chicken breasts with the olive oil and place them on the prepared baking sheet. Sprinkle lightly with salt and pepper and place in the oven. Bake for 15 minutes. Remove from the oven and flip each breast over. Split the barbecue sauce equally into two small dishes. Using the pastry brush again (wash it in between!), paint the chicken breasts using half of one dish of the barbecue sauce. Flip the breasts back over and paint the top side with the remaining barbecue sauce from that dish. Place back in the oven for another 5 minutes. Wash the brush thoroughly again before step three.
  • Remove the baking sheet from the oven and lift the parchment paper holding the breasts off of the sheet and set aside. Re-line the sheet with aluminum foil or more parchment and transfer the chicken breasts back onto the freshly lined pan. Discard the parchment paper holding any remaining oil/liquid. You may want to check now to make sure the chicken is cooked through (or almost). Use the remaining dish of barbecue sauce to slather the tops of each chicken breast one last time. Sprinkle the cheese over top of each breast and follow with the bacon pieces. Place back into the oven and bake for another 3-5 minutes until cheese is melted.
