BACON RANCH CHEESY BREAD

1 cup grated Monterey Jack cheese
1 cup grated Cheddar cheese
1 tablespoon chopped fresh parsley
8 slices bacon, partially cooked and chopped
2 green onions, white parts thinly sliced, green parts thinly sliced and reserved separately for garnish
1 round artisan or sourdough loaf
1 stick (8 tablespoons) salted butter, melted
2 tablespoons ranch dressing mix

Steps:

  • Preheat the oven to 350 degrees F.
  • Put the Monterey Jack, Cheddar, parsley, bacon and onion whites in a bowl and mix well.
  • Cut the bread in strips in one direction, being careful not to cut all the way through the loaf. Rotate the bread 90 degrees and cut in the other direction to create small squares across the top of the loaf. Move slowly and use caution. Place the bread on a large sheet of aluminum foil.
  • Stuff the cheese mixture in between the rows of squares. Mix the melted butter and ranch dressing, then drizzle over the top. Wrap the loaf in the foil and bake for 25 minutes. Open the foil and continue to bake until heated through and the cheese is melted and bubbly, another 10 minutes. Sprinkle with the onion greens and serve immediately.

Steps:

  • Cut the baguette crosswise into 1″ slices without cutting through to the the bottom.
  • Combine butter, bacon, cheese and green onions and mix well.
  • Spread the butter mixture on each slice.
  • Wrap the baguette in foil and bake at 350 degrees for 15 minutes or until the cheese has melted.
  • Dish and serve hot.

8 slices thick bacon
4 large Vidalia or sweet onions, thinly sliced
1 teaspoon garlic powder
1 teaspoon ground mustard
1/2 teaspoon freshly cracked black pepper
1 teaspoon kosher salt
One 8-ounce brick cream cheese, at room temperature
1/2 cup Greek yogurt
3 tablespoons mayonnaise
2 tablespoons chopped fresh parsley
1 teaspoon Worcestershire sauce
3/4 cup grated yellow Cheddar
3/4 cup grated Swiss cheese
One 10- to 12-inch boule
Crudites, for serving

Steps:

  • Preheat the oven to 375 degrees F.
  • Place the bacon on a sheet pan fitted with a wire rack. Roast the bacon until crispy, about 20 minutes.
  • Pour the bacon fat from the sheet pan into a large skillet and warm over medium-high heat. Add the onions to the skillet and cook, stirring frequently, for about 1 minute, then sprinkle in the garlic powder, ground mustard, pepper and 1/2 teaspoon salt. Reduce the heat to medium-low and continue to cook, stirring occasionally, until the onions are browned, soft and caramelized, 30 to 45 minutes. Set aside.
  • Preheat the broiler.
  • Stir together the cream cheese, yogurt, mayonnaise, parsley, Worcestershire, 1/2 cup Cheddar, 1/2 cup Swiss and the remaining 1/2 teaspoon salt until completely combined. Stir in the warm onions.
  • Cut the top of the boule off and hollow out the center. Place the boule on a parchment-lined baking sheet. Save the scooped out chunks of bread and cut the removed top into pieces to dip later.
  • Fill the boule with the onion mixture and sprinkle the top with the remaining cheeses, holding back a tablespoon of each. Cut the bacon into 2-inch pieces and arrange them like the rays of the sun around the perimeter of the dip, then sprinkle the remaining cheese in the middle, overlapping the bacon to make an extra-cheesy center. Broil, watching closely to prevent burning, until the bacon is crisp and the cheese is melted beneath, about 2 minutes. Serve warm with crudites and reserved chunks of bread and use the bread bowl/bacon for dipping!

1/2 cup chopped onion
2 garlic cloves, minced
4 cups fresh broccoli florets (about 8 ounces)
1 large carrot, finely chopped
3 cups chicken stock
2 cups half-and-half cream
2 bay leaves
1/2 teaspoon salt
1/4 teaspoon ground nutmeg
1/4 teaspoon pepper
1/4 cup cornstarch
1/4 cup water or additional chicken stock
2-1/2 cups shredded cheddar cheese
6 small round bread loaves (about 8 ounces each), optional
Optional toppings: Crumbled cooked bacon, additional shredded cheddar cheese, ground nutmeg and pepper

Steps:

  • In a 6-qt. stockpot, heat butter over medium heat; saute onion and garlic until tender, 6-8 minutes. Stir in broccoli, carrot, stock, cream and seasonings; bring to a boil. Simmer, uncovered, until vegetables are tender, 10-12 minutes., Mix cornstarch and water until smooth; stir into soup. Bring to a boil, stirring occasionally; cook and stir until thickened, 1-2 minutes. Remove bay leaves. 8 ounces cream cheese, at room temperature
8 ounces lager beer, plus 1 tablespoon, divided
1 tablespoon whole grain mustard
1 teaspoon Worcestershire sauce
1 tablespoon cornstarch
8 ounces swiss cheese, shredded
8 ounces sharp cheddar cheese, shredded
10 slices bacon, cooked and crumbled
3 garlic cloves
1/4 cup chopped mixed herbs (such as chives, parsley, and dill)
3 tablespoons olive oil
chopped chives, to top

Steps:

  • Preheat the oven to 375°F.
  • Slice off the top of the bread. Hollow out the inside of the bread to create a bowl. Save the top of the bread for later.
  • In a large bowl, combine whisk together the softened cream cheese and 1 cup of the beer, until well-combined. Combine the remaining tablespoon of beer with 1 tablespoon cornstarch. Add the cornstarch slurry, the whole grain mustard, and the Worcestershire sauce to the cream cheese mixture and whisk again to combine. Fold in the shredded cheeses, then fold in the bacon. Fill the bread bowl with the cheese mixture. Transfer the bread bowl to a rimmed baking sheet.
  • Slice the top of the bread that was cut off earlier into thin pieces, and place them on the baking sheet, crust-side up.
  • In a small bowl, mix together the garlic, herbs, and olive oil. Spoon or brush the herb mixture onto the tops of the bread slices.
  • Bake the bread for 5 minutes, or just until the cheese is melted, stir, and continue to bake until the cheese begins to brown on top, about 30 minutes. If you notice that the bread slices begin to brown too much, cover them with foil as the beer cheese finishes cooking.
  • Top the dip with chopped chives and serve warm with the bread slices, broccoli, and pretzels.

10 oz flaky biscuit dough, 3 cans
1 ¼ cups butter, melted
2 cloves garlic, crushed
2 teaspoons italian seasoning
parsley, minced, optional

Steps:

  • Preheat oven to 350°F (180°C).
  • Crisp bacon over medium heat. Allow it to cool, then crumble.
  • Generously grease a large bundt pan with cooking spray.
  • In a bowl, mix both kinds of cheese.
  • Cut each biscuit into four pieces. Flatten each piece in the palm of your hand and add a pinch of the mixed cheeses and crumbled bacon. Gather the edges and pinch the biscuit into a ball.
  • In a small bowl, mix melted butter, Italian seasoning, and garlic.
  • Drop the biscuit pieces in the butter mixture and place in the bundt pan.
  • Bake 30-35 minutes or until golden-brown. (Be careful - the butter may begin to smoke toward the end of the bake time. If it begins to smoke, remove from the oven.)
  • Let stand for five minutes, then place a heatproof plate on top of the pan. Using a pot holder, flip the pan and plate over and invert onto your serving plate. Be careful as the pan will still be hot.
  • Sprinkle with parsley.

  • Bake in the preheated oven until cheese is melted, 3 to 5 minutes.

¾ cup shredded Cheddar cheese
½ cup bacon bits (divided)

Steps:

  • Heat oven to 350°F. Spray a 9 x 9 inch glass baking dish with cooking spray.
  • Thaw rolls slightly, but don't let them rise yet.
  • Cut each roll into quarters. Place half the rolls in the bottom of the baking dish, and sprinkle 1/4 cup of bacon bits on top of the rolls. Place the remaining rolls on top.
  • Let the rolls rise and double in size.
