1 package (19 ounces) frozen cheese tortellini
1 pound sliced fresh mushrooms
1 teaspoon garlic powder
1/4 teaspoon onion powder
1/4 teaspoon pepper
1/2 cup butter, divided
1 can (12 ounces) evaporated milk
1/2 pound brick or Muenster cheese, cubed
3 packages (10 ounces each) frozen chopped spinach, thawed and squeezed dry
2 cups shredded part-skim mozzarella cheese

Steps:

  • Preheat oven to 350°. Cook tortellini according to package directions. , Meanwhile, in a large skillet, saute mushrooms, garlic powder, onion powder and pepper in 1/4 cup butter until mushrooms are tender. Remove and keep warm. , In same skillet, combine milk and remaining butter. Bring to a gentle boil; stir in brick cheese until smooth. Drain tortellini; place in a large bowl. Stir in mushroom mixture and spinach. Add cheese sauce and toss to coat. , Transfer to a greased 13x9-in. baking dish; sprinkle with mozzarella cheese. Cover and bake 15 minutes. Uncover; bake 5-10 minutes longer or until heated through and cheese is melted.

1 package (20 ounces) refrigerated cheese tortellini
3 cups small fresh broccoli florets
1/2 pound bacon strips, cut into 1-inch pieces
2 garlic cloves, minced
1 tablespoon all-purpose flour
1 teaspoon dried basil
1/2 teaspoon salt
1/8 teaspoon coarsely ground pepper
2 cups 2% milk
3/4 cup shredded part-skim mozzarella cheese, divided
3/4 cup grated Parmesan cheese, divided
2 teaspoons lemon juice

Steps:

  • Preheat oven to 350°. Cook tortellini according to package directions, adding broccoli during the last 2 minutes; drain., Meanwhile, in a large skillet, cook bacon over medium heat until crisp, stirring occasionally. Remove with a slotted spoon; drain on paper towels. Discard drippings, reserving 1 tablespoon in pan., Reduce heat to medium-low. Add garlic to drippings in pan; cook and stir 1 minute. Stir in flour, basil, salt and pepper until blended; gradually whisk in milk. Bring to a boil, stirring constantly; cook and stir 3-5 minutes or until slightly thickened. Remove from heat., Stir in 1/2 cup mozzarella cheese, 1/2 cup Parmesan cheese and lemon juice. Add tortellini mixture and bacon; toss to combine. Transfer to a greased 13x9-in. baking dish; sprinkle with remaining cheeses. Bake, uncovered, 15-20 minutes or until heated through and broccoli is tender. Freeze option: Sprinkle remaining cheeses over unbaked casserole. Cover and freeze. To use, partially thaw in refrigerator overnight. Remove from refrigerator 30 minutes before baking. Preheat oven to 350°. Bake casserole as directed, increasing time as necessary until heated through and a thermometer inserted in center reads 165°.

5 oz. baby spinach
1/2 c. chopped fresh parsley
1/2 c. freshly grated Parmesan, plus more for serving
8 oz. burrata cheese, at room temperature

Steps:

  • Bring a large pot of water to a boil and generously season with salt. Cook pasta according to package directions until al dente. Drain and return to pot.
  • Meanwhile, heat a large sauté pan over medium heat and add bacon in an even layer. Fry until crisp, about 5 minutes. Using a slotted spoon, transfer bacon onto a paper towel-lined plate.
  • Return sauté pan with remaining bacon fat to medium heat; add garlic and red pepper flakes and cook for 2 to 3 minutes. Add white wine, then bring to a boil and simmer for 3 minutes. Turn off heat and toss together with tortellini, spinach, parsley and Parmesan. Add burrata to the pan and spoon sauce over to warm the cheese.
  • Break up burrata using 2 forks and let it melt into the pasta. Serve tortellini immediately.

¼ cup freshly grated Parmesan cheese

2 14 oz cans Italian-style diced tomatoes
1 8 oz block cream cheese, chunked into pieces
2 9 oz packages fresh cheese tortellini (or whatever flavor tortellini you like)
1 5 oz bag fresh spinach
salt and pepper to taste
parmesan cheese

Steps:

  • Place chicken or vegetable broth, diced tomatoes, and cream cheese chunks into slow cooker and mix together.
  • Cover and cook on low 2-3 hours.
  • Stir in the pasta.
  • Cover and cook on low for about two more hours, or until pasta is cooked.
  • Stir in spinach until wilted.

1 package Tortellini (250 grams (ref note 1))
200 grams Boneless Chicken Breast (Cut into cubes (ref note 2))
6-7 Bacon
1/2 cup Sundried Tomatoes (Oil drained)
1 tablespoon Butter
1 tablespoon Olive Oil
1/2 tablespoon Garlic (minced)
1 teaspoon dried Basil
1/2 Onion (finely chopped)
1/2 cup Cream
1 cup Parmesan Cheese
1/2 cup Pasta cooking water ((more if required))

Steps:

  • Bring a pot of water to boil, season with salt. Cook pasta as per package instruction.
  • While pasta is cooking, heat olive oil in a large skillet.
  • When the oil is hot, add chicken cubes, season with salt and pepper. Cook, stirring occasionally until chicken is browned and just cooked through, 4-5 minutes.
  • Remove the chicken from the pan; cover with foil and keep aside.
  • Clean pan if any brown bits are stuck, because we don't want the sauce to look brown.
  • Add chopped bacon, cook until crispy. Remove bacon from the pan and keep aside. Discard bacon fat.
  • Add butter to the pan. When butter melts add minced garlic and onion. Saute until the onion softens and raw garlic smell has disappeared.
  • Stir in sun-dried tomatoes. Cook for a minute.
  • Lower the heat and add cream, Parmesan cheese to the pan.
  • Drain tortellini and reserve 1 cup of pasta water.
  • Add cooked tortellini, chicken and Bacon to the pan. Add 1/2 cup of reserved pasta water to the pan.
  • Mix everything gently and let it cook for another 1 minute on low heat.
  • Remove from flame and serve topped with more parmesan on top.

2 (9 ounce) packages refrigerated cheese tortellini
6 strips bacon (cut into small pieces)
1 clove garlic (minced)
1/4 cup chicken broth
1 cup heavy/whipping cream
4 ounces cream cheese (1/2 block of Philly) (softened)
1 cup freshly grated parmesan cheese
Salt & pepper (to taste)

Steps:

  • Boil a large, salted pot of water for the tortellini. Start cooking the tortellini once the bacon is done (it'll only take a few minutes for the tortellini to cook).
  • Cut the bacon into small pieces (I use kitchen shears to make the job easy). Fry it in a skillet over medium-high heat until crispy (about 10 minutes).
  • Take the pan off the heat and remove the bacon to a paper towel lined plate. Drain most of the bacon fat from the pan (keep about 1 tablespoon in there).
  • Stir in the garlic, chicken broth, cream, and cream cheese. Return the pan to the burner (medium heat), and stir until you've got a smooth sauce and it's reduced to your liking (about 5 minutes).
  • Stir in the parmesan cheese and bacon. Take the pan off the heat and toss with the drained tortellini. If the sauce is too thick, add a few spoonfuls of the pasta water. Season with salt & pepper as needed.

3/4 lb Brussels sprouts, halved
2 cloves garlic, minced
1/2 cup warm water
1/2 cup heavy cream
1/2 tsp kosher salt
1/4 tsp freshly ground black pepper
1/4 tsp crushed red pepper flakes
16 ounces freshly shredded mozzarella cheese, about 3 cups
24 ounces refrigerated cheese or spinach tortellini

Steps:

  • Preheat the oven to 350°F. In a very large oven-safe skillet over medium-high heat, cook the bacon for about 2 minutes, then add the Brussels sprouts. Cook, stirring occasionally, for 8-10 minutes, until the bacon is cooked through and the Brussels sprouts have browned. Transfer the bacon and Brussels sprouts to a plate.
  • Leave about a tablespoon of bacon grease in the skillet. Place the skillet back over medium-high heat. Add the garlic to the skillet and cook for 1 minute, until fragrant. Carefully pour 1/2 cup of warm water into the hot skillet. Use a flat spatula to scrape up the brown bits.
  • Add the cream, salt, pepper, and pepper flakes to the skillet and stir to combine. Lower the heat to medium and let the sauce simmer for 1 to 2 minutes, until it thickens slightly.
  • Add the tortellini and stir well to coat thoroughly. Return the bacon and Brussels sprouts to the pan and stir again. Remove from the heat. Add 1/2 the shredded cheese to the skillet and stir to combine. Top with the remaining cheese. Bake for 8-10 minutes, until the tortellini is soft and the cheese has melted. Enjoy!
