1 cup shredded cheddar cheese
3 ounces cream cheese, softened
24 jalapeno peppers (3 inches)
12 bacon strips, halved
Optional: Guacamole and sour cream

Steps:

  • In a small bowl, mix the cheddar and cream cheese. Cut and discard tops from jalapenos; remove the seeds. Fill each with 2 teaspoons cheese mixture. Wrap each pepper with a bacon piece; secure with a toothpick., Grill jalapeños, covered, over medium heat 8-10 minutes or until bacon is crisp, turning frequently. If desired, serve with guacamole and sour cream.

1 1/2 c. shredded Pepper Jack
1 clove garlic, minced
Kosher salt
Freshly cracked black pepper
12 jalapeños
12 slices bacon, halved

Steps:

  • Preheat oven to 400°. In a large bowl, combine cream cheese, Pepper Jack, and garlic. Season with salt and pepper.
  • Halve jalapeños lengthwise, then use a spoon to remove seeds and veins. Fill with cheese mixture and wrap each with a halved slice of bacon.
  • Place on a baking sheet and bake until bacon is crispy and peppers are tender, about 25 minutes.
  • In a large bowl, combine cream cheese, Pepper Jack, and garlic. Season with salt and pepper.
  • Halve jalapeños lengthwise, then use a spoon to remove seeds and veins. Fill with cheese mixture and wrap each with a halved slice of bacon.

12 fresh jalapeño peppers*
8 ounces cream cheese, softened to room temperature
1 cup shredded cheddar cheese*
1 clove garlic, chopped
1/2 teaspoon smoked paprika
12 slices bacon, cut in half
24 toothpicks

Steps:

  • Preheat oven to 400°F (204°C). Line a large baking sheet with parchment paper (best for clean-up) or a silicone baking mat. Place a baking rack on top of the baking sheet. Set aside.
  • Cut the jalapeño peppers in half lengthwise; remove seeds and center membrane. Set aside.
  • Using a handheld or stand mixer fitted with a paddle attachment, beat the cream cheese, cheddar cheese, garlic, and paprika together until combined. You could also do this by hand using a rubber spatula. Salt to taste - I add just a pinch. Spoon filling equally among all 24 jalapeño halves.
  • Wrap each stuffed jalapeño with a half slice of bacon and stick a toothpick through the center to assure the bacon stays in place. Place each on the baking rack and bake for 25-28 minutes or until the bacon is crisp to your liking. I like to turn the oven to broil for the last minute or two to get things extra crispy. Serve immediately. Cover leftovers and keep in the refrigerator for up to 4 days.

1 1/2 cups shredded mild yellow cheddar cheese (about 4 ounces)
1 1/2 cups shredded pepper jack cheese (about 4 ounces)
3 slices bacon, cooked and finely chopped
1/4 cup finely chopped pickled jalapenos
2 scallions, finely chopped
1 round loaf white or sourdough bread (14 to 16 ounces)
6 tablespoons unsalted butter, melted

Steps:

  • Preheat a grill to low and medium: On a gas grill, turn the center burner(s) to low and the side burners to medium; on a charcoal grill, bank the coals to the sides with a few coals in the center.
  • Combine the cheddar, pepper jack, bacon, jalapeños and scallions in a medium bowl.
  • Slice the bread with a serrated knife in 1-inch intervals, cutting almost all the way through. Rotate the bread 90 degrees and repeat to create a crosshatch pattern. Set the bread on 2 large stacked sheets of heavy-duty foil.
  • Gently spread the bread open and brush between the cuts with 4 tablespoons melted butter. Stuff the cheese mixture into the spaces. Press the bread back together and brush the outside with the remaining 2 tablespoons melted butter; wrap in the foil.
  • Once the grill registers 350˚ F to 375˚ F, set the bread in the center of the grill over low heat, cover and cook until warmed through, about 15 minutes. Pull back the foil to expose the surface of the bread (do not remove). Continue to grill, covered, until the top of the bread is crisp and the cheese melts, 10 to 15 minutes. Serve warm.

1 (26 ounce) can of whole jalapenos (about 15-20 total, I've used La Costena brand, they work good)
1 (8 ounce) package monterey jack pepper cheese
20 slices of uncooked bacon
toothpick

Steps:

  • Cut jalapeños from top to bottom on one side (don't cut them all the way through).
  • Under the sink, wash out and gut the insides of the jalapeños.
  • Cut and place pieces of cheese to fit inside the jalapeños.
  • Wrap the jalapeños with a strip of bacon (be sure not to wrap them too tight, the bacon will shrink).
  • Put a tooth pick through the jalapeño to hold the bacon in place.
  • Grill jalapeños on a BBQ flipping constantly until bacon is done, usually no more than 5-10 minutes. Be careful of large flames.
  • Serve immediately or refrigerate and heat up in oven.
