1 lb ground beef
2 (10 ounce) cans red enchilada sauce
8 ounces shredded Mexican blend cheese
8 ounces shredded cheddar cheese
12 (6 inch) flour tortillas

Steps:

  • Heat oven to 375°. Brown ground beef until thoroughly cooked; drain.
  • Stir in 3/4 cup enchilada sauce and one cup of cheese.
  • Spoon meat mixture onto tortillas roll-up and place seam-side down in lightly greased baking dish.
  • Pour remaining enchilada sauce over top. Cover with remaining cheese.
  • Bake for 15 to 20 minutes or until cheese melts.
  • Serve with yellow rice and refried beans.
  • Garnish with sour cream, salsa, and lettuce.

Make these Cheesy Beef Enchiladas for dinner tonight!

16 Taco Sized White Corn Tortillas
1 Lb Ground Beef
1 Package Taco Seasoning
1 10 Oz Can of Rotel
1 15 Oz Can of Black Beans
2 10 Oz Cans of Mild Enchilada Sauce (Gluten Free Enchilada Sauce)
1 4 Oz Can of Diced Chilies
2 Cups Shredded Mexican Cheese
4 Chopped Green Onions

Steps:

  • Preheat Oven to 375*.
  • Brown the ground beef and drain, then add in the taco seasoning as indicated on the package.
  • Warm up the corn tortillas for 20-30 seconds to make them pliable to avoid tearing.
  • Fill the tortillas with meat, rotel, and black beans. Then, roll them up tightly.
  • Place them seam side down in a 9x13 baking dish.
  • Repeat until the dish is filled, this made 16 for us.
  • Once the dish is filled, pour the enchilada sauce evenly over the tortillas.
  • Spread the chilies evenly over the sauce covered tortillas.
  • Top with the cheese and green onions covering the entire dish with cheese.
  • Bake for 30 minutes at 375*.
  • Remove and cool for 5 minutes, serve warm.

Filled with a savory, spicy filling and topped with a store-bought sauce, these easy beef enchiladas are perfect for Taco Tuesday or any night.

Number Of Ingredients 16

2 10-oz. cans enchilada sauce (about 2 cups)
1 tsp. kosher salt
1 tsp. ground cumin
1 tsp. chili powder
1 tsp. smoked paprika
1/2 tsp. ground black pepper
1 tbsp. olive oil
1 small white onion, chopped
4 garlic cloves, minced
1 1/2 lb. lean ground beef
1 4-oz. can diced green chiles, drained
8 8-inch flour tortillas
2 c. shredded sharp cheddar cheese
Thinly sliced red onion, for garnish
Chopped fresh cilantro, for garnish
Sour cream, for serving

Steps:

  • Add the enchilada sauce to a small saucepan. In a small bowl, combine the salt, cumin, chili powder, smoked paprika, and pepper. Add 1/2 teaspoon of the spice mixture to the enchilada sauce (reserve the remaining spice mix for the beef). Bring the sauce a simmer over medium heat; Remove from the heat and set aside.
  • In a large skillet, heat the oil over medium heat. Add the onion and garlic; cook, stirring occasionally, until softened, about 5 minutes. Add the beef and the remaining spice blend. Cook, stirring often, until the beef is browned and crumbly, about 8 minutes. Stir in the green chiles and 1/2 cup of the warmed enchilada sauce; cook 2 minutes more. Remove from the heat, and let cool slightly.
  • Place the tortillas on a microwave-safe plate and cover with a damp paper towel. Microwave for 30 seconds on high to soften. Leave the paper towel over top of them to keep them moist and pliable.
  • Preheat the oven to 375°. Spoon 1/2 cup of the warmed enchilada sauce into the bottom of a 13x9-inch baking dish. Working with one tortilla at a time, spoon 1/2 cup of the beef mixture down the center of a tortilla; sprinkle with 2 tablespoons cheese. Roll the tortilla up to enclose the filling, and place in the baking dish seam-side down. Repeat with the remaining tortillas and filling. Spoon the remaining sauce over the enchiladas. Top with the remaining 1 cup cheese.
  • Bake until the cheese is golden and bubbly and the tortillas are toasted, 20 to 25 minutes. Let cool 10 minutes; top with red onion and cilantro just before serving with sour cream, if you like.

1 lb shredded beef (or ground beef or shredded chicken)
1 (4 ounce) can chopped green chilies
1/2 teaspoon garlic powder
19 ounces enchilada sauce (red or green)
2 cups shredded cheddar cheese
1 dozen flour tortillas or 1 dozen corn tortilla
sliced black olives (optional)
chopped green onion (optional)
guacamole (optional)
sour cream, to serve

Steps:

  • Heat shredded beef (or cooked ground beef, shredded chicken).
  • Add the chopped green chiles and the garlic powder to the meat; mix well. You may also like to add some sliced black olives and chopped green onions.
  • Mix in 1 cup of the shredded cheese.
  • Warm the tortillas for a minute in the microwave, or warm in the oven.
  • Spread about 1/2 cup enchilada sauce in the bottom of a 13 x 9 inch pan.
  • Place a spoonful of meat mixture onto a tortilla; roll up and place seam down in baking pan. Repeat with remaining tortillas, placing them side by side in the pan as you go.
  • Spread remaining enchilada sauce and any meat mixture over top of tortillas; sprinkle with remaining cheese.
  • Bake at 350F degrees for 20-30 minutes or until hot and bubbly.
  • Serve with a side of refried beans and garnish as desired with black olives, green onions, guacamole, and sour cream.

1 lb ground beef
1 (1 1/4 ounce) packet taco seasoning
12 large flour tortillas
1 (16 ounce) can refried beans
1 (11 ounce) can canned corn niblets
cheddar cheese or colby-monterey jack cheese
2 (10 ounce) cans red enchilada sauce
olive (optional)
salsa (optional)
cilantro (optional)
green onion (optional)

Steps:

  • Preheat oven to 350 degrees.
  • Cook the ground beef in a skillet until brown.
  • Add the taco seasoning and water (according to package instructions) and cook until beef is well coated, and sauce is thickened.
  • Pour a bit of the enchilada sauce in the bottom of a 9x13in pan and spread evenly.
  • Set up an assembly line: Tortillas, refried beans, taco meat, corn, any of the above optional ingredients, and lastly cheese.
  • Assemble enchiladas: Smear a line of refried beans from the top of the tortilla to the bottom, then top beans with the remaining assembly line items.
  • Fold in the sides of the tortilla to close the enchilada, then place in pan, side by side, until pan is full (pan should hold 6 enchiladas).
  • Top each enchilada with enchilada sauce, then cover with cheese, and optional ingredients, if desired.
  • Place assembled enciladas into the oven and heat through.
  • Repeat process to make the next batch.

1 ½ cups salsa or picante sauce
1 cup shredded lettuce
1 cup chopped tomato
½ cup light sour cream

Steps:

  • Heat large skillet over medium-high heat; add meat and bell pepper. Cook 5 minutes, stirring until meat crumbles and is no longer pink; drain. Add taco seasoning mix and 1/2 cup water. Simmer, uncovered, 5 minutes or until sauce thickens, stirring occasionally.
  • Spoon 1/3 cup meat mixture down center of each tortilla; sprinkle with 2 tablespoons cheese. Roll up; place seam-side down in greased 13x9-inch baking pan. Spoon salsa over enchiladas.

Another favorite of our family, this recipie originally calls for chicken but works just as well with ground beef. We never have any left overs as it's one of the few things our young kids love.

1 (11 ounce) can Campbell's nacho cheese soup
1/2 cup milk
1 lb ground beef or 2 cups cooked chicken
1/2 cup salsa
1 teaspoon chili powder
6 -8 flour tortillas (8 inch size)

Steps:

  • Brown ground beef and drain fat. In seperate bowl mix soup with milk. To cooked beef add salsa, chili powder, and add 3 - 4 tablespoons of cheese soup. Spoon beef mixture into tortillas (about 4 tablespoons) and roll to close. Stack rolled tortillias side by side in a gently greased baking dish. (I use a 7.5 x 11 glass dish.) Spoon remaining cheese soup mixture over tortillas and bake as 375 for 30 minutes.
  • After removing from the oven, I top this with a little more salsa, shredded cheese, sour cream and sliced olives. You could also try guacamole, green onions, crushed tortilla chips, etc.
