This cheesy delicious weeknight chicken marinara recipe has 5 ingredients and can be ready in 30 minutes!

4 boneless, skinless chicken breasts
2 eggs, beaten
2 cups seasoned bread crumbs
2 cups Borden® Colby & Monterey Jack Shreds, divided
1 (28 ounce) jar marinara sauce

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Lightly oil a rimmed baking sheet.
  • Place beaten eggs in a shallow bowl. Place bread crumbs in a separate bowl and mix with 1/2 cup of the shredded cheese.
  • Dip chicken breasts in the egg mixture. Coat chicken breasts on all sides with bread crumbs. Place chicken breasts on prepared baking sheet.
  • Bake in preheated oven 20 minutes. Remove sheet from oven and top each breast with some marinara sauce. Sprinkle the remaining cheese over the breasts.
  • Bake until cheese has melted and sauce is bubbly, about 10 more minutes. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C).

Made from 6 ingredient homemade pizza dough, these easy cheesy breadsticks are a completely irresistible side dish or snack. You can freeze half of the dough for another night. Only 15 minute bake time!

1 lb store-bought or homemade pizza dough*
2 Tablespoons (30g) unsalted butter, melted
1 teaspoon garlic powder or 2 minced garlic cloves
1 teaspoon Italian seasoning blend or dried basil
1 and 3/4 cups shredded mozzarella cheese*
optional: sprinkle of cornmeal for dusting the pan
optional: marinara or pizza sauce for dipping

Steps:

  • Prepare pizza dough through step 3. Punch the risen dough down to release the air bubbles. Divide in half. (Make a pizza with the other half or freeze half of the dough for another time. See dough recipe for freezing instructions.)
  • Preheat oven to 425°F (218°C).
  • On a lightly floured work surface or on a piece of parchment paper or a silicone baking mat sprinkled with cornmeal (I skipped the optional cornmeal in the video above), roll the dough out into a 9×13 inch rectangle. The dough will want to be round, so do your best to shape it into a thin rectangle around this size- doesn't have to be perfect.
  • Combine the butter, garlic, and Italian seasoning together in a small bowl. Brush over shaped dough. Cover evenly with shredded cheese.
  • Bake for 12-15 minutes or until the edges are golden brown. If desired, turn the oven to broil for the last minute to really brown the top.
  • Slice into breadsticks and serve plain or with marinara sauce. Cover leftover breadsticks tightly and store in the refrigerator for up to 1 week. Reheat as you prefer. Baked breadsticks can be frozen up to 3 months.

2 cloves garlic, minced
1/2 tsp. dried oregano
1 1/2 c. shredded mozzarella
1/4 c. freshly grated Parmesan
Pinch crushed red pepper flakes (optional)
2 tsp. freshly chopped parsley
Kosher salt
Freshly ground black pepper
Warmed marinara, for serving

Steps:

  • Preheat oven to 425°. Line a large baking sheet with parchment paper. Microwave riced broccoli for 1 minute to steam. Carefully ring out extra moisture from the broccoli using paper towel or cheese cloth.
  • Transfer broccoli to a large bowl and add egg, 1 cup mozzarella, Parmesan, and garlic. Season with oregano, salt, and pepper. Transfer dough to baking sheet and shape into a thin, round crust.
  • Bake until golden and dried out, 20 minutes. Top with remaining 1/2 cup mozzarella. Bake until cheese is melted and crust is crispy, 10 minutes more. Garnish with parsley and pepper flakes (if using). Serve warm with marinara.

Soft, pillowy bread stuffed with melty mozzarella and dipped in a marinara sauce makes for an easy, crowd-pleasing appetizer or side dish. Here, store-bought sauce is doctored up with a few pantry staples, including dried oregano, garlic and red-pepper flakes, but you can use homemade sauce, too. Slice the bread or let everyone tear off pieces, like they would a fresh baguette, for a more spontaneous, cheese-pull moment. To round out the spread with something green, roast broccolini, broccoli or kale on a sheet pan in the oven as the bread cooks, then dip alongside. For a crunchier exterior, unwrap the bread and cook uncovered for the last 5 minutes.

1 Italian loaf or rustic baguette
5 tablespoons olive oil
1/2 pound mozzarella, thinly sliced
Kosher salt and black pepper
3/4 teaspoon dried oregano
2 large garlic cloves, grated or minced
1/2 teaspoon red-pepper flakes
1 3/4 cups marinara sauce
1/2 teaspoon sherry vinegar (optional)
2 tablespoons grated Parmesan

Steps:

  • Heat the oven to 400 degrees. Halve the loaf lengthwise almost all the way through, leaving it attached on one side. Open it, lay it flat and brush the insides with 2 to 3 tablespoons olive oil. Tuck in the mozzarella, then sprinkle with salt and ¼ teaspoon oregano. Close, then wrap tightly with foil. Place on a sheet pan, and bake for 20 minutes.
  • Meanwhile, in a medium saucepan, heat the remaining 2 tablespoons of oil, garlic, remaining ½ teaspoon oregano and red-pepper flakes over medium-high, stirring occasionally, until fragrant, about 1 minute. Pour in the marinara sauce and adjust the heat to bring it to a gentle boil, then stir in the sherry vinegar, if using. Reduce the heat to maintain a gentle simmer, stirring occasionally, until the bread is ready, about 15 minutes more. Season to taste with salt and pepper.
  • Transfer the sauce to a bowl or serve from the pan, and top with grated Parmesan. Slice the bread, or let everyone pull the pieces apart themselves. Keep wrapped until ready to eat.
