Tomato-Cheese Bruschetta image

Fresh slices of bread brushed with olive oil, toasted until crisp and golden brown, topped with tomato, onion, basil and parmesan cheese

1 loaf (16 oz each) crusty Italian bread, cut diagonally into 24 slices
1/2 cup olive oil, plus 1 tablespoon
2 tablespoons balsamic vinegar
1 can (14.5 oz each) Hunt's® Petite Diced Tomatoes, drained well
1/2 cup chopped sweet onion
2 tablespoons chopped fresh basil leaves
1/2 teaspoon finely chopped garlic
1/4 teaspoon salt
1/8 teaspoon ground black pepper
2 teaspoons grated Parmesan cheese

Steps:

  • Preheat oven to 400°F. Brush both sides of each bread slice with 1/2 cup olive oil. Place slices on baking sheet; bake 5 minutes on each side, or until golden brown.
  • Combine remaining olive oil, balsamic vinegar, tomatoes, onion, basil, garlic, salt, pepper and parmesan cheese; mix well. Spoon evenly divided portions onto each slice of toast. Serve.

I only make bruschetta when my garden tomatoes are ripe and my herbs are ready and this is the recipe I use. We all look forward to summer, ripe tomates, fresh herbs, and bruschetta. From allrecipes originally.

2 large tomatoes, coarsely chopped
1/2 sweet onion, chopped
2 tablespoons olive oil
1 tablespoon chopped fresh oregano
1 teaspoon chopped fresh basil
2 teaspoons chopped fresh parsley
Italian bread, baguette sliced into 1 inch slices
1/4 cup freshly grated parmesan cheese

Steps:

  • Preheat oven to 400 degrees.
  • In a medium bowl, combine tomatoes, onion, olive oil, oregano, basil and parsley. Place bread on a baking sheet and top with tomato mixture. Sprinkle with Parmesan.
  • Bake in preheated oven for 8 to 10 minutes or until bottom of bread has browned.
  • Allow to cool about 5 minutes before serving.

4 slices sourdough bread
4 KRAFT 2% Milk Mozzarella Singles

Steps:

  • Mix tomato, garlic, oil, basil, salt and pepper.
  • Place bread on cookie sheet. Broil 2 to 3 minutes or until lightly toasted.
  • Spoon tomato mixture on toasted bread; top with 2% Milk Singles. Broil 2 to 3 minutes or until 2% Milk Singles begin to melt. Cut into quarters.
