Just in time for Christmas! I have NEVER served this in 25 years without raves or requests for the recipe. Note: the sour cream and cheese can be lowfat if you wish.

1 (6 ounce) package dry instant long grain and wild rice mix
1 (8 ounce) container sour cream
1 (4 ounce) can chopped green chiles, drained
1 (16 ounce) package shredded Cheddar cheese

Steps:

  • Preheat oven to 325 degrees F (165 degrees C). Lightly grease a medium baking dish.
  • Prepare the instant long grain and wild rice mix according to package directions.
  • Spread 1/2 the cooked rice mix over the bottom of the prepared baking dish. In a bowl, mix the sour cream and green chiles. Spread 1/2 the sour cream mixture over rice, and top with 1/2 the cheese. Repeat the layers.
  • Bake 25 minutes in the preheated oven, or until bubbly.

1 large onion, chopped
2 tablespoons butter
4 cups hot cooked long grain rice
2 cups sour cream
1 cup 4% cottage cheese
1/2 teaspoon salt
1/8 teaspoon pepper
2 cans (4 ounces each) chopped green chiles, drained
2 cups shredded cheddar cheese

Steps:

  • In a large skillet, cook onion in butter until tender. Remove from the heat. Stir in the rice, sour cream, cottage cheese, salt and pepper. Spoon half of the mixture into a greased 11x7-in. baking dish. Layer with half of the chiles and cheese. Repeat layers., Bake, uncovered, at 375° for 20-25 minutes or until heated through and bubbly.

  • Preheat the oven to 350 degrees F. Grease a 2-quart casserole baking dish (we use cooking spray).
  • Combine all ingredients, except about 1/2 cup of cheese, together in a large bowl. Spread the mixture into prepared dish. Sprinkle remaining cheese on top of mixture. Place in oven and bake for about 35 minutes and the cheese has melted and begun to brown.

  • Preheat oven to 350F.
  • Lightly spray an 8-in square casserole dish with cooking spray,
  • Combine sour cream and diced green chiles in a small bowl. Set aside.
  • Spoon 1 cup of rice into the bottom of the casserole dish.
  • Spread one-third of the sour cream mixture on top of the rice.
  • Top with one-third of the shredded pepper jack cheese.
  • Repeat layers two more times.
  • Cover with aluminum foil and bake for 20 minutes. Uncover and bake for an additional 10 minutes.

2 tablespoons chicken broth
1 tablespoon minced garlic
1 green bell pepper, chopped

1 (11 ounce) can Mexican-style corn, drained
1 (11 ounce) can whole kernel corn, drained
1 (10 ounce) can diced tomatoes with green chile peppers, with liquid
1 (4 ounce) can chopped green chile peppers, drained
1 (8 ounce) package Mexican-style processed cheese food, cubed
½ teaspoon salt
¼ teaspoon black pepper
½ teaspoon chili powder
¾ cup shredded reduced-fat Cheddar cheese

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 3 1/2 quart casserole dish.
  • In a saucepan, bring water to a boil. Stir in rice, reduce heat, and cover. Simmer for 20 minutes.
  • In a wok or large skillet, heat the broth and saute the garlic, bell pepper and onion until tender, about 5 minutes. Stir in cooked rice, cream-style corn, Mexican-style corn, whole kernel corn, diced tomatoes with chiles, green chiles, Mexican-style processed cheese, salt, pepper and chili powder. 3 c rice (measure 3 c after it has been cooked, you're adding precooked rice to this)
4 oz green chiles (canned, diced)
2 c cheddar cheese
16 oz sour cream

Steps:

  • Preheat the oven to 350 degrees
  • Combine all ingredients in a large bowl. Spread the mixture into a 2-quart casserole dish.
  • Bake at 350 degrees for 35-40 minutes until the cheese begins to brown around the edges. Cool slightly before serving.

2 tbs olive oil
1 small onion, minced
1 yellow bell pepper chopped
1/2 cup milk
1 egg
1/2 cup sour cream
2 4 oz cans diced green chiles, drained well
10 oz diced, pre-cooked chicken
Pinch cayenne pepper
1 tablespoon cumin
Plenty of salt and pepper
2 cups shredded cheese (I used a combo of white cheddar and pepper jack, but Monterey Jack is really good too.)
4 cups cooked rice

Steps:

  • Preheat oven to 350 degrees F. rub olive oil on the sides and bottom of a large casserole dish.
  • In a large pan over medium-high heat, saute onions and bell peppers with olive oil until they begin to brown. Set aside.
  • Combine the rice, chicken, 1 1/2 cup of the cheese, green chilies, sour cream, cumin, cayenne, salt, pepper and onion mixture to the casserole dish and combine well. (Give the mixture a taste to make sure you have enough salt, pepper and cayenne.)
  • In a separate bowl, whisk together milk and egg. Add milk and egg to the rice mixture
  • Top the casserole with remaining shredded cheese and bake for 30 to 35 minutes.

1 large boneless skinless chicken breast ((or 2 thin cut breasts))
2 cups cooked white rice
1 cup sour cream
5.52 ounces cream of celery soup ((half of a can))
1/3 cup canned mild hatch green chiles (chopped)
1/2 teaspoon salt
1/4 teaspoon pepper
2 cups Colby-jack cheese (shredded)
Salt and pepper (to taste)
Fresh parsley or green onion (chopped, for garnish)

Steps:

  • Preheat your oven to 350 degrees F. Spray a 9-inch x 9-inch baking dish with non-stick cooking spray. Set aside.
  • If using 1 large breast, cut it in half to create two thin chicken breast pieces. Butterfly the chicken and then finish cutting all the way through.
  • Place a large skillet over medium heat. Cook chicken for 3 to 4 minutes per side, until no longer pink and cooked through.
  • Remove the chicken to a cutting board and finely chop or shred the chicken.
