I have good memories of eating this all-in-one meal often while growing up. We all loved the flavor and seldom had leftovers. Instead of sprinkling it with cheddar, I sometimes create a cheese sauce using American cheese and milk. It makes it so cheesy! -Andrea Brandt, Newton, Kansas

- In a large skillet, cook beef over medium heat until no longer pink; drain. Stir in the water, poultry seasoning and pepper. Bring to a boil. Stir in gravy mix. Cook and stir until slightly thickened, about 2 minutes., Arrange the onion, carrot and potatoes over beef. Reduce heat; cover and simmer until vegetables are tender, 10-15 minutes. Sprinkle with cheese. Cover and cook until cheese is melted, 3-5 minutes longer.

CHEESY HAMBURGER CASSEROLE
Just as easy to make as Hamburger Helper and you can control the ingredients. Great weekday meal and the kids love it!

- Sweat the onions in the oil with a three-fingered pinch of salt. Add the beef and cook it, breaking it up as you do. Add another three-fingered pinch of salt or two, along with the dry seasonings. Add the tomatoes and bring to a simmer, then reduce the heat to low and cook for an hour.
- Cook the macaroni in boiling water till it's half done. Drain it and add it to the tomatoes. (I wanted this to stretch into two meals, so I used the whole box, but if you want your dish to be very tomatoey and beefy, you might want to add only half the macaroni). Stir it into the sauce. Taste it and add cheese and cover or transfer it to a large baking dish and cover it with foil. It can be refrigerated for up to two days, or frozen a few weeks.
- If refrigerated bake it in a 400 degree oven till it's piping hot (about 45 minutes if it's cold to room temperature). Just before you're ready to eat, remove the foil, cover macaroni with the cheese and broil till the cheese is bubbly.

- In a large saucepan over medium heat, cook and crumble beef until no longer pink; drain and set aside. In same saucepan, melt 1 tablespoon butter over medium heat. Saute onion, carrots, celery, basil and parsley until vegetables are tender, about 10 minutes. Add potatoes, ground beef and broth; bring to a boil. Reduce heat; simmer, covered, until potatoes are tender, 10-12 minutes. , Meanwhile, in a small skillet, melt remaining butter. Add flour; cook and stir until bubbly, 3-5 minutes. - Preheat oven to 350 degrees F. Coat 9×13 baking dish with non-stick cooking spray.
- Place a large skillet on the stovetop over high heat. When the pan is very hot, add the beef and season with salt, pepper, cumin, mustard powder, and paprika. Add the onion and garlic, and cook, stirring occasionally, until beef is browned and onions are golden. Stir in drained tomatoes until well combined.
- Place bottom half of buns in prepared pan. Top with beef & sliced cheese. Finish off with the top half of the bun.

- In a large sauté pan with a lid, brown the ground beef over medium high heat. Remove cooked ground beef from pan and set aside, reserving 2 tablespoons of grease in the pan.
- Cook the onion until soft, about 5 minutes. Add the garlic for the last 30 seconds.
- Add the flour and stir to cook for about 1 minute, slowly stir in the beef broth and bring the mixture to a boil.
- Pour in the tomato sauce, Italian seasoning, seasoned salt, smoked paprika, garlic powder and pasta, stirring to combine. Cover with lid and sauté for 12 to 15 minutes or until pasta is cooked, stirring occasionally.

CHEESY HAMBURGER CASSEROLE
Oh gosh, we loved this cheesy ooey gooey hamburger casserole recipe! It's the perfect dish for a quick and tasty meal. We love the flavor the fresh veggies add and the tons of cheese on top pulls the dish together. A great dinner recipe on a busy weeknight.

- 1. Brown meat over meduim heat and then add all chopped veggies and season with salt and pepper.
- 2. Puree the 1 LB 12 OZ can of diced tomatoes (Whole Peeled Tomatoes can also be used if desired) and add to hamburger mixture. Add the 14 oz. can of diced tomatoes and stir. Cover and simmer until veggies are tender. Taste and add more salt and pepper if necessary.
- 3. While the sauce is simmering, cook the rigatoni in salted water according to box instructions. Do not overcook the pasta because it will continue to cook when added to the sauce. Drain and add to the hamburger mixture incorporating well.
- 4. Sprinkle liberally with grated cheddar cheese (I use either mild or medium), cover and simmer until cheese is melted.
- 5. Hint: I use an electric skillet to prepare this recipe but you can also use a large skillet keeping in mind that it makes a good amount. This is really good for company or to take to a potluck party. Also good for leftovers. Side Dishes are just a green salad and nice crunchy rolls just out of the oven.
CHEESE STUFFED BURGERS
Steps:
- Mix the ground beef, salt and pepper in a large bowl and form the mixture into 8 equal-size balls. Press a cube of desired cheese into the center of each ball and cover completely with meat. Form the balls into hamburger patties, about 1/4-inch thick. Grill burgers until desired doneness. Top with lettuce, tomatoes, onions and pickles as desired on a toasted bun.
- Place the drained pimientos in a blender or food processor and puree until smooth. Using an electric mixer, combine the pimientos and cheese, beating until smooth. Beat in the mayonnaise.

Flip the bare half of the tortilla over the filling, cover the pan, and sauté for about 2 minutes until the bottom is golden and the cheese has started to melt, then use a spatula to flip the half-moon quesadilla, and continue to cook, uncovered, until all of the cheese is melted and the underside is browned, 2 to 3 minutes.
- Remove the quesadilla to a cutting board and let the quesadilla sit for a minute before you slice into 2 or 3 wedges. Repeat until all of the quesadillas are cooked. Serve with guacamole, salsa, sour cream and lime wedges.
