1 (20 ounce) package Simply Potatoes Diced Potatoes with Onion
4 cups spinach
2 cups of grated sharp cheddar cheese
3 cups of chopped bell peppers
1 tablespoon butter

Steps:

  • Lightly cover the bottom of a 10-inch non-stick skillet with butter. Heat butter over medium-low heat until hot.
  • Add one package Simply Potatoes Diced Potatoes with Onion to skillet. Cover with lid. Cook for 10 minutes, turning every 3 to 4 minutes.
  • Add 3 cups of chopped bell peppers. Cover with lid. Cook for 3-4 minutes, turning every 2 minutes.
  • Add 2 cups of grated sharp cheddar cheese and 4 cups of spinach. Cook for 2 minutes, turning constantly until cheese is melted and spinach is wilted.

  • Heat oven to 450.
  • Melt butter in a large cast iron skillet over medium high heat. Add 1 bag of Simply Potato Diced Potatoes and onion. Saute until well heated & lightly browned.
  • Remove from heat and stir in the cheese, sour cream, and kosher salt.

225ml bag baby leaf spinach
6 large eggs
425ml milk
1 tbsp English mustard powder
200g bread (about 3 thick slices)
200g mature vegetarian cheddar
4 clusters of cherry tomatoes on the vine

Steps:

  • Preheat the oven to 190C/gas 5/fan 170C and butter a shallow 2-litre dish. Tip the spinach into a colander in the sink and pour a kettleful of boiling water over it. Leave it to wilt while you make the cheesy base. (Or microwave the spinach according to the packet instructions.)
  • Break the eggs into the bowl of a food processor, pour in the milk, add the mustard and 1 tsp salt. Tear in the bread, crusts and all, then whizz together until smooth. Tip the mixture into a large bowl and grate in three-quarters of the cheese.
  • Squeeze the spinach, to get rid of all the water, then stir it into the cheese mixture and tip into the dish. Grate over the remaining cheese, top with the tomato clusters and bake for 30-35 minutes until risen and golden. Cool and allow to settle a little before serving.

Growing up, my father was a creative cook, and I always loved his home made mac and cheese that contained diced green pepper. The other ingredients that my recipe contains were added because I love seasonings, along with the combined flavors with quality baked ham.

1 lb baked ham, cubed
1 small green pepper, diced
2 teaspoons Mrs. Dash table blend seasoning
1 cup garlic butter croutons

Steps:

  • To Microwave: Mix the baked ham, green pepper and seasoning into the Simply Macaroni and Cheese. Microwave on high for five (5) minutes. Remove from microwave and stir. Sprinkle croutons over the top of dish and microwave two additional minutes.
  • To Bake: Mix first four ingredients into 8" x 8" greased baking dish.
  • Bake at 350 degrees for 20 minutes. Remove dish from oven and stir.
  • Sprinkle croutons over the top of dish and return to oven. Bake an additional five minutes.

  • Preheat oven to 375°. In a Dutch oven, heat butter over medium heat. Add onion and green pepper; cook and stir until tender, 3-4 minutes. Stir in flour until blended; gradually whisk in milk. Bring to a boil, stirring constantly; cook and stir until thickened, 2-3 minutes., Stir in carrot, 1/2 cup cheese, pimientos, salt and pepper until cheese is melted. Remove from heat. 1 teaspoon olive oil
1 lb lean ground beef or chicken
1 small onion, diced
1/4 cup canned Muir Glen™ organic tomato paste
1 can (14 oz) Muir Glen™ organic crushed tomatoes with basil, undrained
1 pouch (1 oz) chili seasoning mix
1 teaspoon Worcestershire sauce
1 can (14 oz) pinto beans, drained, rinsed
3 cups shredded sharp Cheddar cheese (12 oz)
1 bag (16 oz) Cascadian Farm™ frozen organic crinkle cut French fries
Cooked crumbled bacon
Chopped red onion

Steps:

  • Heat oven to 425°F.
  • In 10-inch cast-iron or other ovenproof skillet, heat 1 teaspoon olive oil over medium heat. Add ground beef and onion. Brown all over, breaking up meat as you go. Once meat is browned and onions are soft, add tomato paste and crushed tomatoes. Stir it all up, and then stir in the chili seasoning mix, Worcestershire sauce and pinto beans. Heat to a simmer, and cook about 5 minutes or until sauce has thickened and is bubbling. Remove from heat.
  • Smooth the chili out into an even layer in skillet, and sprinkle with one-third of the Cheddar cheese. Add half of the frozen French fries over top, and then add another one-third of the cheese. Finally add the remaining French fries and the remaining cheese. Place skillet in oven, and bake 20 to 25 minutes or until French fries are cooked through and cheese is melted and golden. Remove from oven, and allow to stand 5 minutes. Serve in bowls or plates sprinkled with crumbled bacon and chopped red onion.
