A family favorite meatloaf recipe, that's easy to make and tastes absolutely delicious!

1.50 pounds ground beef, bison, turkey or chicken*
1 large egg, whisked
20 saltine crackers, crushed
1/3 cup ketchup
1 (8 ounce) can tomato sauce, divided
2 tablespoons parmesan cheese
1 cup lite mozzarella cheese, divided**
1 teaspoon salt
1 teaspoon Italian seasoning
½ teaspoon dried basil + fresh chopped basil or parsley as garnish if desired
1/8 teaspoon pepper
½ teaspoon sugar

Steps:

  • Preheat oven to 350ºF. and prepare 9x5 loaf pan by lining it with foil and spraying the foil with nonstick cooking spray.
  • In a large mixing bowl, combine all ingredients, except 1/2 of the tomato sauce and the mozzarella.
  • After ingredients are combined, transfer the meatloaf mixture to a flat surface, covered with parchment or wax paper. Shape the meatloaf into an oval or square and sprinkle most of the mozzarella over the middle of the meatloaf. Save about 1/4 cup of the mozzarella for the topping. Next, roll the meatloaf up and place it in the loaf pan. Use your fingers or the back of a spoon to press the meatloaf down so that it is all even at the top. Pour the reserved 1/2 of tomato sauce over the top and spread out evenly.
  • Bake for 1 hour. Once cooked, remove from oven and sprinkle additional mozzarella cheese over the top. Bake for about 10-15 minutes more.
  • Allow meatloaf to cool for about 10 minutes and then cut loaf into 8 even slices. Enjoy with a side salad or another favorite side dish!

3 lb lean ground beef (i.e. 90/10 OR 2 lbs with 1 lb Italian sausage)
1 medium sweet onion (finely diced)
1 medium green bell pepper (seeded and finely diced)
1 cup Panko breadcrumbs
1/2 cup grated Parmesan cheese
1/2 cup pasta sauce (plus additional warmed for serving)
2 Tbsp chopped fresh basil or Italian parsley
2 Tbsp Worcestershire sauce
2 tsp dry Italian seasoning
2 tsp steak seasoning (i.e.Montreal or Chicago)
1 1/2 tsp salt (may adjust to taste)
4 cloves garlic (minced)
3 large eggs (lightly beaten)
1 8 oz block mozzarella cheese, sliced into 20 equal slices
8-10 slices mozzarella or provolone cheese

Steps:

  • Preheat the oven to 350°F. Liberally spray a bundt pan with cooking spray. Have nearby a foil lined sheet pan.
  • In a medium-size mixing bowl mix together the ground beef, onion, green pepper, bread crumbs, Parmesan, pasta sauce, parsley, Worcestershire, Italian seasoning, steak seasoning, garlic and salt. Add eggs.
  • Using your hands mix until fully combined and the ingredients are evenly distributed. Divided in half.
  • Press 1/2 of meatloaf mixture in pan. Arrange the mozzarella cheese over the meatloaf then top with the remaining meatloaf mixture. Press evenly.
  • Bake for 45 minutes. Remove from oven. Drain liquid from bundt pan. (Use oven mitts the pan will be hot.) Center foil lined sheet pan on top, then flip to Invert meatloaf onto the pan. Arrange cheese slices overlapping on top.
  • Increase oven temperature to 375°F. Return to oven baking for an additional 15 minutes or until cooked through and cheese has melted. Rest on pan for 10 minutes then transfer to a platter or cake stand.
  • Serve slices with additional warm pasta sauce on the side.

Meatloaf is a tough sell in some families. Not in mine. In my house it is a favorite dish, one that always calls for seconds and this Cheesy Italian Mini Meatloaf is no different; loaded with fabulous Italian flavors in a moist cheesy meatloaf.

1 pound extra lean ground turkey (99% lean)
4 wedges spreadable low calorie cheese (garlic and herb flavor (I used Laughing Cow))
1/4 cup Italian bread crumbs
1/4 cup Parmesan cheese (shredded , .5-oz)
4 garlic cloves (pressed or minced)
1 tablespoon dried Italian seasoning
1 teaspoon onion powder
1 teaspoon kosher salt
1/2 teaspoon black pepper (fresh ground)
1 cup roasted garlic and onion pasta sauce (divided)
Non stick olive oil spray
1/2 cup Parmesan cheese (shredded, for serving (optional))
1 pound green beans (stems snapped off)
4 garlic cloves (sliced)
1/2 teaspoon kosher salt
1/4 cup water
1/2 lemon

Steps:

  • Preheat oven to 375°. Prepare muffin tin with non stick olive oil spray. Set aside.
  • Reserve 1/3 cup pasta sauce. Combine remaining ingredients in a large mixing bowl. Mix well with hands. Portion mixture into muffin tin, filling 8 cups with mixture. Gently press down on meatloaf. Spread reserved sauce over top of the meatloafs.
  • Bake for 20 minutes, or until meatloaves are cooked through.
  • Remove from oven and sprinkle with Parmesan cheese. Serve and enjoy.
  • Once mini meatloaves are in the oven begin preparing Garlic and Lemon Green Beans.
  • In a large skillet over medium high heat, add olive oil. Slice garlic cloves and add to the pan. Stir and allow garlic to cook for about 30 seconds-1 minute.
  • Add green beans, sprinkle with salt and cook for 2 minutes, stirring occasionally. Add water. Cover and cook for 5 minutes. Remove cover squeeze in juice of ½ lemon and stir. Allow to cook until liquid is nearly evaporated, about 3-5 minutes.
  • Remove from skillet and place beans in a serving dish. Serve and enjoy!

1 cup shredded Cheddar cheese
½ cup quick cooking oats
1 teaspoon salt
1 pound ground beef
⅔ cup ketchup
¼ cup packed brown sugar

  • Preheat oven to 350 degrees F (175 degrees C).

This was one of the first recipes I tried as a new wife many years ago. These single-serving loaves have been a super hit ever since. I like to serve them with pasta or mashed potatoes.

1 cup milk
1/2 cup seasoned bread crumbs
1 teaspoon salt
1-1/2 pounds lean ground beef
3/4 cup Italian tomato sauce
Shredded Parmesan cheese, optional
Hot cooked pasta, optional

Steps:

  • In a large bowl, combine the first four ingredients. Crumble beef over mixture and mix well. Shape into six loaves. , Place in a greased 13x9-in. baking dish. Bake, uncovered, at 350° for 30 minutes. Spoon tomato sauce over loaves. , Bake 15 minutes longer or until meat is no longer pink and a thermometer reads 160°. Sprinkle with Parmesan cheese and serve with pasta if desired.

2 eggs, beaten
1 ½ cups dry bread crumbs

1 1/3 pounds ground sirloin
1 large egg, beaten
2/3 cup Italian bread crumbs, a couple of handfuls
1/4 cup grated Parmigiano, plus 1/2 cup
1/2 small green bell pepper, chopped
1 small yellow onion, finely chopped
4 cloves garlic, chopped
3 tablespoons tomato paste
Salt and pepper
2 tablespoons extra-virgin olive oil
1 pound corkscrew shaped pasta with lines (cavatappi) or small shell pasta
2 tablespoons butter
2 tablespoon all-purpose flour
2 cups milk
2 cups shredded sharp Cheddar
1/2 cup shredded asiago cheese
1 teaspoon coarse black pepper
1/2 cup Italian bread crumbs
2 tablespoons chopped fresh thyme leaves
2 to 3 tablespoons chopped rosemary leaves
1/4 cup chopped flat-leaf parsley

Steps:

  • Put a large pot of water on to boil for pasta. Preheat oven to 425 degrees F.
  • Place meat in a bowl. Make a well in meat. Fill well with egg, bread crumbs, 1/4 cup cheese, peppers, onions, garlic, tomato paste, salt and pepper. Mix meat and breading and form 4 individual oval meat loaves, 1-inch thick. Coat loaves with extra-virgin olive oil and arrange on a baking sheet. Roast 18 to 20 minutes.
  • When the pasta water boils, salt water and add pasta. Cook until slightly undercooked ? pasta will continue to cook when combined with cheese sauce.
  • Melt butter in a saucepan and add flour. Whisk in milk. Bring to a bubble. Thicken milk, 2 to 3 minutes. Add cheeses: Cheddar, asiago, 1/2 cup Parmesan and black pepper. Stir to melt cheeses. Drain pasta and combine with melted cheese sauce and transfer to a flameproof baking dish or casserole. Place bread crumbs in a bowl and add extra-virgin olive oil and herbs to bread crumbs. Top pasta with bread crumbs. Place under a broiler and brown bread crumbs. Serve cheese and pasta alongside meat loaf.
