Hash brown potatoes, cheese, sour cream, soup and cereal crumbs make for quite a comfort food concoction. This is a delicious recipe and really easy to make.

1 (2 pound) package frozen hash brown potatoes, thawed
½ cup melted butter
1 (10.75 ounce) can condensed cream of chicken soup
12 ounces shredded American cheese
1 (8 ounce) container sour cream
1 teaspoon salt
½ onion, chopped
2 cups crushed cornflakes cereal
½ cup melted butter

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease one 9x13 inch baking dish.
  • Place potatoes in bottom of prepared dish.
  • Combine the 1/2 cup butter, condensed soup, cheese, sour cream, salt and onion; mix well and pour over potatoes. Top with crushed corn flakes and drizzle with 1/2 cup melted butter.
  • Bake uncovered at 350 degrees F (175 degrees C) for 45 minutes.

This cheesy O'Brien potato casserole is one of those recipes you throw all the ingredients together making a quick and easy side dish to take along to any gathering.

28 ounce bag frozen Potato O'Brien (thawed)
16 ounce sour cream
1 10.75 ounce can cream of mushroom soup
2 cups cheddar cheese (grated)
5 Tablespoons butter (melted)
2 cups plain corn flake crumbles
1/4 cup butter (melted)

Steps:

  • Preheat oven to 350 degrees Fahrenheit.
  • In a large bowl combine sour cream, mushroom soup and melted butter.
  • Add Potatoes O'Brien to above mixture and stir well to combine. Then add cheese to mixture. Place combined ingredients is a 2 quart casserole dish.
  • For the topping: in a small bowl combine corn flake crumbles and melted butter until well combined. Spread evenly to top of potato mixture and bake for 1 hour.
  • Serve warm and enjoy!

My Mother-in-law would often make these potatos with Sunday dinner. I've never seen the recipe elsewhere. They are a nice change to the traditional hashbrown casserole.

1 (10 ounce) can cheddar cheese soup
1 (12 ounce) can evaporated milk

Steps:

  • Combine all ingredients.
  • Bake for 1 hour at 350 degrees Fahrenheit in a 9x13 pan.
  • Season with pepper and salt if desired.

  • Preheat the oven to 375°F. Lightly butter a 9x13-inch baking dish. In a large mixing bowl, whisk the eggs and milk until fully blended and season with a large pinch of salt and a few grinds of black pepper. Set aside.
  • In a skillet, cook the bacon over medium heat until the fat has rendered and the bacon is crispy. Use a slotted spoon to transfer it to a paper towel-lined plate. Remove all but about 2 tbsp of the drippings from the pan. Add the onions and green chiles to the skillet and cook, stirring often, until the onions are softened and translucent, about 3 minutes. Add two of the chopped tomatoes and cook 1 minute, tossing everything together. Remove from the heat and let cool several minutes.
  • Add the potatoes and cooked bacon to the eggs, stirring until evenly distributed. Add the sautéed vegetables to the eggs, stirring, then add 2 cups of the cheese, stirring until fully blended.
  • Pour the egg mixture into the prepared pan, cover and bake for 20 minutes. Remove the cover, sprinkle the top with the remaining 1 cup of cheese, return to the oven and continue baking for another 15 minutes or until the cheese is melted, starting to brown in spots, and the casserole is bubbling around the edges. If needed, you can put it under the broiler for a few minutes to brown the top, watching carefully.
