Steps:
- Cook sweet potatoes.
- Add butter, sugar, beaten eggs, spices, milk, and 3/4 cup coconut to the cooked potatoes.
- Save 1/4 cup coconut for topping.
- Mix well.
- Pour into greased 7 1/2 by 12-inch baking dish.
- Sprinkle remaining 1/4 cup coconut on top.
- Bake at 375 degrees for 35 minutes.

- Place the sweet potato in a saucepan; cover with water. Bring to a boil. Reduce heat; cover and simmer for 30-40 minutes or just until tender; drain. When cool enough to handle, peel sweet potato and place in a bowl; mash. Stir in 1 tablespoon butter, raisins, orange peel, salt, cinnamon and nutmeg. Transfer to a greased 1-1/2-cup baking dish. Toss coconut with remaining butter; sprinkle over the top. Bake, uncovered, at 350 degrees F for 25-30 minutes or until golden brown.

- Preheat oven to 350 degrees F (175 degrees C). Spray one 2 1/2 quart casserole dish with non-stick cooking spray.
- In a large bowl, combine the sweet potatoes, sugar, eggs, 1/4 cup butter, milk and vanilla. Pour into prepared casserole dish.
- Mix together the brown sugar, flour, margarine and coconut; sprinkle over casserole.
- Bake at 350 degrees F (175 degrees C) for 25 to 30 minutes.

AWESOME SWEET POTATO CASSEROLE
This recipe was given to me in the late 1980s by Diane Thornton in Jackson Mississippi. I have made it each year since, and when I bring it to gatherings people rave about it, so I bring it year after year. Some people say it's more like a desert than a side dish. All I know is that it's a standby for me and always gets a nod.

- Preheat an oven to 350 degrees F (175 degrees C). Grease a 9x13-inch baking dish.
- Beat the pineapple, coconut, sweet potatoes, white sugar, eggs, vanilla extract, milk, and 1/2 cup melted butter together in a large mixing bowl until smooth. Pour mixture into the prepared pan; set aside. Mix the flour, brown sugar, 1/3 cup butter, and pecans in a bowl. Sprinkle pecan mixture over the batter.
- Bake in the preheated oven until the casserole is bubbly and the topping is browned, about 30 minutes.

- In large saucepan, cook sweet potatoes in boiling salted water to cover.
- Simmer till tender,about 15 min.
- then drain.
- Peel sweet potatoes and mash.
- Stir in 1/2 cup brown sugar,butter,cinnamon,nutmeg,and salt.
- Mix Well.
- Blend in milk.
- Pour seasoned sweet potato mixture into buttered 1 1/2 quart casserole dish or buttered individual bakers.
- Sprinkle with remaining 2 Tablespoons brown sugar.
- Bake in center of oven to 400 degrees for 30 min.
- or until heated through.

SWEET POTATO CASSEROLE
The brown sugar, cream, marshmallows and oatmeal streusel gives this casserole a taste similar to sweet potato pie, yet the dish goes great alongside meals as varied as low-key chicken dinners or festive holiday banquets.

- Rub a little vegetable oil on the skin of each sweet potato and bake them in a preheated 400 degree oven for 60 to 70 minutes or until they are tender.
- When the potatoes are cool enough to handle, scrape out the insides and use an electric mixer on high speed to beat the potatoes until they are mashed and smooth.
- Measure exactly 6 cups of the mashed sweet potato into a large bowl.
- Add 3/4 cup brown sugar, heavy cream, melted butter, 1/4 teaspoon cinnamon, and salt into the sweet potatoes and mix well with the beater until all the ingredients are incorporated.
- Pour this mixture into an 8x8-inch baking dish.
- Preheat oven to 350 degrees.
- Make the oatmeal streusel by grinding the rolled oats to a fine flour using a food processor.
- A blender will also work.
- Combine the oat flour with 2 tablespoons brown sugar, all-purpose flour, and 1/8 teaspoon cinnamon in a small bowl.
- Cut the cold butter into the dry mixture using a pastry knife or a fork.
- You should have a crumbly mixture with pea-size bits.
- Sprinkle this oatmeal streusel over the sweet potato mixture and pop it into the oven for 70 to 80 minutes or until the top begins to brown slightly.
- When you remove the casserole from the oven immediately spread the marshmallows over the top.
- Let this sit for about 10 minutes.
- The heat from the casserole will melt the marshmallows, and then it's ready to serve.

SWEET POTATO CASSEROLE
This recipe was served at a dinner party I went to at my friend, Shea Kurtz's house. Liked it so well, I begged the recipe. I have no idea where she got it, but ever since I made it for Thanksgiving the first time (which was about 15 years ago), it's become a staple at all our holiday gatherings. And with it posted, I won't have to look for it every time!!

Steps:
- Mix first 8 ingredients together and pour into a 9x9 casserole dish.
- Blend the ingredients for the topping with mixer and sprinkle over the top of the sweet potato mixture.
- Bake at 350 degrees for 30-35 minutes.
- *NOTE:An alternate method that we have used and like is to put the sweet potato mix and topping into individual custard cups- these do not bake as long- basically just until the crust on top is done.
- **NOTE2: We have also made this recipe with Brown Sugar Twin or Brown Sweet and Low for the diabetics in our family.
- I usually increase the sweetener a bit and make a little more topping for those.

- Preheat oven to 350ºF and adjust rack to middle position. Place sweet potatoes, honey, eggs, butter, coconut milk, vanilla and salt in a mixing bowl. Mash potatoes and stir until all ingredients are thoroughly mixed. Pour into an 11 x 7-inch baking dish.
