  • Bake 4 cups curly fries as the label directs. Meanwhile, make the cheese sauce: Melt 1 stick butter in a saucepan over medium-high heat. Sprinkle in 1/4 cup flour and whisk until smooth, 2 minutes. Gradually whisk in 1 cup milk and a pinch of nutmeg; whisk until smooth, 3 minutes. Add 8 ounces cubed Velveeta cheese and whisk until melted, about 5 minutes. Whisk in 1/4 cup lager beer or chicken broth, 1 teaspoon hot sauce and 1/2 teaspoon kosher salt. Add the fries and toss.

4-6 Potatoes
1/4 cup olive oil
Sea Salt, Fresh ground pepper, your favorite seasoning salt
1 cup sour cream
1/2 cup ranch dressing
1/4 cup milk
Toppings:
1 cup (or as much as you like) Shredded cheddar cheese
1/2 cup shredded mozzarella cheese
1/2 cup real bacon bits
1/4 cup green onions

Steps:

  • Cut potatoes into "steak french fries" size. {I like them thicker...but that means it will also take a little longer to cook than skinny ones.} Place on foiled baking sheet. Drizzle with olive oil and lightly toss with tongs. Sprinkle salts and pepper over the potatoes. Bake 400 for 40 minutes or until fork tender in seperate bowl mix: sour cream, Ranch dressing and milk. on a separate platter smooth out 3/4 of the sour cream sauce. place hot potatoes on sour cream sauce. drizzle remaining sour cream sauce on potatoes Sprinkle toppings. 2 tablespoons olive oil
½ teaspoon dried thyme leaves
¼ teaspoon ground black pepper

¼ cup shredded Cheddar cheese

Steps:

  • Preheat oven to 450 degrees F (230 degrees C).
  • Arrange potato wedges on a baking sheet. Drizzle olive oil over the wedges; season with thyme, pepper, and salt. Turn wedges with a spatula to coat with oil and seasonings.

This twist on a breakfast favorite comes from my daughter Brittany, who is a cheese and onion lover. Great for lunch and as a dinner side also!

4 large russet potatoes
4 tablespoons butter or 4 tablespoons canola oil, divided use
1/2 teaspoon salt, to taste
1/8 teaspoon fresh ground black pepper
2 cups shredded sharp cheddar cheese, divided use
1 small onion, sliced thin
parsley (to garnish) (optional)

Steps:

  • Microwave potatoes as you would for a baked potato, but cook until*slightly* underdone- 4 take 12-14 minutes on my microwave (or use leftover baked/cooked potatoes).
  • When cool enough to handle, quarter potatoes and then cut into about 1 inch pieces (we leave the skins on).
  • Heat 2 tbl of butter or oil in a large non-stick skillet (or if you just cooked bacon in the pan, you can reserve some of the bacon grease and use that to fry in).
  • On medium heat, add onions and cook until 1 or 2 minutes before adding potatoes, salt and pepper, stirring to combine.
  • Let cook for a few minutes, flipping or stirring gently, until onions are tender and potatoes are to desired crispness.
  • If necessary, add additional butter or oil to prevent sticking.
  • Remove home fries from pan and transfer into microwavable casserole dish.
  • Sprinkle with one cup of cheese and fold in gently.
  • Sprinkle remaining cup of cheese on top and microwave for 1 to 2 minutes until cheese is melted.
  • Sprinkle a bit of parsley on top, if desired.

2 tablespoons olive oil

1 teaspoon garlic salt
1 cup shredded fontina cheese
Fresh parsley, torn
Fresh basil leaves, torn
Chopped fresh chives
Kosher salt and cracked black pepper to taste
Reynolds Wrap® Aluminum Foil

Steps:

  • Preheat oven to 425 degrees F.
  • In a large bowl, toss together the halved potatoes, olive oil, butter, garlic salt and freshly cracked black pepper.
  • Tear 4 large sheets of Reynolds Wrap® Aluminum Foil, each about 16 inches long. Divide the potato mixture evenly between the sheets of foil. Bring up foil sides. Double fold top and ends to seal packet, leaving room for heat circulation inside. Place the packets on a baking sheet and transfer to the oven. Cook for 25 minutes.
  • Remove one packet from the oven. Open packet carefully by cutting along top fold with a sharp knife, allowing steam to escape; then open top of foil packet. Check to see if the potatoes are fully cooked and fork tender; if not, return to the oven for 5 more minutes.
  • Once cooked, open up the packets and top each portion of potatoes with cheese and herbs. Let the cheese melt before serving. Season with salt and pepper to taste.
