CRISPY CHEESY ROASTED BROCCOLI RECIPE
This cheesy roasted broccoli recipe is the thing of side dish dreams! Easy to make with just a handful of ingredients, it's perfect to serve as part of your Thanksgiving or holiday meal, and quick enough to be part of a weeknight dinner.

- Heat oven to 450°F and set a large, rimmed sheet pan on the middle rack in the oven (while the oven heats).
- While the oven preheats, bring a large pot of water and 1-teaspoon salt to boil.
- While the water heats, rinse and cut the broccoli into florets (they should all be about the same size).
- Fill a large mixing bowl with ice water, and set it next to the stove.
- When the water is boiling, add the broccoli florets, and set the heat to medium-low. Boil the broccoli for 2 minutes. After 2 minutes, use a slotted spoon to submerge the broccoli in the ice water to cool for 2 minutes. Transfer the broccoli to a paper towel-lined plate to dry and pat dry with another paper towel.
- In a large bowl, mix together broccoli, olive oil, 1-teaspoon salt and black pepper.
- In a medium bowl, mix together the melted butter, panko crumbs, shredded cheddar, grated Parmesan cheese and red pepper flakes.
- Remove the hot baking sheet from the oven and spread the broccoli mixture evenly over the pan.
- Set the oven to broil and return the pan with the broccoli to the middle rack of the oven.
- Broil the broccoli 4 minutes. Remove the pan from the oven, and
- sprinkle the breadcrumb/cheese mixture evenly over the top of the broccoli.
- Return the broccoli to the oven and broil another 3-5 minutes or until the broccoli is fork-tender and the cheese has melted and is crispy around the edges. Watch closely so the cheese doesn't burn. (**Note: If the cheese is browning too quickly, remove the broccoli from the oven and turn off the broiler. After 1 minute, return the broccoli to the oven and let it finish cooking with residual heat.)
- Serve immediately and...

- Preheat oven to 500 F degrees. Line a large rimmed baking sheet with foil or parchment paper and set aside.
- To a large mixing bowl, add broccoli florets and olive oil, giving it a toss with your hands to fully coat the broccoli with the oil. Add pepper and salt and toss again to combine.
- Transfer broccoli to prepared baking sheet and bake 8 minutes. While broccoli is baking, combine cheese and panko in a small bowl.
- Remove baking sheet from oven and sprinkle broccoli with cheese/panko mixture. Spray quickly with a little cooking spray and return to oven for 3-5 minutes, until cheese is melted and a bit crispy.
- Can be served from the baking sheet or alternatively, after broccoli is finished with the first 8 minute bake, transfer broccoli to a large casserole dish. Top with cheese/panko and bake 3-5 minutes and serve directly from the dish. Just make sure the casserole dish is oven safe at 500!

- Heat oven to 400°F. Line cookie sheet with foil; spray with cooking spray.
- Cook broccoli as directed on box; pour into medium bowl. With kitchen scissors, cut broccoli into 1/4- to 1/2-inch pieces. Add Parmesan cheese, garlic salt and pepper sauce; mix well. Stir in rice. Shape mixture into 4 patties, about 1/2 inch thick. Place on foil-lined cookie sheet.
- Bake 15 minutes; turn. Bake 15 minutes longer or until light golden brown.

- preheat the oven to 400 degrees. Lightly grease a baking sheet lined with aluminum foil.
- Heat the oil in a small pan over medium heat, add in the garlic and onions. Season with salt/pepper to taste. Sauté until onions are garlic are tender, set aside to cool.
- Add the broccoli to a kitchen towel. Wrap the towel around the broccoli and squeeze out the extra moisture. Pour the drained broccoli into a large bowl, add the onion and garlic and mix gently.
- To the same bowl, add the panko, the cheeses, eggs, and salt/pepper to taste.
- Mix together and form into patties, place on the prepared baking sheet.
- Bake in the preheated oven for 15 minutes. Flip and bake for another 15 minutes or until browned and crispy.
CHEEZY BROCCOLI QUINOA BURGERS
The classic broccoli-cheddar combo has been recreated, but with a vegan twist and turned into quinoa burgers. They're just as good as they sound.

- Steam broccoli until tender, either using a steamer basket or just in a small pan with a little water in the bottom. Drain and let cool until cool enough to handle.
- Once cool, add broccoli to a food processor and pulse until chopped into very small pieces, 10 - 15 pulses. Add chickpeas, quinoa and mustard and pulse until a dough starts to form.
- Transfer mixture to a bowl, add in remaining ingredients (starting with 4 tablespoons quinoa flour) and knead by hand until dough can be formed into patties, adding more quinoa flour as needed.
- Form dough into patties and place on a parchment lined sheet / plate. Chill in fridge for at least 1 hour.
- Cooking options:
- 1) Heat oil over medium high heat. To test if it's ready, sprinkle a little water on the pan. If water immediately sizzles, the pan is ready. Add burgers to pan, cooking until browned on both sides, 2 - 3 minutes per side. Place on wire rack to cool while finish cooking.
- 2) Preheat oven to 350 degrees F. Line a baking sheet with parchment, add patties and bake on the center rack for 20 - 30 minutes, flipping halfway through, until burgers are crispy.

- 1. While oven is pre-heating to 400, prepare your baking sheet. You will want to line it with foil and then lightly grease it.
- 2. Add oil to a medium sauté pan and heat over medium heat. Add onions and garlic, and salt and pepper to taste. Watch for doneness... you want to cook the onions until just tender. Set aside.
- 3. Remove as much moisture as possible from your broccoli. This will help you get the best texture in the finished dish. Add the dry broccoli, panko, cheeses, egg and a bit of salt and pepper to a large bowl. Combine well.
- 4. Form broccoli mixture into small-ish patties and carefully place them on your baking sheet. Bake for 30 minutes, flipping the patties half way through. They are done when they appear golden and crispy!

the love for broccoli in my house is...divided. me and my girls will steam some broccoli, throw a little butter/salt on it them and eat a big o' HUGE bowl of it, content as can be. my boys? not so much. when the broccoli comes out of the fridge, they take off running in the other direction. at best, i can cut it up into little itsy bitsy pieces and stir it into some rice and my eldest son with eat it. but i had a plan. you can't mess with momma. i made these delicious patties with cheese and panko breadcrumbs for some crunch. then i roasted the mess out of them until they were browned and crunchy, yet cheesy in the middle. roasting the broccoli made it taste nutty and extra good. the result? no division now exists in the smith household! united we stand! :)
