Stuffed Poblano Peppers image

Stuffed Poblano Peppers are loaded with southwest seasoned ground beef, rice, veggies, and cheese for a satisfying dinner with just a little bit of a kick! Everybody raves about this twist on classic stuffed peppers!

4-6 poblano peppers
2 tablespoons olive oil, divided
1 medium onion, chopped
1 pound lean ground beef
1 teaspoon kosher salt
1 teaspoon ground cumin
1 teaspoon chili powder
1 teaspoon garlic powder
1/2 teaspoon chipotle chili powder
1/2 teaspoon ground coriander
1/2 teaspoon black pepper
1 cup cooked rice
1 cup black beans, rinsed and drained
1 cup frozen corn
1 (15-ounce) can fire roasted tomatoes
1 1/2 cups grated Mexican cheese blend
1/4 cup fresh cilantro, chopped

Steps:

  • Preheat oven to 350 degrees F.
  • Slice the poblano peppers in half and remove the seeds and membrane. Rub with 1 tablespoon of the olive oil. Arrange on a baking sheet and roast for 10-12 minutes until softened.
  • While the peppers are baking, heat the remaining olive oil in a large skillet and saute the onion and garlic until soft, about 5 minutes.
  • Add the ground beef and spices, cooking and breaking up with a spoon until the meat is cooked through and browned.
  • Add the cooked rice, beans, corn and half of the cheese. Stir well, then divide evenly between the roasted poblano pepper halves. Sprinkle with the remaining cheese.
  • Bake for 10 minutes until heated all the way through and the cheese is melted on top. Sprinkle with chopped cilantro and serve.

Rajas Poblanas (Roasted Poblano Strips in Cream Sauce), is a traditional Mexican recipe made by roasting poblano peppers, slicing them into "rajas", or strips, then simmering them with a creamy cheese sauce. They are hugely flavorful and sure to be your new favorite. Here is how I make them.

4 large poblano peppers
2 tablespoons butter
½ yellow onion (sliced)
½ cup Mexican crema (or use sour cream)
5 ounces melty Mexican style cheese (shredded (about 2 cups - I used Mexican manchego))
1 teaspoon chili powder (I used paprika, though ancho powder would be great here)
½ teaspoon Mexican oregano
Salt and pepper to taste (I used a few light grinds)

Steps:

  • Roast the poblano peppers over your stove top flame until, rotating often, until the skins char and blister up, about 10 minutes. Alternatively, you can bake them in the oven until the skins blacken and blister, about 15 minutes. See the information above on how to roast poblano peppers. Cool and set the peppers into a plastic bag to steam. This will help loosen the skins. Most times I can just peel the skin right off without steaming.
  • Peel the charred skin from the roasted poblano peppers and slice them into strips about ¾ inch thick.
  • Heat a large pan to medium heat and melt the butter.
  • Add the onion and cook about 5 minutes, until the onion strips are translucent and soften up.
  • Add the poblano pepper strips and cook another minute, stirring.
  • Swirl in the crema and stir to incorporate.
  • Stir in the melty cheese a bit at a time, constantly stirring, until it melts through.
  • Add the seasonings and stir. Reduce the heat and let the mixture warm for about a minute or so, stirring here and there.
  • Serve!

Very yummy! I grew up making these with my mom and sisters, and everyone I knew loved them! They're easy to make and incredibly tempting! Add chicken or cilantro if you like. I suggest pairing it with easy-to-make boxed Mexican rice.

cooking spray
2 (16 ounce) cans refried beans
2 cups shredded Mexican cheese blend, divided
½ cup chopped onion
12 small corn tortillas
2 (10 ounce) cans red enchilada sauce

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Spray a 9x13-inch casserole dish with cooking spray.
  • Mix refried beans, 1 1/2 cup Mexican cheese blend, and onion in a microwave-safe bowl; heat in microwave until cheese is melted, about 1 minute.
  • Stack tortillas, 3 at a time, on a microwave-safe plate; heat in microwave until warmed, about 30 seconds. Repeat with remaining tortillas.
  • Pour enough enchilada sauce onto a small plate to cover. Quickly dip both sides of each tortilla in enchilada sauce. Spoon bean filling down the middle of each dipped tortilla and wrap tortilla around filling. Arrange filled tortillas in the prepared baking dish. Pour remaining enchilada sauce over filled tortillas and sprinkle remaining cheese over sauce layer. Cover dish with aluminum foil.
  • Bake in the preheated oven until sauce is bubbling and cheese is melted, 35 and 40 minutes.

1 large onion, chopped
1 medium green pepper, chopped
2 tablespoons chicken or vegetable broth
2 cans (15 ounces each ) black beans, rinsed and drained, divided
1-1/2 cups picante sauce, divided
12 flour tortillas (6 inches)
2 medium tomatoes, chopped
1/2 cup shredded cheddar cheese
1/2 cup shredded part-skim mozzarella cheese
3 cups shredded lettuce
Sour cream

Steps:

  • In a nonstick skillet, cook and stir onion and green pepper in broth for 2-3 minutes or until tender. Mash one can of black beans. Add to the skillet with 3/4 cup of picante sauce and remaining beans; heat through., Spoon 1/4 cup mixture down the center of each tortilla. Roll up and place, seam side down, in a 13-in. x 9-in. baking dish coated with cooking spray. Combine tomatoes and remaining picante sauce; spoon over enchiladas., Cover and bake at 350° for 15 minutes. Uncover; sprinkle with cheeses. Bake 5 minutes longer. To serve, place 1/2 cup lettuce on each place and top with two enchiladas. Serve with sour cream.

  • You'll find the easy instructions for roasting them on my previous article. Or you can also char them under the broiler setting in your oven. Once you’ve charred the Poblanos, place on a plate and cover with plastic wrap and allow to sit for 10 minutes or until you can handle them without burning your fingers.
  • Place all of the ingredients except the salt and cilantro into a pot. Pour in enough water to cover the vegetables. Simmer until everything is soft. Reserve 1/2 cup of the broth, drain the rest and allow to cool slightly. Place in blender then add the salt and cilantro and pour in the 1/2 cup of broth. Blend until smooth. Taste and adjust salt if needed.
  • Next heat the oil and sauté the onion until soft. Then add in the poblano strips, and cook for , garlic and salt. Lastly add the pulled apart Oaxaca cheese and mix into the pan. Cook 5 minutes before adding the garlic and cooking another 2 minutes. Then add the cheese and cook just until it begins to melt. Turn off heat and keep warm.
  • In a frying pan heat about 1/4 cup of vegetable oil. Line a dish with paper towels and warm the corn tortillas in the microwave just for a few seconds. All you want is them to be pliable.
