Number Of Ingredients 16

6 green, red or yellow bell peppers, or a combination
1 tablespoon olive oil, plus additional for drizzling tops of peppers
1 onion, minced
2 large garlic cloves, minced or to taste
1 teaspoon hot Madras curry powder, or to taste
1 teaspoon ground ginger
3 cups cooked long grain rice, preferably basmati
1 pound ground veal
10-ounce package frozen peas, cooked according to package directions

Add the garlic, curry powder and ginger and cook, stirring 2 minutes more. Transfer mixture to a large bowl. Transfer peppers to a serving platter and sprinkle with lemon juice or serve with lemon wedges.

SPANISH INSPIRED STUFFED PEPPERS

Spanish Inspired Stuffed Peppers image

I developed this recipe because over the past year I have developed a love affair with chorizo and goat cheese. I think they work so well together and have used one or both of them in everything from salads to egg dishes. This is the recipe I am most proud of!

Provided by irishmom1979

Categories     Meat

Time 1h15m

Yield 4 serving(s)

Number Of Ingredients 13

4 bell peppers
1 cup corn
2 cups cooked white rice (not instant)
1 lb chorizo sausage, browned
8 ounces tomato sauce
1 diced onion
1 teaspoon cumin
1 teaspoon paprika
1/2 teaspoon red pepper flakes
1 tablespoon butter
1 tablespoon flour
1 cup milk
8 ounces goat cheese

Steps:

  • Preheat oven to 350.
  • Cut peppers in half and scoop out the insides. Place in a 13x9 baking pan. Brown chorizo and onions together. Then add the corn, rice, tomato sauce, cumin, paprika and pepper flakes. Stuff peppers.
  • Bake them for 45 minutes in oven.
  • While the peppers are baking, make the goat cheese cream sauce. Melt butter in a saucepan on medium heat. Add flour and cook until a paste is formed. Add milk, lower heat to low. Cook until it begins to thicken. Add goat cheese and continue cooking until thickens.
  • Place the peppers on a plate and spoon the cheese sauce on top and enjoy!

Slow roast red peppers filled with chorizo, baby tomatoes, lots of garlic and a sweet sherry vinegar glaze

Provided by Sarah Cook

Categories     Main course, Side dish

Time 1h20m

Yield Serves 8 as a starter, or 4 as a lunch or light supper

Number Of Ingredients 9

4 red peppers
150g pack cherry or baby plum tomato (we use a mixture for their colour)
½ ciabatta loaf, or similar, cut into 2.5cm chunks
3 fat garlic cloves , thinly sliced
140g chorizo , cut into chunky slices
4 tbsp sherry vinegar
4 tbsp good-quality olive oil
pinch of caster or granulated sugar
parsley (optional) and more crusty bread, to serve

Steps:

  • Heat oven to 220C/200C fan/gas 7. Halve the peppers through the stalk, then cut out and throw away the seeds. Sit the peppers snugly, cut-side up, in a casserole dish, or two if needed. Halve any larger tomatoes, then divide them, the bread chunks, garlic and chorizo between the dishes.
  • Drizzle over the vinegar, then the olive oil, and season with pinches of sugar, sea salt and ground black pepper. Bake for 30 mins, covered, until the peppers are tender and collapsing a little. Remove, uncover and cook for a further 30 mins. Leave the peppers to cool a little, then scatter with parsley, if you like, and spoon onto plates, scooping out any extra juices. Serve with crusty bread for mopping up the juices.

MEXICAN-STYLE CHICKEN-STUFFED PEPPERS

Mexican-Style Chicken-Stuffed Peppers image

This is a delicious chicken-stuffed peppers dish that I made up myself from scratch and my family and I love it. It is simple to make and any guest will love it.

Provided by Vonjaguar

Categories     Stuffed Bell Peppers

Time 1h40m

Yield 4

Number Of Ingredients 17

1 tablespoon butter
1 tablespoon vegetable oil
1 medium onion, chopped
3 (5 ounce) skinless, boneless chicken breasts, cut into bite-sized pieces
¼ cup water
3 tablespoons chili powder
4 cloves garlic, chopped
2 teaspoons salt
1 pinch ground cumin, or to taste
1 pinch crushed red pepper, or to taste
1 cup cooked rice
½ cup black beans, rinsed and drained
4 large green bell peppers, halved lengthwise and seeded
1 ½ (28 ounce) cans crushed tomatoes
1 (8 ounce) package shredded Mexican cheese blend
1 medium avocado, sliced, or to taste
¼ cup sour cream, or to taste

Steps:

  • Preheat the oven to 385 degrees F (200 degrees C).
  • Heat butter and oil in a frying pan over medium-high heat. Saute onion in the hot pan until soft, about 5 minutes. Add chicken; cook and stir until browned and no longer pink in the center, 7 to 10 minutes. Reduce heat to medium, and add water and chili powder. Stir in garlic, salt, cumin, and red pepper; let cook for 5 minutes. Add rice and black beans.
  • Transfer chicken mixture to a bowl. Pour most of the crushed tomatoes into a large baking pan so it is 1 inch deep. Stuff the chicken mixture into the bell pepper halves until slightly overfilled and place open-side up in the tomatoes. Pour remaining crushed tomatoes over the peppers so they are just covered. Sprinkle with Mexican cheese, and cover the pan.
  • Bake in the preheated oven until peppers are soft, about 50 minutes. Serve hot with avocado and sour cream to garnish.

STUFFED MEXICAN PEPPERS

Stuffed Mexican Peppers image

This is a recipe I came up with 20 years ago that has recently won me the grand prize in our paper's holiday recipe contest. It is my family's favorite meal. Serve with tortilla chips on the side.

Provided by Jasgirl

Categories     World Cuisine Recipes     Latin American     Mexican

Time 1h15m

Yield 6

Number Of Ingredients 11

1 pound ground beef
1 (1 ounce) package taco seasoning mix
¾ cup water
2 teaspoons chili powder
½ cup cooked rice
¼ teaspoon salt
¼ teaspoon garlic salt
⅛ teaspoon ground black pepper
2 (8 ounce) cans tomato sauce, divided
3 large red bell peppers
6 (1 inch) cubes Colby-Jack cheese

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13-inch baking dish.
  • Place the ground beef into a skillet over medium heat, and brown the meat, breaking it apart into crumbles as it cooks, about 8 minutes. Drain excess fat. Stir in the taco seasoning, water, chili powder, cooked rice, salt, garlic salt, black pepper, and 1 can of tomato sauce; mix until thoroughly combined. Bring to a boil, reduce heat to low, and simmer 20 minutes.
  • Meanwhile, cut the bell peppers in half lengthwise, and remove stems, membranes, cores, and seeds. Place a steamer insert into a large saucepan, and fill with water to just below the bottom of the steamer. Cover, and bring the water to a boil over high heat. Place the peppers into the steamer insert, cover the pan, and steam until just tender, 3 to 5 minutes.
  • Place the steamed peppers into the prepared baking dish, and fill lightly with the meat filling. Press 1 cube of Colby-Jack cheese into the center of the filling in each pepper, and spoon the remaining can of tomato sauce over the peppers. Cover the dish with aluminum foil.
  • Bake in the preheated oven until the peppers are tender and the filling is hot, 25 to 30 minutes.

  • *If you can't get the Goya seasoning, a fairly decent substitute would be a pinch of white pepper, 1 tsp salt & 1 tsp garlic powder.
  • Cut peppers in half thru stem. Remove seeds and white pulp. Reserve half the amount of cut peppers for filling. Dice enough of the remaining pepper halves to make 1/2 cup of diced peppers.
  • Heat the olive oil in a heavy skillet over medium-high heat. Add the onion and the diced peppers. Saute until onion is translucent; about 5-7 minutes, being careful not to let this burn. Add onion mixture to cooked rice. Also add the salsa, seasonings and the shredded cheese. Set aside.
  • Preheat grill to high heat. Meanwhile, slice sausage into 1/8-1/4-inch slices. Place grill wok or grill pan (these have holes in them--they look like baking sheets with holes. Generally used for grilling small food such as scallops, shrimp and veggies. I use a Technique grill pan) on the grill grate.
