A slice of this cheesy spring onion galette is the perfect light summer lunch. Pair with a green salad for a simple, seasonal family meal

- Heat the oven to 180C/160C fan/gas 4. Roll the pastry on a lightly floured work surface to a 30 x 30cm square and carefully move onto a baking tray lined with baking parchment.
- Mix the crème fraîche, egg, cheese and lemon zest in a bowl with a squeeze of lemon juice, garlic, thyme leaves, black pepper and a pinch of salt.
- Spoon onto the middle of the pastry and smooth into an even 20cm circle. Lay over the spring onions and drizzle with a little oil.
- Cut the pastry rim every 10cm, then fold over each pastry flap, slightly overlapping them to create a rim that seals in some of the crème fraîche mixture and spring onions. Sprinkle liberally with more cheese, scattering over the pastry too. Bake for 35 mins or until the pastry is golden and cooked through. Serve warm or at room temperature, cut into wedges, with a green salad alongside.

- Preheat oven to 400 degrees F (200 degrees C). Line a baking sheet with parchment paper.
- Whisk self-rising flour and baking soda together in a mixing bowl. Add cold butter and cut it into flour with a pastry blender until texture resembles coarse crumbs, 5 to 7 minutes. Make a well in the center of the flour mixture and pour in the buttermilk. Stir with a fork just until mixture starts to come together to form a shaggy dough.
- Transfer dough to a floured work surface. Press into a roughly shaped rectangle. Fold into thirds using a bench scraper. Press again into a rectangle. Flour surface if the dough seems sticky. Roll dough with a rolling pin to 1/2-inch thickness. Sprinkle with half of the shredded cheese and half of the green onions. Fold dough into thirds. Dust with flour, if necessary, and roll out again to about 1/2-inch thickness. Top with remaining cheese and green onions. Fold into thirds and roll out again to about 1/2 inch thickness. Cut biscuits with a 2- or 3-inch biscuit cutter.
- Transfer biscuits to prepared baking sheet. Brush lightly with buttermilk. Sprinkle tops with about a teaspoon of grated cheese.
- Bake in preheated oven until cooked through and golden brown, about 20 minutes. Transfer to a rack to cool.

- You might be tempted to use pre-made pie crust that you can purchase at the grocery store for this amazing galette. However, you really should go the extra step and make this simple crust. Part of the reason is that the food processor does most of the work. The other reason is that the crust is delicately flavored and amazingly flaky.For starters, I added the flour and salt to my food processor, fitted with a steel blade, and pulsed it 5 or 6 times to combine everything. Then I added the cold butter which I had cut into small pieces and pulsed the food processor 7 or 8 times until the mixture resembled coarse meal.
- Finally, I added the cold water to the food processor and pulsed it 7 or 8 times, until the dough came together in my hand.
- I turned the dough out onto a floured surface and formed it into a 6-inch disk that was about 1/2-inch thick. Then, I tightly wrapped the dough in plastic wrap and refrigerated it for about 30 minutes.
- Using my mandoline, I sliced the tomato and onion into very thin slices. For my mandoline, this meant 3.5 mm slices. I could have used a sharp knife, but I wanted the tomato and onion slices to be the same thickness so that they would cook evenly.A major key to ensuring the galette was not soggy was removing excess moisture from both the tomato and onion slices. To do this, I placed the tomato and onion slices in a single layer on a doubled piece of paper towels. Then, I sprinkled both with some salt to help draw out the moisture.

- To make the filling, put the broccoli and spring onions in a pan, cover with boiling water and simmer for 2-3 minutes until nearly cooked. Drain and run under cold water until cool, then pat dry and put in a mixing bowl. Drizzle with the balsamic vinegar, toss to coat and season well.
- Roll out the pastry on a lightly floured surface to the thickness of a £1 coin, then, using an upturned saucer as a guide, cut out 4 rough 15-17cm discs. You’ll probably need to re-roll the trimmings. Put 2 spoons of cheese/ricotta in the centre of each circle and spread a little. - Heat the oven to 200°C/180°C fan/ gas 6. Drizzle the chilled tarts with olive oil, then bake in the oven for 25 minutes or until the pastry is crisp and golden. If the vegetables start to blacken, cover with small discs of foil. Serve the galettes warm or leave to cool to room temperature.

Remove remaining plastic wrap.
- To prepare filling, thinly slice white parts of onions, reserving green tops. Heat a large nonstick skillet over medium-high heat. Coat pan with cooking spray. Add sliced onions to pan; sauté 15 minutes or until golden. Add mushrooms to pan; cook 5 minutes or until moisture evaporates. Remove from heat. Slice green tops of onions. Add sliced tops, 1/4 teaspoon salt, and pepper to pan; stir to combine. Spread onion mixture evenly over dough, leaving a 2-inch border; sprinkle cheese evenly over onion mixture. Fold edges of dough toward center, pressing gently to seal (dough will only partially cover onion mixture). Place pan on bottom rack in oven; bake at 400° for 25 minutes or until browned.
