BEEF STEW WITH CARAMELIZED ONIONS AND AMBER LAGER

- In a large, heavy pot, warm the oil over high heat until hot but not smoking. Working in batches, brown the meat well on all sides, 5 to 7 minutes. Adjust the heat as necessary to keep the meat from scorching. Transfer the browned meat to a plate and repeat until all the meat is browned.
- Add the onions and butter to the pot and stir over high heat until the onions start to soften, about 5 minutes. Reduce the heat to medium and sprinkle in the sugar. Continue to cook the onions, stirring occasionally, until golden brown, about 15 minutes. Add the flour, thyme and carrots and raise the heat to high. Stir for 1 minute, then pour in the lager or ale, letting it come to a vigorous boil. Stir in the broth and tomato paste and return to a boil.
- Return the meat and any accumulated juices on the plate to the pot, let the liquid come just to a boil, then reduce the heat to low, cover, and simmer until the meat is tender when pierced and the sauce is slightly thickened, 1 1/2 to 2 hours. Season to taste with salt and pepper. Serve on warmed individual plates.
CHEF JOHN'S CORNED BEEF AND CABBAGE
It's almost St. Patrick's Day, and for many that means boiling up a nice authentic Irish dinner of corned beef and cabbage. The original Irish recipe actually used a type of lean bacon, made with a cut of pork similar to Canadian bacon. Corned beef came into the picture as a lower-cost substitution, to replace the more expensive and harder to find cut.

- Combine corned beef and spice packet contents, water, onion, carrots, celery, and salt together in a large pot or Dutch oven; bring to a simmer, skimming off any foam that rises to the surface.
- Cover the pot, reduce heat to low, and simmer until meat is almost fork-tender, about 3 hours. Add potatoes and simmer, uncovered, until potatoes are almost tender, about 30 minutes more.
- Place cabbage pieces on top of and around meat, cover the pot, and simmer until cabbage is tender, 20 to 30 minutes more.
- Remove meat to a cutting board and let rest 10 to 15 minutes. Cut across the grain and serve in a bowl; ladle vegetables and broth over the top.

- In a shallow dish, combine the first 9 ingredients; add beef and turn to coat. Cover and refrigerate for at least 2 hours or overnight, turning occasionally. , Drain and discard marinade. Thread beef onto six metal or soaked wooden skewers. BEEF WITH MUSHROOMS AND CAPERS

- Dry the pieces of beef and dust them lightly with flour. Heat one tablespoon of the butter and one tablespoon oil in a heavy three-quart casserole. Brown the meat over medium-high heat without crowding. Add a little more oil if necessary. Remove the beef from the casserole and lower the heat.
- Saute the onion in the casserole until tender. Add the garlic and saute another minute. Stir in the stock and vermouth, scraping the bottom of the casserole. Return the beef and any juices it might have released to the casserole. Add the thyme and rosemary. Bring to a simmer, season to taste with salt and pepper and cover. Adjust heat so the stew simmers gently. Simmer for 1 1/2 hours.
- Heat the remaining tablespoon of butter and 1 tablespoon of oil in a skillet and saute the mushrooms quickly over very high heat until they are lightly browned. Drain them and add them to the casserole. Continue cooking the stew for another 15 minutes or so, until the beef is tender. If you are making this stew in advance, complete it up untll this point, then finish step four just before serving.
- Combine the cream and mustard. Stir a little of the hot sauce from the stew into this mixture, then add the cream mixture back to the casserole. Add the capers, recheck seasonings, bring the sauce to a simmer once again and then serve.

CHEF FLOWER'S AMBROSIAL BEEF ON A BED OF ADORNED TRIMMINGS
Ambrosial Beef On Bed Of Mash Potatoes, Spinach And Pancetta, served with a Red Wine Sauce. This is a perfect main meal for every day consumption, special romantic dinner for two or for Valentines Day. Serving Size can change for a larger party. I chose to use filet of beef but you could use any tenderloin section of the beef. It would need a thick cut of about two inches/five cms thick and weights about 8.8 ounce /250 grams each. Made for RSC #11 Contest.

- Peel potatoes then cut them in quarters. Place them in a saucepan and cover the potatoes with water. Boil for about 15/20 minutes or until soft.
- Once potatoes are ready, drain them and place them in a mixing bowl, using a potato masher utensil, mash potatoes, then add milk slowly, add butter, cheese and white pepper, mash until potato is still thick but slightly creamy. Set aside until later.
- Sauce: In a separate bowl add red wine, stock and flour, mix until flour has mixed into the liquid and set aside. Melt butter in a saucepan, add shallots and cook until transparent. Add wine, stock and flour mixture, bring to boil and add raspberry preserves and black pepper, mix well. Reduce heat and simmer for 20 minutes or when the sauce has reduced three times it volume, don't forget to mix occasionally.
- Heat a large griddle pan or frying pan. Rub olive oil on to the beef fillet, then sprinkle salt and pepper and cook until charred and done to your liking.
- With about three minutes for the beef to be completed, cook pancetta. To do this add a little olive oil spray to the pan (either the same pan as beef or different pan). Cook for about a minute and half each side or until slightly crunchy.
- With about two minutes for beef to be cooked, cook spinach. First add some butter to the pan (either the same pan the beef is cooking or you could use another pan), once butter has melted add shallots until transparent but not brown, add baby spinach and cayenne pepper, just allow the spinach to slightly wilt.
- Once everything has cooked, start serving. Serve half of the potatoes in each plate, make sure it is in the centre of the plate. Serve half each of the baby spinach on top of the potato. Then serve two slices each of pancetta on top of the spinach, serve beef on top of the pancetta. Using a spoon serve red wine sauce, either on top of the beef or around the mash potato.
