1 pound mixed field greens
1 cup dried cranberries
1 cup walnut pieces
One 22-ounce can mandarin oranges, drained and chilled
1 1/2 cups grape tomatoes, halved
1 1/2 cups crumbled feta cheese
1 cup fresh raspberries
1/2 cup apple cider vinegar
1/2 cup aged balsamic vinegar
2 teaspoons sugar
1 1/2 tablespoons Dijon mustard
1/2 cup extra-virgin olive oil

Steps:

  • For the salad: Place the salad greens in a large bowl. Mix in the cranberries, walnuts, mandarin oranges, grape tomatoes and feta.
  • For the vinaigrette: Combine the raspberries, vinegars, sugar and mustard in a blender until smooth. Slowly stream in the oil until combined.
  • Toss the salad with the vinaigrette before serving.

1 3/4 cups red raspberries (fresh or frozen, if you use frozen be sure they are thawed)
1 3/4 cups extra virgin olive oil or 3/4 cup salad oil
4 tablespoons lemon juice
6 tablespoons dekuypers raspberry liqueur
3 garlic cloves, minced
2 tablespoons dry mustard (optional)
8 tablespoons honey
1/4 teaspoon salt
1/4 cup raspberry vinegar or 1/4 cup red wine vinegar
1/8 teaspoon white pepper
1/2 cup superfine sugar
2 cups lettuce leaves
2 cups radicchio
2 cups red leaf lettuce
2 cups romaine lettuce
1 1/2 cups mandarin orange sections
1 large red onion (Sliced)
3 lbs cherry tomatoes

Steps:

  • In a blender or food processor, combine red raspberries, oil, lemon juice, dry mustard, honey, salt, sugar, pepper, garlic, and apple cider vinegar and liquor. Cover and blend until smooth. Use a sieve to strain dressing; discard seeds, Return to blender and stream in EV olive or salad oil and blend till smooth, adjust seasonings. Cover and chill dressing until serving time. Reserve any remaining vinaigrette for another use.
  • In a bowl combine leaf lettuce, radicchio, Red leaf lettuce, Romaine lettuce, and sliced red onions. Toss lightly to mix. Cover and chill up to 2 hours, add tomatoes and Garnish with Mandarin Orange slices and Chopped Pecans.

I came up with this salad one day and loved it! Now I bring this salad to dinner parties and it's always a huge hit. The two different vinaigrettes mixed together are a perfect combination of sweet, tart and tangy. For dinner parties with people I don't know well I usually leave the almonds and dressing on the side in case anyone has food allergies; only once has anyone passed on the almonds and dressing. This salad is also great topped with grilled chicken to make the salad a complete dinner.

2 1/2 cups lettuce (preferably a spring mix)
1/3 cup cucumber, sliced
1/2 cup cherry tomatoes, halved (or grape tomatoes)
1/4 cup red onion, sliced very thin
1/4 cup grapes, halved (or berries will work too)
3 tablespoons almonds, slivered
1/3 cup balsamic vinaigrette (or Red Wine Vinaigrette)
1/3 cup raspberry vinaigrette dressing (Ken's Steakhouse makes a good one)
1/4 teaspoon black pepper, freshly ground
parmesan cheese or gorgonzola

Steps:

  • In a medium sized bowl mix the two vinegarettes and black pepper together, stir until well blended. Set aside.
  • In a large bowl toss lettuce, cuccumbers, onions, grapes, tomatoes and almonds.
  • Add to veggies the desired amount of dressing, cheese, and more almonds. Enjoy!

10 ounces seedless raspberry jam (1 jar)
1 cup seasoned rice vinegar

Steps:

  • Toss baby salad greens, tomatoes, cheese, and pecans together and set aside.
  • Blend the olive oil, jam, and rice vinegar together (either in a blender or food processor) until completely combined.
  • Pour desired amount over the salad and serve while it's fresh. (I always have leftover dressing that I store in the fridge and use throughout the week).
