1 fully cooked smoked bone-in ham (10 to 12 lb)
1 3/4 cups Progresso™ reduced-sodium chicken broth (from 32-oz carton)
2 jars (12 oz each) cherry preserves (2 1/4 cups)
3/4 cup brandy
1/4 cup cider vinegar
3 tablespoons coarse-grained mustard
3 tablespoons cane syrup
1 tablespoon freshly ground pepper
Additional coarse-grained mustard
Fresh cherries and fresh sage sprigs, if desired

Steps:

  • Heat oven to 275°F. Line roasting pan with foil. Remove skin from ham; trim fat to 1/4-inch thickness. Make shallow cuts in fat 1 inch apart in diamond pattern. Place ham in roasting pan; add broth to pan.
  • In 2-quart saucepan, stir together preserves, brandy, vinegar, 3 tablespoons mustard, the syrup and pepper; heat to boiling over medium-high heat, stirring constantly. Reduce heat to medium-low; simmer 5 minutes, stirring constantly, until mixture is slightly reduced. Cover and refrigerate half of cherry mixture until serving time. Brush ham with half of the remaining cherry mixture.
  • Bake ham on lowest oven rack 4 hours to 4 hours 30 minutes or until meat thermometer reads 140°F, basting with remaining cherry mixture every 30 minutes. Let ham stand 15 minutes before slicing.
  • Serve ham with mustard and reserved cherry mixture. Garnish with cherries and sage.

One 12-ounce bag frozen cherries
1/2 cup sugar
2 strips lemon zest plus 1 tablespoon fresh lemon juice
2 ounces rum
1 ounce kirschwasser
Vanilla ice cream, for serving

Steps:

  • Put the cherries, sugar and lemon zest and juice in a large skillet and stir to combine. Cover and cook over medium heat until the sugar dissolves, about 4 minutes. Uncover and cook until the cherries get juicy, about 5 minutes more.
  • Mix together the rum and kirschwasser in a measuring cup, then add to the cherries. Ignite the alcohol with a long match and swirl the pan slightly until the flames subside, about 30 seconds. Serve the warm cherries and their juices over ice cream.

1/4 cup kirsch or cognac, warmed

  • In a small dish, combine a little cherry juice with sugar and cornstarch. In a skillet, heat juice from cherries over moderate heat. Add cornstarch mixture. When juice thickens, add cherries to warm through. Pour in warmed liqueur, then flame the pan to burn off alcohol. Remove cherries from heat. Scoop vanilla ice cream into large cocktail glasses or dessert dishes and spoon cherries down over ice cream.

1 (5 lb) canned ham
1 (16 ounce) can pitted dark sweet cherries
1/4 cup madeira wine
1 tablespoon sugar
1 tablespoon cornstarch
1 tablespoon lemon juice

Steps:

  • Put ham on a rack in a roasting pan. Bake at 325F 90-120 minutes until done (130-140F). Brush with sauce during final 30 minutes.
  • Meanwhile, make sauce. Drain cherry liquid into a sauce pan. Stir in Madeira, sugar cornstarch and lemon juice. Cook over medium heat, stirring until sauce boils and thickens slightly. Boil 1 minute. Remove from heat and brush on ham during final 30 minutes in oven. Into the remaining sauce, add the canned cherries. Reheat. Serve with ham.

½ cup white sugar
2 tablespoons cornstarch
¼ cup cold water
¼ cup orange juice
1 pound Bing or other dark, sweet cherries, rinsed and pitted (or use frozen pitted cherries)
½ teaspoon finely grated orange zest
¼ teaspoon cherry extract
¼ cup brandy
3 cups vanilla bean ice cream

Steps:

  • Whisk together the sugar and cornstarch in a wide saucepan. Stir in the water and orange juice; bring to a boil over medium-high heat, whisking until thickened. Stir in the cherries and orange zest, return to a boil, then reduce heat, and simmer for 10 minutes. While the cherries are cooking, spoon the ice cream into serving bowls.
  • Remove the cherries from the heat, and stir in the cherry extract. Pour in the brandy, and ignite with a long lighter. Gently shake the pan until the blue flame has extinguished itself. Spoon the cherries over the bowls of ice cream.

1 7/8 kg ham (gammon joint)
1 onion
1/2 teaspoon peppercorn
2 star anise
1 bay leaf
1/2 orange
4 tablespoons cherry jam
1/2 orange
1 garlic clove
1 tablespoon ginger
1 pinch chili

Steps:

  • Put the gammon joint in a large pan.
  • Cover with water.
  • Add the peeled and halved onion, peppercorns, star anise, bay leaf, and orange zest.
  • Bring to a boil; partially cover and simmer for 1 hour 45 minutes, or 30 minutes per 500g (1lb).
  • Meanwhile, put all the glaze ingredients in a bowl and whizz with a hand blender until you have a smooth texture.
  • Once the gammon is cooked; cool in the stock; remove.
  • Preheat the oven to gas 7, 200 degrees Celsius, fan 200 degrees Celsius. Using a sharp knife, strip the rind off the gammon joint and score the fat in a diamond pattern.
  • Put the joint in a roasting pan and spread the glaze over the fat.
  • Roast for 20 to 25 minutes, until sticky and golden.
  • Cool before carving into thick slices.
