This unique version of bruschetta uses cherries as a substitute for tomatoes, and instead of grilled bread, jicama!

Number Of Ingredients 7

2 cups pitted, chopped cherries
¼ cup chopped fresh basil
3 cloves garlic, minced (about 2 tablespoons)
2 tablespoons olive oil + more for brushing
½ teaspoon sea salt + more for sprinkling
1 teaspoon balsamic vinegar
1 jicama

Steps:

  • In a medium-sized bowl, combine cherries, basil, garlic, olive oil, salt and vinegar. Set aside to let the flavors meld.
  • Cut jicama into ¼-inch slices. Cut slices into shapes with a cookie cutter.
  • Heat grill to 450 degrees F. Brush each jicama slice on both sides with olive oil, and salt on each side as well.
  • Grill jicama 1 minute per side. Serve grilled jicama slices with cherry mixture spooned on top.

2 large onions, chopped
1 garlic clove, minced
4 teaspoons olive oil
1 tablespoon balsamic vinegar
1 teaspoon brown sugar
1/2 teaspoon garlic salt
2-1/2 cups pitted dark sweet cherries, coarsely chopped
16 slices French bread (1/2 inch thick), lightly toasted
1-1/2 cups shredded Swiss cheese
2 tablespoons minced fresh parsley

Steps:

  • In a large skillet, saute onions and garlic in oil until tender, about 6 minutes. Add the vinegar, brown sugar and garlic salt; reduce heat. Cook until onions are caramelized, 3-4 minutes. Stir in the cherries; cook until sauce is syrupy, about 5 minutes longer., Place toasted bread on a baking sheet; spoon cherry mixture evenly over toast. Sprinkle with cheese and parsley. Broil 3-4 in. from the heat until cheese is melted, 1-2 minutes.

3 tablespoons extra virgin olive oil, plus extra for sprinkling
1 teaspoon balsamic vinegar
salt & freshly ground black pepper
12 bocconcini, halved or 13 ounces mozzarella cheese, cubed
20 ripe cherry tomatoes, halved
1/4 cup torn fresh basil leaf, plus extra for serving
4 slices thick country bread, preferably sourdough
2 cloves garlic, peeled and halved
1 cup arugula leaf

Steps:

  • Whisk together three tablespoons of the olive oil and the balsamic vinegar in a bowl.
  • Season to taste with salt and pepper.
  • Stir in the cheese, tomatoes and basil leaves.
  • Set aside.
  • Grill the bread on both sides until lightly browned and crisp.
  • Rub one side of each slice of bread with the garlic, then sprinkle with olive oil.
  • Cover each slice of bread with several arugula leaves.
  • Spoon the tomato and cheese mixture over the arugula.
  • Sprinkle each bruschetta with additional olive oil, then top with basil leaves.
  • Serve immediately.
