Water, vegetable oil and egg called for on brownie mix box
1/2 cup semisweet chocolate chips
1/4 cup coarsely chopped maraschino cherries, drained, patted dry
1/2 cup semisweet chocolate chips
2 tablespoons coarsely chopped maraschino cherries, drained, patted dry

Steps:

  • Heat oven to 350°F (325°F for dark or nonstick pan). Grease bottom of 9-inch square pan with shortening or cooking spray.
  • Mix brownie batter as directed on box. Stir in 1/2 cup chocolate chips and 1/4 cup cherries. Spread in pan.
  • Bake 28 to 31 minutes or until toothpick inserted 2 inches from side of pan comes out almost clean. Sprinkle 1/4 cup of the chocolate chips over top of baked brownies; cool 30 minutes.
  • Sprinkle 2 tablespoons cherries over top. In small microwavable bowl, microwave remaining 1/4 cup chocolate chips uncovered on High 30 to 60 seconds, stirring halfway through, until chips can be stirred smooth. Spoon into resealable food-storage plastic bag; partially seal bag. Cut small tip from corner of bag; drizzle chocolate over top. Let stand about 2 hours or until chocolate is set. Cut into 4 rows by 4 rows. Store loosely covered in refrigerator.

130 g butter
150 g dark chocolate (70% cocoa solids)
55 g cherries
55 g roasted pecans
225 g caster sugar
55 g cocoa powder
75 g plain flour
¾ teaspoon baking powder
3 large free-range eggs
50 g milk or dark chocolate, optional

Steps:

  • Preheat the oven to 180ºC/gas 4. Line a 20cm square baking tin (or the equivalent) with greaseproof paper.
  • Melt the butter and dark chocolate in a bowl over a saucepan of simmering water (don't let the bowl touch the water).
  • Destone the cherries and roughly chop them along with the pecans. Stir into the melted chocolate, then take off the heat.
  • In another bowl, add the sugar, then sift in the cocoa powder, flour and baking powder. Add to the melted chocolate mixture and stir till well combined.
  • Beat the eggs and mix in. Roughly chop and stir through the milk or dark chocolate (if using).
  • Transfer the mixture to the tin, then bake in the oven for 15 to 20 minutes. You want them a little gooey in the middle.
  • Remove from the oven and cool in the tray, before cutting into squares.

1/3 cup (42g) dark cocoa powder
1/2 teaspoon baking powder
1/4 teaspoon salt
4 large eggs, (room temperature)
2 cups (400g) granulated sugar
3/4 cup (1 1/2 sticks or 170g) butter, (softened or room temperature)
2 teaspoons vanilla
1/2 cup seedless cherry preserves
6 ounces semisweet chocolate, (chopped)
1/2 cup heavy whipping cream

Steps:

  • Heat oven to 350°F. Prepare a 9x13 baking dish with non-stick spray or GOOP.
  • In a large bowl add flour, cocoa, baking powder, salt. Whisk together ingredients until they are fully incorporated.
  • In the bowl of a stand mixer or in a large bowl using a hand-held mixer, beat the eggs, sugar, butter, and vanilla until light and fluffy.
  • With the mixer off, add in the flour mixture. Turn mixer on low and mix until ingredients are well combined.
  • Pour brownies into a prepared baking dish and bake for 30-35 minutes at 350°F. Brownies are done when an inserted toothpick is removed with crumbs but not wet batter.
  • When brownies are slightly cooled (but still warm!), spread the cherry preserves over the top using an off-set spatula.
  • To make the chocolate ganache, bring the whipping cream to a boil and remove from heat.
  • With chocolate chips in a heat-safe bowl, pour cream over chips and slowly stir until all chips are melted.
  • Pour the chocolate ganache over the cherry preserves layer, covering as much of the preserves as possible.
  • Refrigerate for about an hour or until the chocolate is set.

Steps:

  • Preheat the oven to 180C/350F. Line an 8 x 8-inch deep pan or brownie pan with parchment paper and set aside.
  • In a small saucepan, add your coconut oil and unsweetened chocolate and on low heat, heat together. Stir consistently, until combined and glossy. Remove from the heat.

Steps:

  • Preheat oven to 325F.

200 g chopped chocolate (dark or milk or both)
250 g cherries (pitted) (cut into halves and quarters)

Steps:

  • Preheat the oven to 175 C (160 C fan). Butter the bottom and the sides of your 8" square baking tin and line it with baking paper, with plenty of overhang.
  • In a medium saucepan, combine the butter and 100g of sugar and heat over a medium heat, stirring slowly until the sugar has dissolved and the butter has melted completely, about 1-2 minutes. Set aside and allow to cool slightly.
  • In a large bowl, whisk together the eggs and the remaining 200g of sugar until light, smooth and fluffy, about 5 minutes. Pour the sugar and butter mixture into the sugar and egg mixture and whisk to combine.
  • In a medium bowl mix together flour, cocoa powder, baking powder and salt. Add the dry ingredients to the bowl with sugar, egg and butter mix and whisk to combine. Do not overmix, few streaks of flour remaining are just fine. Add the chocolate and cherries and fold them with spatula until they are evenly incorporated. Pour the batter into the prepared baking tin and smooth the top with spatula. You can also reserve a small handful of chopped chocolate and scatter it over the top of brownie batter.
  • Bake the brownies for 38- 40 minutes or until the top of the brownies is set and shiny, with few cracks in the surface. Toothpick inserted in the middle will not be clean and should have crumb on it.
  • Allow the brownies to cool and set in the tin for at least 1 hour or ideally, until completely cool (I always transfer mine to the fridge to set overnight). Use the overhang baking paper to lift the brownies from the tin, slice into 16 square pieces and enjoy!

These cherry brownies are super fudgy chocolate brownies. They are filled and topped with roasted cherries.

2 cups Cherries cut in half (washed, pitted)
Sprinkle of sugar
1 1/3 cup White granulated sugar
2 Large eggs
1 Egg yolk
5 TBSP Unsalted butter (melted)
1/3 cup Oil (canola or vegetable)
1 tsp Pure vanilla extract
3/4 cup All-purpose flour
3/4 cup Dutch process cocoa powder
1 TBSP Cornstarch
1 tsp Salt
1 cup Semi-sweet chocolate chips

Steps:

  • Preheat oven to 400°F. Line a baking sheet with parchment paper. Spread the cherries cut in half over parchment paper. Sprinkle with sugar. Bake for 10 minutes. Let it cool.
  • Turn the oven to 325°F. Spray an 8X8 pan with baking non-stick spray. Line the bottom and 2 sides with parchment paper. Spray again.
  • In a mixing bowl, sift the flour, cocoa powder, cornstarch and salt. Set aside. Using a mixer with a whisk attachment, beat the sugar, eggs, and egg yolk on high for 5 minutes.
  • While that is mixing, melt the butter so it slightly cools. Then, add the butter, oil, and vanilla and mix on low. Take off the mixer. Add the dry ingredients. Use a rubber spatula to gently fold in the dry ingredients. Be gentle so you don't knock out any air.
  • Separate the cherries in half and add half of the cherries to brownie batter. Add the chocolate chips and fold until combined. Pour brownie batter into pan and spread until smooth.
  • Bake for 40-50 minutes. The brownies are done baking when the edges are set, but the middle is slightly underdone. Top with extra chocolate chips. Let it cool in the pan completely.
  • Freeze the brownies for 15 minutes. Then, take out of the pan. Top with remaining cherries and cut and serve.

150 grams cherries
165 grams butter
165 grams dark chocolate
3 whole eggs
190 grams brown sugar
75 grams gluten free flour
20 grams cocoa powder (unsweetened)

Steps:

  • Begin by preheating the oven to 200°c (400°f) or 190°c (380°f) if fan assisted.
  • Using a small sharp knife, cut into the cherries and remove the pits. Chop these into small pieces. Keep a few halved cherries back for decoration.
  • In a small saucepan, add the butter and dark chocolate. Heat on a very low heat, stirring often until fully melted.
  • In a large mixing bowl, add the eggs and brown sugar. Whisk on medium/high for 3-4 minutes until pale and fluffy.
  • Carefully pour in the melted butter and chocolate and combine gently with a rubber spatula.
  • Sieve in the flour and cocoa powder. Mix gently with the rubber spatula until no lumps remain. Add in the chopped cherries and mix.
  • Pour into a greased and lined square 8 inch baking tin. Top with any remaining cherry halves.
  • Bake for 20 minutes. The top should have risen and cracked around the edges and should still be very wobbly.
  • Allow to cool fully before serving.
