EASY CHERRY CHEESECAKE BARS
Oatmeal cookie mix and pie filling make an easy dessert. Store, covered, in refrigerator.

Steps:
- Preheat the oven to 350 degrees F (175 degrees C). Coat bottom and sides of a 9x13-inch baking pan with cooking spray.
- Pour cookie mix into a large bowl. Cut in butter until mixture is crumbly and coarse. Reserve 1 1/2 cups crumb mixture; press remaining crumbs into the bottom of the prepared baking pan.
- Bake crust in the preheated oven for 8 minutes. Remove partially baked crust and leave oven on.
- Beat cream cheese, sugar, egg, flour, and vanilla extract together in a bowl using electric mixer on medium speed until smooth.
- Spread cream cheese mixture evenly over the partially baked crust. Spread cherry pie filling over cream cheese mixture. Sprinkle reserved crumbs on top.
- Bake in the preheated oven until light golden brown on top, about 35 minutes. Cool about 30 minutes. Refrigerate to chill, about 2 hours. Cut into 16 to 20 bars.

- Beat cream cheese, sugar, butter, and vanilla extract together in a bowl using an electric mixer. Beat in coconut and cherries.
- Drop batter by teaspoonfuls into graham cracker crumbs and form into balls; roll again and place on wax paper-lined baking sheets.
- Refrigerate for 2 hours before serving.

CHEESECAKE BALLS
Steps:
- Use a small cookie scoop or a rounded tablespoon to make balls out of the leftover cheesecake. After you scoop out the balls, roll them in your hands to make the rounds neater. Place on a parchment-lined baking sheet and insert a lollipop stick in the top of each. Squeeze the cheesecake around the base of each lollipop stick to ensure it will stay put. Pop into the freezer for 1 full hour.
- Set up a double boiler by bringing a medium saucepan of water to a simmer. Place a small bowl over the top, making sure the bottom doesn't touch the water. Add the candy melts to the bowl and stir until smooth and melted. Stir in the vegetable oil until smooth.
- Quickly dip the cheesecake balls into the melted chocolate and twirl to coat. You may need a knife to help cover the balls. Sprinkle the cheesecake balls before the chocolate dries with your choice of chopped candy, peanuts or toffee brickle and place back on the baking sheet. Refrigerate to set up, about 5 minutes.

- In a large bowl, combine the cake mix, 1-1/4 cups coffee, oil and eggs; beat on low speed for 30 seconds. Beat on medium for 2 minutes. , Pour batter into a greased and floured 13x9-in. baking pan. Bake at 350° for 30-35 minutes or until a toothpick inserted in the center comes out clean. Cool completely., Place cherries in a food processor; cover and process until coarsely chopped. - Dry the cherries on paper towel.
- Cream the butter and gradually mix in the icing sugar and orange juice.
- Add coconut and mix well.
- Note: this mixture will be soft.
- Roll a small portion of the coconut mixture evenly around each cherry and then roll in graham wafer crumbs.
- Place on wax paper and keep cool.

Steps:
- Prepare cake as per directions on box.
- Let cool completely.
- Prepare Cream Cheese Frosting.
- Cream butter and cream cheese together.
- Add in vanilla.
- Beat in icing sugar at low speed until combined.
- Beat mixture on high until smooth.
- Completely crumble cake in a large bowl.
- Add in frosting and mix together (I use my KitchenAid).
- Chill mixture in fridge or freezer for at least an hour.
- Melt chocolate over double boiler.
- Form cake/frosting mixture into 1-inch balls.
- Poke ball with a long lollipop stick and coat in the melted chocolate.
- Insert stick side into large styrofoam block or florist's oasis to let Cake Pop harden (you may need to place them back in the refrigerator).
