CHERRY ALMOND NANAIMO BARS

These go well on any goody platter. They're great for valentine's day parties 'cause they're pink! I also pair these with my Chocolate Mint Nanaimo Bars on Christmas platters. Green and red, what's more Christmasy? The filling is so good with chunks of cherries throughout YUM!Note: Don't let the long list intimidate you...these are really easy to make and time below includes chilling times.

1/2 cup margarine
1/4 cup sugar
1/3 cup cocoa
1 teaspoon vanilla
1 medium egg (beaten)
1 cup desiccated coconut
1 3/4 cups graham cracker crumbs
1/2 cup almonds (chopped)
1/4 cup margarine (softened)
1 tablespoon cherry juice (from maraschino cherries)
2 cups icing sugar
1/3 cup maraschino cherry (chopped)
2 ounces semisweet chocolate (2 squares)
1 tablespoon margarine

Steps:

  • Base:.
  • Melt margarine, sugar, cocoa, vanilla and egg in saucepan over low heat stirring constantly until it begins to thicken.
  • Remove from heat and stir in coconut, graham cracker crumbs, and chopped almonds.
  • Press into greased 9x9-inch pan.
  • Chill 1 hour.
  • Filling:.
  • Cream butter, cherry juice, and vanilla.
  • Gradually beat in, with hand mixer or by hand, icing sugar to make a smooth spreading consistency.
  • Stir in chopped cherries.
  • Spread evenly over chilled base.
  • Chill until firm.
  • Topping:.
  • Heat chocolate and butter over medium heat until smoothly melted. Drizzle over filling.
  • Chill.
  • Cut into 30 bars with sharp knife pressing down gently to break the drizzle first then drag to slice.

Easy Nanaimo Bars image

This is a popular cookie bar in Canada. This is however only one of many variations on this recipe.

½ cup butter
2 (1 ounce) envelopes instant hot chocolate mix
1 teaspoon vanilla extract
1 egg, beaten
2 cups graham cracker crumbs
1 cup flaked coconut
½ cup chopped walnuts
¼ cup cream cheese, softened
¼ cup milk, or as needed
2 tablespoons instant vanilla pudding mix
2 cups confectioners' sugar
4 (1 ounce) squares milk chocolate
1 tablespoon butter

Steps:

  • Grease a 9x9-inch square pan. Melt 1/2 cup butter in a saucepan over low heat, and stir in cocoa mix, vanilla extract, and egg. Whisk together until the mixture thickens, about 1 minute (do not boil); remove from heat and stir in graham cracker crumbs, 1 cup coconut, and walnuts. Mix well, and press into the bottom of the prepared pan. Chill the crust for about 1 hour.
  • Place the cream cheese into a mixing bowl, and beat with an electric mixer until smooth and fluffy. Beat in the milk, vanilla pudding mix, and confectioners' sugar to make a spreadable, creamy mixture. If mixture is too stiff to spread easily, add more milk, 1/2 teaspoon at a time. Spread the filling in an even layer over the crust, and return to refrigerator. Chill until firm, about 1 hour.
  • Melt milk chocolate and 1 tablespoon of butter in a saucepan over very low heat, stirring constantly until the mixture is smooth and well combined. Spread the topping evenly over the vanilla layer, and refrigerate about 1/2 hour, until the topping is firm but not hard. Cut into bars, then return to refrigerator to finish chilling, at least 1/2 hour more. Serve cold.

1/2 cup butter
1/4 cup sugar
1/3 cup cocoa
1 teaspoon vanilla
1 egg, beaten
1 cup coconut
1 3/4 cups graham cracker crumbs
1/2 cup chopped almonds
1/2 cup butter, softened
2 tablespoons cherry juice
1 tablespoon almond extract
2 cups icing sugar, sifted
1/3 cup chopped maraschino cherry
1/2 semi-sweet chocolate baking square
1 tablespoon butter

Steps:

  • Bottom Layer: Cook butter, sugar, cocoa, vanilla and beaten egg in a saucepan over low heat, stirring constantly, until mixture begins to thicken. Remove from heat and stir in coconut, graham crumbs and almonds. Pat firmly into 9 x 13 pan. Chill for at least 1 hour.
  • Filling: Cream butter, cherry juice and almond extract. Gradually beat in icing sugar to make a smooth spreading consistency. Stir in cherries. Spread over the first layer in the pan. Chill until firm.
  • Top Layer: Heat chocolate and butter, stirring constantly until smoothly melted. Drizzle chocolate over filling. Chill.

These no-bake, three layered snack bars start with a crumb base, followed by a layer of light custard buttercream, then topped with a shimmering layer of chocolate. Nanaimo Bars are one of Canada's favorite confections, named after the beautiful city of Nanaimo, B.C. It all began when Mabel Jenkins, a Nanaimo housewife entered the recipe in a magazine contest back in the 1950's. She won the contest with these tasty treats even made the town famous for them. There are six variations of filling here at the bottom of this recipe. Buddha got this recipe from a co-worker named Kindalee.

1/2 cup butter
1/4 cup sugar
5 tablespoons cocoa powder
1 egg, lightly beaten
1 teaspoon vanilla
1 1/2 cups graham cracker crumbs
1 cup shredded coconut
1/2 cup walnuts, chopped (or almonds or pecans)
1/3 cup butter
3 tablespoons custard powder, Bird's brand (or substitute vanilla jello pudding powder)
1/4 cup milk
3 cups icing sugar
8 ounces semisweet chocolate
2 tablespoons butter

Steps:

  • BASE: Melt butter in heavy saucepan. Stir in sugar and cocoa until smooth. Whisk egg with vanilla and stir into butter mixture. Remove from heat.
  • Stir in crumbs, coconut and nuts. Press evenly over bottom of greased 9" square pan. Chill until set, at least 20 minute.
  • FILLING: Beat butter with wooden spoon until light. Beat in custard powder and milk.Gradually beat in sugar. Spread over chilled base and let set in fridge.
  • TOPPING: Melt together chocolate and butter; stir until smooth. Spread in even layer over chilled filling.
  • Store in fridge until chocolate topping begins to harden. Score topping into 16 small bars (bites). Cut before totally solid, use a hot knife, wiping clean between cuts. Store in fridge or freeze for up to 2 months.
  • FILLING VARIATIONS:.
  • PEANUT BUTTER FILLING.-- 2 Tbsp Custard powder, 1/4 cup Milk, 2 Tbsp Butter; softened, 1/2 cup smooth peanut butter 2 cups confectioners sugar -sifted.
  • MINT FILLING -- 1/3 cup butter, 3 Tbsp custard powder, Bird's brand (or substitute jello pudding powder), 1/4 cup milk, 3 cups icing sugar, 1 teaspoons peppermint flavoring, 1-2 drops green food coloring as desired.
  • CAPPUCCINO FILLING -- 2 Tbsp milk, 3 Tbsp unsalted butter, 2 tsp instant coffee or espresso powder, 1/2 tsp vanilla, 2 cups confectioners sugar.
  • GRAND MARNIER FILLING -- 2 cups Icing Sugar, 1/4 cup Butter; softened, 1/4 cup Grand Marnier or orange -liqueur, 1 Tbsp Orange rind; coarsely grated.
  • BAILEY'S IRISH CREAM FILLING -- 1/3 cup butter, 3 Tbsp custard powder, Bird's brand (or substitute vanilla jello pudding powder), 1/4 cup Bailey's Irish Cream, 2-3 cups icing sugar.
  • CHERRY FILLING -- 1/4 cup Butter; softened, 1 tablespoons Cherry juice, 2 cups Icing sugar, 1/3 cup chopped Maraschino cherries, 1-2 drops of red food coloring.

  • Melt butter in small saucepan. Add sugar and cocoa powder, mix well. Add egg, stir well. Egg will cook and thicken.
  • Once thickened, remove from heat and pour into a larger bowl containing the last 3 bottom ingredients. Mix well and press firmly and evenly into the bottom of an ungreased 8 x 8 pan. Set aside.
  • Cream Butter. Add cherry syrup and pudding powder, mix until well combined. Add cherries, stirring until once again well combined.
