2 (15 ounce) cans black beans, rinsed and drained
2 (15 ounce) cans pinto beans, rinsed and drained
2 (15 ounce) cans white corn, rinsed and drained
1 (4 ounce) can chopped green chiles, undrained
1 jalapeno chile pepper, seeded and finely chopped
1 red bell pepper - cored, seeded and finely chopped
1 green bell pepper - cored, seeded and finely chopped
1 small red onion, finely chopped
1 bunch cilantro leaves, finely chopped
½ cup rice vinegar
½ cup olive oil
⅓ cup white sugar
½ teaspoon garlic powder

Steps:

  • Mix the black beans, pinto beans, white corn, green chiles, jalapeno pepper, red and green bell peppers, red onion, and cilantro together in a large bowl.
  • To make the dressing, stir the rice vinegar, olive oil, sugar, and garlic powder together in a pan. Bring to a boil, then remove from heat, and cool. Pour dressing over bean mixture, and toss to mix evenly.

3/4 cup apple cider vinegar
1/2 cup vegetable oil
1 tablespoon water
1/2 cup sugar
1 teaspoon kosher salt
1 teaspoon freshly ground pepper
One 15-ounce can black-eyed peas, rinsed and drained
One 15-ounce can black beans, rinsed and drained
One 15-ounce can corn, drained
1/2 cup finely chopped red onion
1 green bell pepper, finely chopped
1 red bell pepper, finely chopped
1/4 cup finely diced jalapeno (remove seeds for less heat)
Tortilla chips, for serving

Steps:

  • Combine the vinegar, oil, water, sugar, salt and pepper in a medium saucepan over medium-low heat. Whisk together and simmer for 3 minutes then remove from the heat. Set aside to cool.
  • Meanwhile, combine the black-eyed peas, black beans and corn in a large bowl. Add the onion, bell peppers and jalapeno, then pour in the dressing and stir until well combined.
  • Serve the Texas caviar immediately with tortilla chips or cover and refrigerate for up to 24 hours.

1 pint cherry tomatoes
1 16 oz can black beans, drained and rinsed well
1 16 oz can black eyed peas, drained and rinsed well
1 15 oz can corn, white or yellow, drained
½ cup red onion (finely chopped)
½ cup green bell pepper (chopped)
½ cup red bell pepper (chopped)
1 jalapeno pepper (cleaned, seeded and chopped - more or less pepper for preference)
½ cup cilantro (chopped)
Tortilla chips (serving)
Dressing:
1/2 cup cup olive oil
2 tablespoons red wine vinegar
2 tablespoons lime juice
1 ½ teaspoons ground cumin
1 teaspoon salt
¼ teaspoon pepper

Steps:

  • In a small bowl, whisk together ingredients for the dressing, set aside
  • In a large bowl, add drained beans, black eyed peas and corn
  • Cut vegetables and add to large bowl
  • Mix well
  • Pour dressing over mixture and mix until well combined
  • Cover with plastic wrap and chill for at least 30 minutes before serving
  • Serve with tortilla chips

I've seen other versions titled the same, but this one is by far my favorite. A fellow flight attendant shared it with me YEARS ago. I hate it I can't remember her name. It's quick and easy, and I always get requests for it. Depending on what you serve it with, it's a healthy, high fiber snack!

2 (16 ounce) cans black beans, drained and rinsed
1 (15 ounce) can Mexican-style corn, drained
1 bunch fresh cilantro, chopped
1 lime, juice of

Steps:

  • Rinse the black beans thoroughly to keep dip from looking "muddy".
  • Dump beans and corn into bowl.
  • Squeeze in the juice from the lime.
  • Add cilantro to taste.
  • Chill.
  • I think this dip is best served cold with Frito Scoops. You could also serve it with other chips, crackers, or tortillas, but I've seen people eat it with nothing but a spoon! It is best when made the day before, but it certainly doesn't have to be.

I first tried this dip/salsa at a work picnic. It was so good I had to have the recipe. A real hit with parties and large gatherings. Serve with Tostitos scoop chips for a hearty taste! The secret is in the marinade. Not a difficult recipe but time consuming due to chopping of veggies.

1 cup green pepper, chopped
6 -10 fresh jalapeno peppers, minced (to your taste)

2 16-ounce cans black-eyed peas
4 scallions, green parts only, minced
2 to 3 jalapeños, seeded and minced
1/4 cup chopped fresh cilantro
1/2 cup corn oil
1/4 cup fresh lime juice
1/4 cup apple cider vinegar
Salt and freshly ground black pepper to taste
Round tortilla chips

Steps:

  • Drain the peas well, rinse under running water and drain again. Transfer to a bowl. Add the scallions, jalapeños and cilantro and toss to mix. Whisk together the oil, lime juice and vinegar and pour over the beans. Toss to coat. Season with salt and pepper to taste.
  • Transfer to a large glass jar or airtight plastic container. Marinate the mixture for three to five days, turning the jar occasionally to mix the ingredients.
  • To serve, spoon the peas into a shallow glass bowl. Serve with chips for scooping.

Depending on where you're from, this simple dip is known as cowboy caviar or Texas caviar, and it's a favorite at tailgates and potlucks all over the South. Its creator, Helen Corbitt, a dietitian from New York, had never heard of black-eyed peas when she moved to Texas in 1931. The exact details are fuzzy, but at some point in her 40 years working in restaurants there, she combined black-eyed peas with a simple vinaigrette, and it was a big hit. The recipe has evolved over the years, and you can find a number of variations online. Some contain corn and black beans (as this one does), and others avocado. Some call for bottled Italian salad dressing, others homemade. No matter how you tweak it, it's always good with a pile of tortilla chips.
