4 cups cooked long grain rice
1 can (12 ounces) evaporated milk
1 cup 2% milk
1/3 cup sugar
1/4 cup water
3/4 cup dried cherries
3 tablespoons butter, softened
2 teaspoons vanilla extract
1/2 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg

Steps:

  • In a large bowl, combine the rice, evaporated milk, milk, sugar and water. Stir in the remaining ingredients. Transfer to a 3-qt. slow cooker coated with cooking spray., Cover and cook on low for 2-3 hours or until mixture is thickened. Stir lightly before serving. Serve warm or cold. Refrigerate leftovers.

1 1/2 cups whole milk
1 cup cooked long-grain rice
3 eggs, beaten
1/2 cup granulated sugar
1/4 teaspoon almond extract
1/4 teaspoon salt
1/4 cup dried cherries

Steps:

  • Use cooked leftover rice.
  • Use dried cherries, they can be a bit expensive so sometimes we use dried cranberries. But prefer cherries,.
  • Combine all the ingredients in a large buttered casserole dish that will fit into your slow crock pot.
  • Cover it tightly with buttered side down foil.
  • Place a rack in the bottom of cooker and add 1 cup of water to bottom of cooker.
  • Place covered bowl onto rack and place lid on slow cooker.
  • Cook 4 hours on low heat.
  • Remove casserole, and let stand at room temperature 15 minutes.
  • Serve with a topping of whipped cream and sliced toasted almonds.

1 cup shredded coconut, toasted (recommended: Baker's)
1 (14-ounce) can coconut milk
1 (14-ounce) can sweetened condensed milk
4 cups milk
4 eggs
2 teaspoons chopped ginger
1 1/2 cups jasmine rice
1/2 teaspoon salt
Fresh mint, for garnish
1 cup frozen cherries
1 (12-ounce) jar cherry preserves
1 lemon, zested

Steps:

  • For the coconut rice pudding: Preheat oven in to 350 degrees F Place the coconut in a thin layer on a baking sheet. Bake for 6 to 8 minutes, stirring frequently, until lightly browned. Spray 4-quart slow cooker with butter flavored cooking spray; set aside. In a bowl whisk together coconut milk, condensed milk, milk, eggs, and ginger. Stir in rice and toasted coconut. Pour into prepared slow cooker. Cover and cook on LOW for 3 to 4 hours. Serve in martini glasses or bowls, top with cherry sauce.
  • For the cherry sauce: In a small saucepot over medium heat combine all ingredients, mix until combined and heat to a simmer. Remove from heat and serve over rice pudding.

25g (1 oz) margarine or butter
1.2L (2 pt) milk
ground cinnamon, nutmeg or vanilla extract (optional)

Steps:

  • Use some of the butter to grease the bowl of the slow cooker.
  • add the milk, sugar and remaining butter and either ground cinnamon, nutmeg or vanilla extract.
  • Give the contents a stir and replace the lid
  • Turn the slow cooker onto high and cook for 4 hours or until the rice as absorbed the liquid Stirring halfway through.

It is very inexpensive to make, and it freezes well if you want to make a double batch. It is best served warm with a pinch of nutmeg or ground cloves. Add baked apples for an extra special treat.

2 tablespoons butter (or as needed)
1 cup short-grain rice (suc as arborio)
2 cups milk
1 (12 ounce) can evaporated milk
1 1/2 cups heavy cream
1/2 teaspoon sea salt
1/2 cup vanilla sugar (substitute granulated sugar)
1 teaspoon vanilla extract

Steps:

  • Grease the ceramic pot generously with butter making sure to coat the sides as well. Add rice, milk, evaporated milk, heavy cream, and sea salt; stir well. Cover and set temperature to "high" for 2 hours.
  • When time is up, add vanilla sugar and vanilla extract. Stir well and set the temperature on "Low" for 1 hour.
  • Let it cool a little before serving. If preferred cold, transfer to a bowl, let cool off for 20 minutes before transferring to the fridge for a few hours. Makes 5 cups.

3/4 cup uncooked regular long-grain rice
1/3 cup sugar
1/4 teaspoon salt
2 eggs, beaten
1 cup whipping (heavy) cream
1 teaspoon vanilla
1/2 cup sugar
1 tablespoon cornstarch
1/4 cup orange juice
1 1/2 cups frozen unsweetened tart red cherries (from 1-lb bag)
2 tablespoons brandy or orange juice

Steps:

  • In 2-quart saucepan, heat milk, rice, 1/3 cup sugar and the salt to boiling over medium-high heat. Reduce heat to medium-low. Simmer uncovered 40 to 45 minutes, stirring frequently, until rice is tender and mixture is thickened.
  • Stir a small amount of the hot rice mixture into eggs, then stir eggs back into mixture in saucepan. Continue cooking over medium heat about 3 minutes, stirring constantly, until heated through. Cool 45 minutes, stirring occasionally.
  • In chilled large serving bowl, beat whipping cream and vanilla with electric mixer on high speed until thickened. Fold in cooled rice mixture. Cover and refrigerate at least 3 hours until well chilled.
  • In 1-quart saucepan, mix 1/2 cup sugar and the cornstarch. Stir in orange juice and frozen cherries. Heat over medium-high heat, stirring frequently, until mixture boils and thickens slightly. Stir in brandy. Serve sauce warm or chilled with pudding.
