3 cup all-purpose flour
2 teaspoon baking soda
2 teaspoon ground cinnamon
1 teaspoon ground cloves
1 cup vegetable shortening
1 1/2 cup sugar
2 large eggs
1 cup cold black coffee
2 cup chopped apple
1 cup raisins

Steps:

  • Grease and flour a 13-by-9-inch baking pan. Preheat the oven to 350 degrees.
  • Mix together the flour, baking soda, and spices. In a separate large bowl using an electric mixer, cream together the shortening and sugar. Add the eggs and beat well. Mix in the flour mixture, alternating with the coffee, beginning and ending with flour mixture. Fold in the chopped apples and raisins. Pour into the greased pan. Bake 45-55 minutes. Cool cake completely on wire rack. Serves 8-10.

1/2 cup all-purpose flour
1/3 cup sugar
1 tablespoon baking powder
1/8 teaspoon fine sea salt
1/2 teaspoon pure vanilla extract
2 large eggs, lightly beaten
2 tablespoons vegetable oil
1/3 cup whole milk
4 baking apples (about 2 lbs. total), cored, peeled, and cut into wedges
1/3 cup sugar
1 large egg, lightly beaten
3 tablespoons unsalted butter, melted

Steps:

  • Preheat the oven to 400 degrees F.
  • Butter a 9-inch springform pan and set it aside.
  • In a large bowl, combine the flour, sugar, baking powder, and sea salt, and stir to blend. Add the vanilla extract, eggs, oil, and milk, and stir until well blended. Add the apples and stir to thoroughly coat them with the batter.
  • Spoon the mixture into the prepared cake pan. Place the pan in the center of the oven and bake until fairly firm and golden, about 25 minutes.
  • Meanwhile, prepare the topping: In a small bowl, combine the sugar, egg, and melted butter, and stir to blend. Set it aside.
  • Remove the cake from the oven and pour the topping mixture over it. Return the cake to the oven and bake until the top is a deep golden brown and the cake feels quite firm when pressed with a fingertip, about 10 minutes.
  • Transfer the cake pan to a rack and allow to cool for 10 minutes. Then run a knife around the sides of the pan, and release and remove the springform side, leaving the cake on the pan base. Serve at room temperature, cut into thin wedges.

3 cups flour
2 tsp. cinnamon
2 tsp. baking soda
1 tsp. ground cloves
3 medium apples, divided
1 cup butter or margarine
2 cups sugar
2 eggs
1 cup very strong cold coffee
1/2 cup chopped pecans
1/2 cup raisins

Steps:

  • Preheat over to 350 Grease 13x9" baking pan. In small bowl, combine flour, cinnamon, baking soda and cloves. Pare, core and chop 2 apples. In mixing bowl, with electric mixer at medium speed, cream butter and sugar until light and fluffy. Add eggs; beat until well-blended. Beat flour mixture alternately with coffee into creamed mixture. Stir chopped apple into batter with walnuts and raisins. Pour batter into pan. Bake 55-60 minutes or until toothpick inserted in center of cake comes out clean. Cook cake in pan on wire rack. Just before serving, chop remaining apple. Cut cake into 12 pieces. Top with sour cream ahnd apple chunks.
