Two Mexican pizzas

Number Of Ingredients 6

1 tbsp Olive oil (Lightly brush on tortilla)
1/2 Cup Shredded Cheese (Old Fort cheese works best (mixed))
Sliced Jalapenos
1 Corn Tortilla
1 lb Hamburger
1 Pouch Spicy Taco Seasoning (Any taco seasoning will do)

Steps:

  • Cook hamburger, add seasoning and set aside.Set oven on Broil, Put a rack on a lower setting. 2nd bottom rack. Brush tortilla with oil. Sprinkle with cheese, top with sliced Jalapenos and place in oven ob broil pan.Broil for 10 min or until golden and all cheese is melted.For Mexican Pizza add hamburger, black olives, and salsa or whatever toppings you desire.

This is my clone version of Chi-Chi's original Mexican Pizza, before they changed the recipe and went out of business, lol.

8 ounces ground beef
1/2 cup water
1/2 teaspoon ground cumin
1/2 teaspoon oregano
1/2 teaspoon salt
4 large flour tortillas
3 tablespoons vegetable oil (or use Pam spray)
2 tomatoes, diced
6 ounces black olives, chopped
3 -4 green onions, chopped
6 ounces green chilies, chopped, drained
2 cups cheddar cheese or 2 cups monterey jack cheese, shredded

Steps:

  • Preheat oven to 400.
  • Fry the ground beef with the water, the cumin, oregano and salt, stirring until the water has evaporated; drain excess grease; cool.
  • Rub each tortilla on each side with a bit of vegetable oil.
  • Place tortillas on a baking sheet and bake for 4 minutes.
  • Remove from oven, and top with the seasoned beef, veggies, then the cheese.
  • Bake for 10 minutes, or until the cheese is melted.

Mexican Pizzas are delicious corn tortillas topped with beans, beef and all the delicious taco toppings you can imagine! They can be cut into wedges and served as an appetizer or left whole and served as a main dish.

1 (16 ounce) can refried beans
1 pound ground beef
1 (1.25 ounce) package taco seasoning mix
1 tablespoon vegetable oil
4 (6 inch) corn tortillas
8 ounces shredded Cheddar cheese
8 tablespoons sour cream
2 roma (plum) tomatoes, chopped
2 green onion, chopped
1 (4 ounce) can diced green chiles, drained
½ avocado, diced
1 tablespoon black olives, sliced

Steps:

  • Heat the refried beans.
  • In a large skillet, brown the ground beef. Stir in the seasoning packet.
  • Preheat oven to 350 degrees F (175 degrees C).
  • Place a small amount of vegetable oil in a large skillet. Let the oil heat, then place one corn tortilla in the skillet. After 15 seconds, flip the tortilla over and let it fry another 15 seconds. Repeat this process with the remaining tortillas, letting them drain on paper towels once they have been heated. When the tortillas have drained, arrange them on a cookie sheet.
  • Spread a thin layer of beans on the tortillas, followed by a layer of beef, and cheese.
  • Bake the tortillas in the preheated oven for 20 to 30 minutes. Slice the tortillas into wedges and arrange them on plates or a serving platter and garnish them with the sour cream, tomatoes, green onions, chiles, avocado, and olives.

2 cups leftover thick chili
1/2 cup sliced ripe olives
1/4 cup chopped onion
3/4 cup shredded cheddar cheese
1/2 cup crushed corn chips
Avocado slices, shredded lettuce, chopped tomatoes and/or sour cream, optional

Steps:

  • Unroll crescent roll dough; press onto the bottom and up the sides of an ungreased 13-in. x 9-in. baking pan. Press seams and perforations to seal. Bake at 400° for 10 minutes. , In a large bowl, combine the chili, olives and onion. Spread over crust. Sprinkle with cheese and corn chips. , Bake 8-10 minutes longer or until bubbly. Garnish with avocado, lettuce, tomatoes and/or sour cream if desired.

This is the original Chi-Chi's Mexican Fried Ice Cream. You can serve this on the fried flour tortilla sprinkled with a cinnamon sugar mix as it was done in the later years or in a sherbet glass as it was in the early 80's. At one point we even offered these in chocolate and strawberry as well. Prep time is for the ice cream ball to harden.

Number Of Ingredients 8

1 (6 inch) flour tortillas
1/4 cup granulated sugar
4 teaspoons cinnamon
4 ounces French vanilla ice cream (by weight)
1/4 cup kellogg's corn flake crumbs
canned whipped cream
1 maraschino cherry
1 ounce honey

Steps:

  • Form 4 oz. of French vanilla into a ball.
  • Roll the ball of ice cream in the cinnamon sugar mixture until completely coated.
  • Roll in corn flake crumbs till coated.
  • Place in the freezer to harden.
  • Place the hardened ice cream ball in a fry basket and deep fry for 2 seconds at 350 degrees fahrenheit.
  • FOR THE SHERBET GLASS(the early years):.
  • Put a dollop of whip cream in the bottom of the glass.
  • Place the fried ice cream ball on top of the dollop.
  • Drizzle a small amount of honey over the top of the ice cream ball.
  • Place 8 whip cream rosettes around the ice cream ball and one on top.
  • Top with a maraschino cherry.
  • Enjoy!
  • FOR THE TORTILLA (the later years):.
  • Deep fry a tortilla flat until crispy.
  • Sprinkle with the remaining cinnamon sugar mixture.
  • Follow the instructions for the sherbet glass.
  • Enjoy!
