6⅓ oz (1 pack) or tortilla chips nacho chips
5 oz (1 piece) skinless chicken breast
2 cups divided salsa
2 cups or Pepper Jack cheese, grated and divided Monterey Jack cheese
2 cups grated and divided cheddar cheese
1 cup pickled, thinly sliced, and divided jalapeño peppers
¼ cup sliced green onions
¼ cup water
1 tbsp vegetable oil
2 tsp distilled white vinegar
1 tsp salt
1 tsp ground black pepper
¼ tsp liquid smoke
2 bruised garlic cloves
(from 1 lime) lime zest
(from 1 lime) lime juice
cooking spray

Steps:

  • Combine water, oil, vinegar, salt, pepper, liquid smoke, garlic, lime zest, and lime juice in a mixing bowl. Whisk until evenly incorporated.
  • Add the chicken, cover, and set aside in a chilled area. Allow to marinate for at least 3 hours, or best if overnight.
  • Preheat the grill or skillet and grease with cooking spray.
  • Grill the chicken for roughly 10 minutes or until fully cooked and charred on all sides. Set aside to rest briefly, then cut up the chicken into bite-sized pieces or shred.
  • Preheat the oven to 375 degrees F.
  • Place ½ of the nacho pack into a baking casserole of choice, then pour ½ of the salsa on top.
  • Next, sprinkle ½ the cheeses, followed by the jalapeño peppers. Repeat until there are 2 layers of chips, cheese, salsa, and peppers.
  • Bake for about 10 minutes, or until the cheese has melted and all ingredients have warmed up.
  • Once baked, sprinkle the chicken and green onions on top then serve!

1 (12 ounce) bag tortilla chips, low fat
2 lbs extra lean ground beef
1 large tomatoes, chopped 1/4 inch chunks
1 medium onion, chopped 1/4 inch chunks
1 (2 1/4 ounce) can sliced green olives
1 (2 1/4 ounce) can sliced black olives
1/2 cup coarsely chopped mushroom
0.5 (8 ounce) container light sour cream (more for the light hearty)
Trappey's jalapenos (the most important Ingredient, not only do they have heat but the best tasting jalapeno's I have eve)
1 (16 ounce) can fat-free refried beans
3 (1 ounce) packages Ortega taco seasoning
2 cups water
1 (1 ounce) can chopped green chili
1 medium onion, finely chopped (may omit)
1 (12 ounce) jar Ortega medium cheese sauce (warmed)
1/4 head medium chopped lettuce

Steps:

  • Brown the beef in large skillet and drain (in colander rinsing with hot water if possible to reduce fat intake).
  • Return to skillet with water, beans, taco seasoning, onion and green chilies.
  • Cook until everything is mixed well under medium-low heat stirring often until a low boil is achieved.
  • Reduce heat cover and simmer 10 minutes stirring every couple minutes.
  • The construction.
  • On a large plate cover with tortilla chips and dollop generous portions of the meat mixture on chips.
  • Now pour over WARMED cheese sauce.
  • Top with the lettuce next, then what ever order you want of the other veggies except the JP's.
  • Then add the JP's AS MUCH AS YOU CAN MUSTER YEA!
  • A couple dollops of sour cream and you are ready for a very filling, spicy treat that you will not forget--EVER.
  • You should also consider topping with some of my guacamole.

2 1/2 ounces butter
2 1/2 ounces flour
1 cup water
1 teaspoon lobster base
1 1/2 teaspoons garlic salt
1/2 teaspoon Tabasco sauce
2 1/2 teaspoons cumin
1 cup American cheese, grated
1 cup heavy cream
1 cup sour cream
8 ounces tiny cooked shrimp, peeled
8 ounces imitation crabmeat
2 tablespoons diced jalapenos
1/2 cup sharp cheddar cheese, grated
1/2 cup monterey jack cheese, grated
1/4 cup green onion, sliced
1/2 cup salsa
1/2 cup sour cream
10 ounces tortilla chips, restaurant style

Steps:

  • Preheat oven to 400 degrees.
  • In a large skillet over medium heat melt butter.
  • Whisk in butter, making a roux.
  • Dissolve lobster base, garlic salt and Tabasco sauce in water, whisking into roux, stirring constantly until sauce becomes thick.
  • Stir in American cheese until completely melted.
  • Stir in heavy cream and sour cream until well blended.
  • To assemble:.
  • Arrange tortilla chips onto 2-3 oven safe plates.
  • Take 1 and 1/2 cups of the nacho cheese base and pour into a microwave safe bowl.
  • Add the shrimp, imitation crab and chilies, stirring well.
  • Microwave on high for about 30 seconds if mixture is not hot.
  • Pour evenly over plates of tortilla chips.
  • Sprinkle on cheeses and green onions.
  • Place in preheated oven for 4-5 minutes, or until cheese is bubbly and melted.
  • Serves 2-3.
  • Reserve remaining nacho sauce base in fridge for another batch.
