Almond Chicken image

This almond chicken is a stir fry of chicken thigh pieces, assorted vegetables and crunchy almonds, all tossed in a savory sauce. A remake of the take out favorite that tastes even better than what you'd get at a restaurant!

5 teaspoons vegetable oil (divided use)
1/2 cup onion (diced)
1 cup zucchini (quartered lengthwise and sliced)
1 cup mushrooms (sliced)
3/4 cup green bell pepper (diced)
1 1/4 pounds boneless skinless chicken thighs (cut into bite sized pieces)
2 teaspoons garlic (minced)
1 teaspoon ginger (minced)
1/2 cup blanched almonds (whole, halved, sliced or slivered)
salt and pepper to taste
1/2 cup chicken broth
1 tablespoon soy sauce
1 1/2 tablespoons hoisin sauce
1 teaspoon sesame oil
1 teaspoon granulated sugar
2 teaspoons corn starch

Steps:

  • Heat 2 teaspoons of oil in a large pan over medium high heat. Add the onions and cook for 4 minutes or until just softened.
  • Add the zucchini, mushrooms and green bell pepper to the pan. Cook for 5 minutes or until vegetables are tender. Season with salt and pepper to taste.
  • Remove the vegetable mixture from the pan; wipe the pan clean with a paper towel.
  • Add the remaining 3 teaspoons of oil to the pan. Add the chicken in a single layer and season with salt and pepper to taste. You may need to work in batches if the chicken doesn't all fit.
  • Cook for 3-4 minutes per side or until chicken is golden brown and cooked through.
  • Add the garlic and ginger and cook for 30 seconds. Add the vegetable mixture back to the pan with the chicken.
  • Whisk together all the sauce ingredients until well combined.
  • Pour the sauce mixture over the chicken and vegetables. Bring to a simmer. Cook for 1-2 minutes or until sauce is just thickened. Stir in the almonds, then serve.

Love one dish meals! This has lots of veggies and chicken. If you have everything lined up and ready to go in the wok, this comes together quickly. If you don't have a wok, you can use a really hot Dutch oven. I don't usually serve it over rice to save carbs, but I'm sure you can.

1 1/2 teaspoons soy sauce (I use reduced sodium)
1 teaspoon fresh gingerroot, minced
1/2 teaspoon salt
1/4 teaspoon sugar
1/4 teaspoon dry sherry
2 1/3 cups chicken breasts, diced (about 1 1/2 lbs)
2 1/2 tablespoons cornstarch
2 tablespoons vegetable oil, divided
1 cup celery, chopped
1/2 lb fresh snow pea, ends snipped
1 (8 ounce) can bamboo shoots, drained and chopped
1 (8 ounce) can water chestnuts, drained and chopped
4 ounces mushrooms, sliced
1/2 cup slivered almonds, toasted
2 green onions, cut into 1 1/4 inch pieces

Steps:

  • Combine the first five ingredients in a large bowl; add the chicken and stir well. Let stand 10 minutes. Sprinkle the cornstarch over the chicken mixture, stirring well. Set aside. (Use this time to chop vegetables).
  • Pour 1 tbsp oil around the top of a preheated wok, coating the sides; heat at medium-high (325 degrees) for 1 minute.
  • Add the celery and mushrooms and stir fry for 1 to 2 minutes. Add the snow peas, and stir fry 1 to 2 minutes. Add the bamboo shoots and water chestnuts, and stir-fry for 1 to 2 minutes. Remove the vegetables from the wok; set aside, and keep warm.
  • Pour the remaining 1 tbsp oil around the top of the wok, coating the sides; heat at medium high for 1 minute. Add the reserved chicken mixture; stir fry for 3 to 4 minutes. Add the vegetable mixture, almonds, and green onions, and stir fry 1 to 2 minutes or until thoroughly heated.

Chicken Divan, created and served with great flourish in the Divan Parisienne Restaurant in New York's Chatham Hotel in the early twentieth century, remains one of America's most classic and delicious casseroles, a dish as appropriate to an elegant buffet as on the family supper table. In my own lifetime, the casserole was a specialty at the renowned Locke-Ober restaurant in Boston, and it was there I learned to enhance the dish by adding a few slivered almonds.

1 (2-pound) head broccoli, stems removed
1/4 cup (1/2 stick) butter
1/4 cup all-purpose flour
1 cup chicken broth
1 cup milk
Salt and freshly ground black pepper
1/8 teaspoon ground nutmeg
1/2 cup freshly grated Parmesan
3 tablespoons dry sherry
12 slices cooked chicken or turkey
1 cup slivered almonds
1/2 cup heavy cream

Steps:

  • Place a collapsible steamer in a large saucepan with a tight-fitting lid, pour in enough water to just reach the bottom of the steamer, and bring to a boil.
  • Break the broccoli into florets and place them in the saucepan. Steam until just tender, about 5 to 7 minutes and drain.
  • Preheat to oven to 350 degrees F. Butter a shallow 2-quart casserole and set side.
  • In a medium-size saucepan, melt the butter over moderate heat, then add the flour and stir for 1 minute. Gradually add the broth and milk and stir until thickened. Season with salt and pepper; add the nutmeg, 1/4 cup of the cheese, and the sherry. Stir until the cheese melts, and remove from the heat.
  • Arrange the broccoli in the prepared casserole in a single layer, sprinkle the remaining 1/4 cup cheese over the top, arrange the chicken slices evenly over the broccoli, and sprinkle the almonds over the top.
  • In a medium-size mixing bowl, beat the heavy cream with an electric mixer until soft peaks form, fold into the cheese sauce, pour evenly over the chicken and almonds, and bake until bubbly and golden brown, about 35 minutes.

6 skinless boneless chicken breast halves (2 lb total)
1 teaspoon salt
1 (3-inch) cinnamon stick
1 teaspoon dried oregano (preferably Mexican), crumbled
2 Turkish bay leaves or 1 California
2 tablespoons vegetable oil
3 bacon slices, chopped
1 cup chopped onion (1 medium)
1 tablespoon chopped garlic (2 to 3 cloves)
1 cup low-sodium chicken broth or water

1 tablespoon chopped fresh flat-leaf parsley

Steps:

  • Put oven rack in middle position and preheat oven to 375°F.
  • Spread 1/4 cup almonds on a baking sheet and toast in oven until golden, 8 to 10 minutes.

1/2 cup country bread, torn into small pieces
4 cloves garlic, chopped
Small pinch saffron
1 tablespoon chopped parsley
4 chicken thighs
4 chicken drumsticks
Sea salt
Flour, for dusting
1 dried red chili
1 Spanish onion, sliced
1/2 cup white wine
1 cup chicken broth
1/2 cup pitted green olives

Steps:

  • Heat 2 tablespoons of oil in a large braising pan. Add the almonds, bread and garlic. Cook over medium heat so the garlic softens and the bread toasts but nothing burns. Scrape into a food processor and let cool for 5 minutes. Add the saffron and parsley and pulse to a coarse paste.
  • Preheat oven to 300 degrees. Season the chicken with salt and dust with flour. Add 2 tablespoons oil to the braiser and place over medium-high heat. Add chicken and brown all sides, then remove to a plate. Wipe out the pan. Add remaining oil, the chili and onions and cook until softened. Discard the chili.   • 1. Mix group A together, put aside. 2. Deep fry almonds until brown-drain 3. Mix group c together, put aside 4. Heat wok dry and hot, add all oil. When oil is hot turn downheat and let cool down a little. Add chicken and fry slowly. When chicken becomes slightly white remove from wok and once and set aside. 5. Remove all oil except 1 tablespoon. Turn up heat to medium. Add group D, Brown and discard. s. Turn heat to high. Add group B. Stir-fry about a minute, then cover and cook for a minute. Put back chicken. Stir and pur group C in wok slowly. Stir-fry until gravy thickens. Serve and top with almonds and spring onion. Serve with rice
