3-Ingredient Cheddar & Apple Bites image

Creamy apple butter and sharp Cheddar cheese are a perfect match in these easy party hors d'oeuvres. This recipe calls for prepared pie crust, which is pressed into mini muffin tins to make little tart shells, so it's super easy to make as well. Add slices of apple for extra crunch, if you'd like, or keep these bites simple. Either way, consider making a double batch--they'll go quickly.

1 refrigerated pie crust (1/2 of a 14-ounce package; see Tip)
½ cup shredded Cheddar cheese
¼ cup apple butter
24 thin slices apple, halved

Steps:

  • Preheat oven to 450 degrees F. Lightly coat a mini muffin tin with cooking spray.
  • Unroll pie crust onto a clean surface. Roll the dough into a circle about 12 inches in diameter. Cut 24 2-inch circles out of the dough with a biscuit cutter, rerolling the scraps if needed. Place the dough circles in the prepared muffin cups, gently pressing the dough into the bottom and sides. Prick the dough with a fork. Bake until lightly browned, 5 to 6 minutes.
  • Add 1 teaspoon cheese to each cup, then top with 1/4 teaspoon apple butter. Bake until the cheese has melted, 3 to 5 minutes more. Let cool for 10 minutes. Top each bite with a few apple pieces, if desired.

2 small or 1 large apple, peeled, cored, and grated
2 skinless, boneless chicken breasts, cut into chunks
1/2 teaspoon onion powder
1 tablespoon minced fresh parsley or 1/2 tablespoon dried parsley
1 cup fresh whole wheat breadcrumbs
1 tablespoon chicken stock
1/4-1/2 cup Parmesan cheese, freshly grated
1/2 teaspoon garlic powder
1/2 teaspoon salt
1/4 teaspoon pepper
whole wheat flour, for coating
olive oil, for frying

Steps:

  • Peel, core, and grate 2 small, or one large, apple.
  • Spread the apple out on a clean dish towel and press out all the excess moisture.
  • Put the grated apple, chicken, onion powder, parsley, breadcrumbs, chicken stock, Parmesan cheese, garlic powder, salt and pepper in food processor and blend until well combined.
  • Spread the flour out on a plate.
  • With wet hands, divide the mixture into 20 mini portions.
  • Shape each portion into a ball (or a mini burger using several of the portions) and then roll in the flour.
  • Heat a little oil in a skillet over medium heat and cook the balls for 5-8 minutes, rolling them occasionally so they brown on all sides.
  • When done, they should be golden brown and juices should run clear (no pink inside).
  • Remove and drain on paper towels.
  • Serve hot (or cold for lunchbox).

I found this recipe on line at The Recipe Link. After being at Cracker Barrel, I think this is close to the real thing. I had to eyeball the amounts on the crackers and soup as no measurements were given. Next time I will measure and post accordingly.

1 apple, sliced (Golden Delicious works good)
Ritz cracker, crushed
1 (10 ounce) can condensed cheddar cheese soup, warmed*
salt and pepper

Steps:

  • Place chicken in an ovenproof dish. Season with salt and pepper according to taste (remember, the crackers add salt).
  • Slice apples or use canned apples place on top of chicken.
  • Put crushed Ritz crackers on top.
  • Bake at 350°F for 30 to 45 minutes or until chicken is done.
  • Before serving top with Cheese Whiz or cheddar cheese soup.
  • *If you use cheddar cheese soup thin with a little milk.

2 Tbsp. butter, melted
1/4 cup KRAFT Real Mayo
1 Tbsp. GREY POUPON Savory Honey Mustard
2 pkg. (6 oz. each) OSCAR MAYER CARVING BOARD Flame Grilled Chicken Breast Strips, chopped
1/4 cup chopped red apples
1/4 cup KRAFT Shredded Cheddar Cheese
2 Tbsp. chopped walnuts, toasted

Steps:

  • Heat oven to 375°F.
  • Use rolling pin to flatten each bread slice to 1/8-inch thickness; brush lightly with butter. Brush any remaining butter onto insides of 24 mini muffin pan cups. Cut each bread slice into 4 squares. Press each bread square, buttered side up, onto bottom and up side of each muffin cup. Bake 7 to 8 min. or until golden brown. Cool completely in pan.
  • Meanwhile, mix mayo and mustard in medium bowl until blended. Add chicken, apples and cheese and nuts; mix lightly.
  • Spoon chicken salad into toast cups just before serving.

1 dozen mini chicken apple sausages
1 sheet frozen puff pastry, thawed
4 oz. Cabot Creamery Seriously Sharp Cheddar, sliced
½ of an apple, peeled, quartered and cut into slices
1 egg, beaten with a 1 tsp. water
Poppy seeds (optional)
Mustard for serving

Steps:

  • Preheat oven to 400 and line two baking sheets with Silpat baking mats.
  • Place one sheet of puff pastry on a well-floured surface or baking mat and roll out in a rectangle slightly larger than the original size.
  • Cut puff pastry into 12 squares.
  • Place a slice of cheddar diagonally across the center of a puff pastry square.
  • Top cheddar with a slice of apple.
  • Place one chicken mini-sausage on top of the apple slice and join the corners of the puff pastry square on top of the sausage.
  • Place filled puff pastry square onto one of the baking sheets.
  • Repeat until all puff pastry squares have been filled.
  • Brush top and sides of each puff pastry square with the beaten egg and sprinkle with poppy seeds if using.
  • Chill pastry squares on baking sheet for at least 30 minutes
  • Bake for 15-17 minutes until pastry is puffed and golden brown. Do not undercook.
  • Remove to a platter and serve warm with a tangy mustard.

Steps:

  • Heat oven to 450°F. Line cookie sheet with foil or cooking parchment paper. Place apple slices in single layer on cookie sheet. Bake 8 to 10 minutes or until lightly browned and slightly dry to the touch. Cool; chop apples.
  • In medium bowl, stir Bisquick mix, buttermilk, salt and pepper until soft dough forms. Set aside 2 tablespoons of the cheese. Add chopped apples and remaining cheese to dough; stir until incorporated.
