This Chicken Pie recipe has everything you need in a comfort food pie. Tasty home cooked meat, extra veggies, creamy sauce and light fluffy pastry topping.

1 tbsp Oil (See note 1.)
4 Chicken Breasts (About 650g)
200 g Smoked bacon (See note 2.)
1 Large onion (Peeled and chopped (See note 3))
3 Sticks Celery (Chopped (See note 3))
3 Carrots (Peeled and chopped (See note 3))
2 tsp Fresh thyme ((See note 4))
Salt and black pepper
75 g Plain flour
300 ml Chicken stock ((See note 5))
300 ml Milk ((See note 6))
320 g Puff pastry sheet ((See note 7))
1 Egg (Beaten)

Steps:

  • Heat your oil in a large frying pan or saucepan and add the chicken and bacon. Cook for about 5 - 10 minutes until just starting to turn brown.
  • Add in the vegetables and cook for a further 5 minutes until they start to soften.
  • Add the flour and thyme and stir through everything, cook for 5 minutes.
  • Gradually add the stock and milk to the vegetable and flour mix, stirring until the sauce is smooth. Leave to bubble away and thicken for about 10 minutes.
  • Spoon into a pie dish and leave to cool for at least 30 minutes if you have time.
  • Smooth the pastry over the top of the filling.
  • Decorate the pie with cut out shapes if you feel that way inclined and brush with the beaten egg.
  • When you are ready to bake the pie, preheat the oven to 220C and bake for about 30 minutes until the filling is hot throughout and the pastry is crisp and golden.

Even the word pie is comforting. But then, it would be hard to deny the very real lure of pastry, especially when - as here - you know you're going to dunk it in gravied juices till its gorgeous lightness is deliciously, soggily heavy. I concede, however, that making and rolling out your own pastry is not necessarily the speediest option, so I use [store] bought, all-butter, ready-rolled puff pastry and feel fine about it. I make the pie even easier by browning the chicken and making the sauce all in one go. And a gold-crusted, welcoming pie for two in half an hour is not bad going.

3 rashers streaky bacon, cut or scissored into 1-inch strips
1 teaspoon garlic infused oil
2 cups chestnut mushrooms, sliced into 1/4-inch pieces
8 ounces chicken thigh fillets cut into 1-inch pieces
2 1/2 tablespoons all-purpose flour
1/2 teaspoon dried thyme
1 tablespoon butter
1 1/4 cups hot chicken stock
1 tablespoon Marsala
1 (13-ounce) 9 by 16-inch sheet all-butter ready-rolled puff pastry

Steps:

  • Preheat the oven to 425 degrees F. Fry the bacon strips in the oil until beginning to crisp, then add the sliced mushrooms and soften them in the pan with the bacon.
  • Turn the chicken strips in the flour and thyme (you could toss them about in a freezer bag), and then melt the butter in the pan before adding the floury chicken and all the flour left in the bag. Stir around with the bacon and mushrooms until the chicken begins to color.
  • Pour in the hot stock and Marsala, stirring to form a sauce and let this bubble away for about 5 minutes.
  • Make a pastry rim for each of your pots for the pies, by this I mean an approximately 1/2-inch strip curled around the top of the pots. Dampen the edges to make them stick.
  • Cut a circle bigger than the top of each pie-pot for the lid, and then divide the chicken filling between the two.
  • Dampen the edges again and then pop on the top of each pie sealing the edges with your fingers or the underneath of the prongs of a fork.
  • Cook the pies for about 20 minutes turning them around half way through cooking. Once cooked, they should puff up magnificently.

1 Foolproof PHILLY Pie Crust Recipe (see tip)
6 slices OSCAR MAYER Bacon, cut into 1/2-inch pieces
1/2 lb. sliced fresh mushrooms
1 baking potato (5 oz.), peeled, cut into 1/2-inch pieces
1 onion, chopped
1 carrot, chopped
2 cloves garlic, minced
2 Tbsp. flour
2-1/4 cups fat-free reduced-sodium chicken broth
4 oz. (1/2 of 8-oz. pkg.) PHILADELPHIA Cream Cheese, cubed
3 cups shredded cooked chicken

Steps:

  • Prepare dough for Foolproof PHILLY Pie Crust Recipe and refrigerate as directed.
  • Cook and stir bacon in Dutch oven or large deep skillet on medium heat until crisp. Remove bacon from pan with slotted spoon; drain on paper towels. Discard all but 2 tsp. drippings from pan.
  • Add vegetables and garlic to reserved drippings in pan; cook 5 min., stirring occasionally. Add flour; cook and stir 1 min. Gradually stir in broth. Bring to boil. Add cream cheese; cook and stir 1 min. or until cream cheese is completely melted and mixture is well blended. Remove from heat; stir in chicken. Spoon into 9-inch deep-dish pie plate sprayed with cooking spray; top with bacon.
  • Heat oven to 400ºF. Roll out pie crust dough into 10-inch round between 2 sheets of waxed paper; place over chicken mixture. Flute edge, sealing crust to edge of pie plate. Cut several slits in crust to allow steam to escape. Place on baking sheet.
  • Bake 40 min. or until golden brown, covering edge of crust with foil for the last 10 min. if necessary to prevent overbrowning.

2 cups cooked chicken
8 slices bacon
1/4 cup butter
1/4 cup flour
1 1/4 cups milk
1 teaspoon chicken stock
2 frozen pie crusts

Steps:

  • Remove one of the pie crusts from the pan and place on wax paper until soft.
  • Cook chicken and cut into pieces.
  • Heat butter and fry bacon in butter.
  • Stir in flour and cook for 2-3 minutes over medium heat.
  • Add milk and chicken stock. Cook until thickened.
  • Add chicken and bacon to mix.
  • Put into pie crust and cover with the other pie crust.
  • Bake at 400 degrees for 20 minutes.

1 packet of readymade shortcrust pastry (Of course you can make your own)
1 generous knob of butter chopped
1 heaped tbsp of flour
1 pint of milk
110g of mushrooms finely chopped
1 medium onion or 5 shallots finely chopped
salt and pepper
herbs
a few splashes ofworcestershire sauce (optional)
1 egg beaten
3 chicken breasts chopped into bite size pieces
16 rashers of bacon or good quality ham chopped
100g of frozen petits pois

Steps:

  • cook the chicken and bacon in a wok. to make the sauce melt the butter in a saucepan and soften the mushrooms and onion stir in the flour cook for two minutes then gradually pour in the milk stiring constantly bring to the boil then add the cheese worcestershire sauce and season with the herbs and salt and pepper
  • mix the chicken and bacon into the sauce then add the peas
  • roll out the pastry if needs be then cut out the shape for the pie lid. tip the sauce into a pie dish then top with the lid, make some holes in the top to let steam escape use a pastry brush to glaze the pie with the egg cook the pie for 10-20 minutes on 170c/fan 150c/gas or until lightly brown on top serve with veg and enjoy

A quick easy and delicious chicken and bacon pie with either short crust or puff pastry.

Steps:

  • Strip carcass of chicken, cutting meat into large pieces. If you prefer you can buy uncooked boneless chicken but you would need to pre cook it at this stage.
  • Saute leek (or onion), bacon and mushrooms in the butter and oil. When soft, add flour.
  • Add stock, stirring continuously then add the milk so that the sauce is rich and creamy. If the sauce is a little thick, add more liquid.
  • Add the pre cooked chicken, and stir carefully until meat is completed coated and empty contents into a large pie dish. Again if you prefer to make this like a more traditional pie you can line the pie dish with the rolled out short crust pastry before putting in the filling.
  • Cover with pastr chosen pastry, making a vent in the pie top, and brush with milk.
  • Bake in oven on a high temperature (200C/400F/gas 6) for around 25mins or until golden.
  • Tip:
  • With the stockcube and bacon, there is no need for extra seasoning however, you could substitute some of the stock with a little leftover white wine.

  • Heat a large skillet, frying pan or shallow, heatproof casserole over medium heat and add the oil. After 30 seconds, add half of the chicken and bacon and season with salt and pepper.
  • Fry for 8–10 minutes, stirring often, until golden all over. Scoop onto a plate using a slotted spoon. Repeat with the second batch.
  • Once both batches of chicken are cooked and set aside, add the onions, celery and leeks to the pan, then cover and cook gently for about 10 minutes, until soft.
  • Turn the heat back up a little, then add the butter, mushrooms and thyme leaves. Fry, stirring, for about 3 minutes, until the mushrooms and vegetables take on a golden tinge.

  • Flour the work surface a little, then roll the pastry to a square about 45×45 cm (18x18 inches).
  • Cut 6 rectangles of pastry, each a little wider than the tops of the pie dishes. Use a fork to beat the egg with 1 tablespoon water to make a glaze. Dampen the rim of each dish with a little of the glaze.
