BACON RANCH CHICKEN MEATLOAF
Change up boring ground beef meatloaf with healthier chicken meatloaf flavored with real bacon and ranch dressing. This is a go to weekday dinner for the entire family.

Steps:
- In a small skillet, cook chopped onions and bacon together over medium heat. Cook until bacon is done, drain and set aside.
- Preheat oven to 375 °F and grease a small casserole dish.
- In a large bowl, mix together cooked bacon and onion mixture, ground chicken, garlic, egg, breadcrumbs, and 3 tbsp. ranch dressing. Mix until everything is even.
- Press ground meat mixture into a loaf form and put into a greased casserole dish. Bake for 45 minutes or until meatloaf is golden brown on top.
- Spread the remaining ranch dressing on top and serve hot.

- Preheat oven to 350 degrees.
- In a large bowl mix together chicken, bread crumbs, dried onion, ranch dressing mix, bacon bits and egg. Spread in greased loaf pan.
- Sprinkle with cheese and reserved bacon bits. Bake for 50 minutes.
- Remove from oven and drizzle with ranch dressing.

My family loves this! It's more or less chicken salad spread on French bread, topped with tomatoes and cheese, and baked. Very quick and easy to do!

Steps:
- Preheat oven to 400°. In a medium bowl, combine chicken, green onions, bacon and enough ranch dressing to make chicken salad.
- Cut French bread in half so that you have a top and bottom.
- Scoop and spread chicken mixture onto bottom half of bread. (save top half for other uses).
- Top chicken mixture with tomato slices and sprinkle with cheee.
- Bake just until cheese is bubbly, about 10-15 minutes.
- Broil for a minute or so to brown the cheese.
- Cut into slices and serve.
