CHICKEN AND PORK SOUVLAKI

1 cup olive oil
1/2 cup full-fat Greek yogurt
1/4 cup fresh lemon juice
1 teaspoon ground cumin
1 teaspoon dried oregano
1 teaspoon kosher salt
1/2 teaspoon Aleppo pepper
1/2 teaspoon freshly ground black pepper
2 cloves garlic, finely grated
1 pound boneless, skinless chicken breast, cut into 1-inch pieces
1 pound pork tenderloin, cut into 1-inch pieces
2 red onions, each sliced into 3 thick slices
2 lemons, sliced in half
Olive oil, for drizzling
Kosher salt and freshly ground black pepper
Chopped romaine lettuce, pita and tzatziki, for serving

Steps:

  • For the chicken and pork: In a mixing bowl, whisk together the olive oil, yogurt, lemon juice, cumin, oregano, salt, Aleppo pepper, black pepper and garlic.
  • Place the chicken and pork into 2 separate mixing bowls. Pour half of the marinade over the chicken and the other half over the pork. Marinate, refrigerated, at least 1 hour and up to overnight.
  • Set up your grill for indirect heat. If using a charcoal grill, build the coals on one side only. If using a gas grill, heat one side only.
  • Remove the chicken and pork from the marinade, allowing excess to drain off. Keeping the chicken and pork on separate skewers, thread 4 pieces of meat onto each skewer towards the top and covering the tip of the skewer.
  • Place the skewers on the direct-heat side of the grill to char on all sides, about 2 minutes per side. Then move to the indirect-heat side of the grill, cover with the lid and cook until the chicken and pork are cooked through, about 10 minutes, or until the internal temperature of the chicken reaches 160 degrees F and the pork reaches 145 degrees F. Stack the skewers on a platter.
  • For the onions and lemons: Drizzle the onions and lemons with olive oil and season with salt and pepper. Place on the direct-heat side of the grill. Cook the lemons until charred, about 3 minutes. Cook the onions until tender, about 3 minutes per side.
  • Add the onions and lemons to the platter with the souvlaki. Serve with romaine, pita and tzatziki.

Souvlaki (soo-vlah-kee) is the term used to describe "little skewers" of meat that are marinated in a wonderful red wine marinade and then grilled. Souvlakia are traditionally wrapped in pita bread and then topped with a variety of condiments - lettuce, tomato, onion, and of course, the famed tzatziki sauce. They are also quite delicious without the pita and trimmings. You will need to plan ahead and allow at least 2 - 3 hours for the meat to really absorb the flavors. This marinade recipe is for a pound of pork shoulder and will yield about 4 (9 inch) skewers. You can multiply it according to your group size.

1/4 cup olive oil
1/4 cup red wine
2 tablespoons fresh lemon juice
1 tablespoon dried mint
1 tablespoon dried oregano
4 garlic cloves, smashed and minced finely
1 bay leaf, crumbled into tiny pieces
1 lb pork shoulder, trimmed of fat and cut into 1 1/4 inch cubes
salt & freshly ground black pepper
lemon (for serving)

Steps:

  • In a large non-reactive bowl, whisk the marinade ingredients together. Add the pork cubes, cover with plastic wrap and refrigerate for 2 to 3 hours.
  • If using wooden skewers, soak these in a shallow pan filled with water while the meat marinates.
  • Heat the grill to medium high. Thread the meat on to the skewers (about 6-7 pieces per skewer). Season the pork with salt and freshly ground black pepper.
  • Grill over medium high heat for about 10 minutes, turning occasionally until they are cooked through. Squeeze some fresh lemon juice on the skewers before serving.

2 pounds pork tenderloin, cut into 1 1/2-inch cubes
½ cup olive oil
½ cup dry white wine
1 lemon, juiced

Steps:

  • Place pork tenderloin cubes into a gallon-sized resealable bag.

400g lean pork shoulder, cut into 2cm chunks
1 tbsp olive oil
½ tbsp dried oregano
1 lemon , zested and juiced
½ tsp hot paprika
100ml fat-free yogurt
1 small garlic clove , grated
½ cucumber , trimmed and grated
2 red peppers , deseeded and cut into chunks
2 Little Gem lettuce , leaves separated
chilli sauce , to serve (optional)
flatbreads , warmed, to serve (optional)

Steps:

  • Put the pork in a large bowl with the oil, oregano, lemon zest and juice and paprika as well as a good pinch of salt. Toss everything together to combine and leave to marinate for 10 mins.
  • Combine the yogurt, garlic and cucumber together in a bowl. Season with salt and set aside.
  • Heat the grill to high. Thread the marinated pork and the peppers on four metal skewers, alternating between the pork and peppers as you go. Place on a non-stick baking sheet and grill for 3-4 mins on each side, or until cooked through and golden brown.
  • Serve with the lettuce, yogurt mixture and chilli sauce, and flatbreads, if you like.

While the pork rests, grill the pita until lightly browned on both sides, about 1 minute per side. Remove the pita from the grill and quarter. To serve, place pita slices on a plate, lay the souvlaki on top, and place a dollop of tzatziki on the side.
