I made up this dish years ago, and it still remains the family's favorite healthy baked chicken recipes. It's a fast weeknight meal, but the fresh mushrooms and sherry make it special enough for a weekend dinner party. -Lise Prestine of South Bend, Indiana

6 boneless skinless chicken breast halves (4 ounces each)
1/4 teaspoon paprika
1/2 pound fresh mushrooms, sliced
1 tablespoon butter
1/2 cup sherry or chicken broth
3 green onions, chopped
1 garlic clove, minced
1/2 teaspoon salt
1/8 teaspoon pepper
3/4 cup shredded part-skim mozzarella cheese

Steps:

  • Arrange chicken in a 13x9-in. baking dish coated with cooking spray. Sprinkle with paprika. Bake, uncovered, at 350° for 15 minutes., Meanwhile, in a large nonstick skillet, saute mushrooms in butter for 5 minutes. Add the sherry or broth, green onions, garlic, salt and pepper. Bring to a boil. Pour over chicken. , Bake until a thermometer reads 165°, 10-15 minutes longer. Top with cheese. Bake for 3-5 minutes or until cheese is melted.

Rich, creamy Port and mushroom sauce makes these chicken breasts special. A little more work than a weekday meal, but worth it. Great served with plain rice or simply flavored risotto (lemon or parmesan would be nice) to soak up the flavors. Adapted from Silver Palate Cookbook.

3/4 cup chicken broth
1 ounce dried wild mushrooms, thoroughly rinsed under running water,and drained (such as cepes, morels, etc, all one kind or a mix)
1/2 lb fresh cultivated mushroom, wiped clean with damp paper towel (button)
5 tablespoons unsalted butter
1/4 cup finely-chopped shallot (or 3 green onions, finely-chopped, plus 1 T minced garlic)
salt and pepper, to taste
1/3 cup medium port wine
1/3 cup heavy cream
6 boneless skinless chicken breast halves

Steps:

  • In a small saucepan, bring broth to a boil; pour over the wild mushrooms in a small bowl and let stand for about 2 hours.
  • Thinly slice cleaned mushroom caps, discarding stems.
  • In a skillet over medium to medium-to-low heat, melt butter and gently saute shallots or onion/garlic mixture for about 5 minutes (do not brown).
  • Drain liquid from wild mushrooms and reserve.
  • Finely chop the wild mushrooms and add them and the fresh mushrooms to the skillet with the shallots (or onion/garlic mixture) and saute over medium heat, stirring occasionally, for about 7- 10 minutes.
  • Preheat oven to 325 degrees Fahrenheit.
  • Add the reserved mushroom liquid, Port, and cream to the skillet and simmer for about 5 minutes, or until slightly thickened.
  • Pour mushroom mixture into a shallow baking dish and arrange chicken breast halves in a single layer on top of the mushrooms.
  • Sprinkle chicken with salt and pepper and cover the dish tightly with aluminum foil.
  • Bake in the middle level of the oven for about 25- 30 minutes, until chicken is done.

3/4 cup canned chicken broth
1 ounce dried mushrooms, (cepes, morels, trompettes des morts, or a combination, thoroughly
rinsed under running water and drained
1/2 pound fresh mushrooms
4 tablespoons sweet butter
1/4 cup finely chopped shallots
salt and freshly ground black pepper to taste
1/3 cup medium port wine
1/3 cup heavy cream
6 boneless skinless chicken breasts
parsley, chopped, (optional)

Steps:

  • Bring the chicken stock to a boil in a small saucepan. Pour it over the dried mushrooms in a small bowl and let stand for 2 hours. Meanwhile, trim stems from the fresh mushrooms and save stems for another use, or discard. Wipe mushroom caps with a damp paper towel and slice thin. Melt the butter in a skillet. Add the shallots and saute gently for 5 minutes without browning. Meanwhile, drain the dried mushrooms, reserving the liquid, and chop them fine. Add dried mushrooms and sliced fresh mushrooms to the skillet, season with salt and pepper, and saute over medium heat, stirring occasionally, for 10 minutes. Preheat oven to 325°. Add reserved soaking liquid, the Port and heavy cream to the skillet with the mushrooms and simmer for another 5 minutes, or until slightly thickened. Spoon mushroom mixture into a shallow baking dish. Arrange chicken breasts in a single layer on top of the mushrooms. Season with salt and pepper to taste and cover the baking dish tightly with a piece of foil. Set dish on the middle rack of the oven and bake for 20 minutes or until chicken breasts are done. Sprinkle with chopped parsley and serve immediately. NOTE: I have prepared this dish ahead of time and refrigerated it. Then I just cooked it about 10-15 minutes longer to account for the chill from the refrigerator.

Two 3 1/2- to 4-pound chickens, cut in eighths
Kosher salt and freshly ground black pepper
All-purpose flour
1/2 cup good olive oil
8 whole garlic cloves
1 1/2 pounds assorted wild mushrooms, such as porcini and cremini, stems removed and (1 1/2-inch) diced
8 sprigs fresh thyme, tied with kitchen string
1/4 cup dry sherry
1 tablespoon minced garlic (3 cloves)
2 cups white wine, such as Pinot Grigio
2 cups good chicken stock, preferably homemade
3 tablespoons unsalted butter, at room temperature

Steps:

  • Preheat the oven to 325 degrees.
  • Pat the chicken dry with paper towels and sprinkle both sides liberally with salt and pepper. Place 1/2 cup flour in a bowl and dredge the chicken in the flour. In a large (12-inch) ovenproof pot such as Le Creuset, heat the oil. Add the chicken in three batches (don't crowd them!) and brown lightly over medium-high heat for 3 to 5 minutes on each side. Remove the chicken to a plate and continue until all the chicken is browned.
  • Add the whole garlic cloves, mushrooms, and thyme to the pot and cook over medium heat for 5 minutes, stirring occasionally. Add the sherry and cook for 1 minute, scraping up the brown bits. Add the minced garlic and cook for 2 more minutes. Add the wine, chicken stock, 1 tablespoon salt, and 1 teaspoon pepper and bring to a simmer. Add the chicken (large pieces first), cover, and place in the middle of the oven for 30 to 35 minutes, until the chicken is cooked through (about 165 degrees on an instant-read thermometer).
  • Remove the chicken to a bowl and discard the thyme. With a fork, mash together the butter and 1/4 cup flour and add it to the sauce. Simmer, stirring constantly, over medium heat for 5 minutes, until slightly thickened. Season to taste (it should be highly seasoned), put the chicken back in the sauce, and serve hot.

This is a simple and tasty recipe for weekdays or when friends and family come over to visit. It's a creamy chicken comfort food recipe with mushrooms that I have had a lot of good comments on when I make it at home. If you have a rice cooker, cook some rice while the chicken is resting. It's a great base for the chicken and creamy sauce.

3 skinless, boneless chicken breast halves
1 teaspoon kosher salt
¼ teaspoon freshly ground black pepper, or more to taste

1 medium white onion, chopped
2 tablespoons chopped fresh parsley
1 teaspoon poultry seasoning
¼ teaspoon cayenne pepper
1 (7 ounce) can whole mushrooms, drained
1 (10.5 ounce) can condensed cream of chicken soup
1 cup heavy cream
¼ cup buttermilk
4 slices Swiss cheese

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Season chicken breasts with salt and pepper.
  • Heat olive oil in a large skillet over medium-high heat. Add onion and cook until it is semi-transparent, about 5 minutes. Add parsley and stir until coated. Place chicken in the skillet and brown, about 5 minutes per side. Add poultry seasoning and cayenne, making sure chicken is coated. Transfer chicken to a 9x13-inch dish. 2 -4 boneless skinless chicken breasts (1 per person)
1 large onion (sliced)
8 -16 ounces fresh mushrooms (cleaned & sliced)
4 -8 ounces blue cheese (crumbled)

1/2 cup red wine (optional)

Steps:

  • Season chicken breasts with seasoned salt and pepper.
  • Heat 2 tbsp olive oil in a skillet then add the breasts.
  • Brown the breasts on medium heat on both sides, transfer to a baking dish and put into a 350°F oven to finish cooking.
  • In the same skillet add another tbsp of oil and add the onions; sauté until translucent.
  • Add a couple teaspoons of sugar and the red wine (optional) and sauté until the onions become caramelized.
  • Set onions aside.
  • Sauté the mushrooms in the skillet.
  • Remove the breasts from the oven and spoon some of the caramelized onions atop each one, then spoon some sautéed mushrooms on each. Finally, sprinkle some blue cheese over the mushrooms and place under the broiler for a couple minutes until the cheese becomes slightly browned.
  • Serve the breasts on a nest of angel hair pasta or bed of wild rice or couscous.

2 whole chicken breasts, on the bone
2 cups wild mushroom ragout (see recipe)
3 teaspoons porcini or olive oil
1 teaspoon salt
1/2 teaspoon freshly ground black pepper
1 tablespoon dry sherry
1 cup mushroom broth
4 thick slices of country bread

Steps:

  • Preheat the oven to 450 degrees. Use a sharp knife to split the chicken breasts in half along the breastbone. Carefully stuff 1/4 cup of the ragout under the skin of each breast. Place in a baking dish, rub each with 1/4 teaspoon of porcini oil, season with salt and pepper and bake for 15 to 20 minutes.
  • Deglaze the pan with the sherry, scraping to incorporate any bits of meat or skin. Add the broth and the remaining ragout, reduce temperature to 300 and return for 5 minutes.
  • Meanwhile, drizzle the remaining oil on the bread, front and back, and toast on both sides.
  • Remove the chicken from the pan and taste the juice. Adjust seasoning with additional salt and pepper. Place the chicken breast on top of the toasted bread. Spoon on the mushrooms and juice and serve.
