Steps:
- Preheat oven to 400 degrees with racks in upper and lower thirds. Cut four 12-by-17-inch pieces of parchment. Fold each in half crosswise to make a crease, then unfold and lay flat. Toss together bok choy leaves, tomatoes, shallot, 1 teaspoon thyme leaves, and oil in a large bowl. Season with salt and pepper.
- Season chicken with salt and pepper. Dividing evenly, place bok choy mixture on one side of crease on each piece of parchment, then top with chicken and 2 thyme sprigs. Drizzle each with 1 tablespoon wine. Fold parchment over, then make small overlapping pleats to seal and create half-moon-shaped packets.
- Bake on 2 rimmed baking sheets until chicken is cooked through, 22 minutes. Transfer to plates; serve immediately, carefully cutting packets open with kitchen shears.
CHICKEN BREASTS IN PARCHMENT
"En Papillote" is French for "in parchment," and is a classic and healthy cooking technique. The chicken and vegetables steam in their parchment parcel, adding loads of flavour with a minimum of fat.

Steps:
- Preheat oven to 400°F (200°C).
- Cut parchment into a 12 in x 12 in square or cut into a big heart shape of approximately the same size.
- With a pastry brush, coat one side of parchment paper with butter. Sprinkle with green onions and ¼ cup (60 mL) of mushrooms. Place 1 chicken breast on top and sprinkle with tarragon. Top with 2 slices of tomato. Sprinkle tomato with basil and parsley and 1 Tbsp (30 mL) of white wine.
- Secure parchment paper by tightly folding the paper closed on all ends. Leave some space in the parchment for steam to circulate and cook the food, about an inch on all sides. Repeat with remaining 3 chicken breasts.
- Place parcels on baking dish and put in oven. Cook for approximately 20 minutes or until chicken is thoroughly cooked and reaches an internal temperature of 165°F (74°C). The parchment parcel should puff and brown slightly.
- Remove parcels from oven. Open parcels and remove chicken and vegetables and place on individual plates. Serve with your favourite rice, salad potatoes, or pasta.

HEALTHIER BAKED CHICKEN BREASTS
Use whichever spice combinations you prefer. The key to baking white meat without it getting dry is topping it with butter and wrapping it in parchment paper. It locks in the moisture and is tender and juicy every single time. The paper absorbs most all of the butter so you are not actually consuming it.

Steps:
- Preheat the oven to 450°F with the rack in the middle.
- In a large bowl, whisk together the olive oil, lemon juice, minced garlic, oregano, 1 teaspoon Diamond Crystal kosher salt, and ¼ teaspoon freshly ground black pepper.
- Add the chicken and marinate for 10 minutes and up to 2 hours. (Don't go too long because the acidic marinade will make the texture kinda funky.)
- Grab 4 large sheets of parchment paper, and fold each piece in half. Draw half a heart on each piece of paper so that when you cut them out, you get full hearts.
- Open up the parchment pieces and lay them flat. Tile ¼ of the summer squash and/or zucchini on one side of the crease in each heart. Add some shallot rings on top, and sprinkle the veggies with salt and pepper.
- Place a chicken thigh on top of the vegetables, and spoon two tablespoons of marinade onto the chicken. Top with ¼ of the olives and cherry tomatoes. Repeat with all 3 packets.
- Fold the other half of each parchment heart on top of the chicken and tightly crimp the edges together, starting at the top-center of the heart. Make sure each packet is tightly sealed by turning and crimping the edges. At the pointed bottom end of the hearts, twist the paper to seal well.
- Place the packets in a single layer on a rimmed baking sheet.
- Cook in the oven for 15-20 minutes or until the chicken thighs register an internal cooking temperature of 165°F. (How do you know the temperature without opening the package? Stab the packet with a meat thermometer! By the way, if you're cooking chicken breasts, the finished cooking temperature is 150°F-and you should start stabbing at the 15 minute mark.)
- Use a pair of kitchen shears to cut open the packets as soon as they're done cooking (but be careful-the escaping steam is hot!).

MEDITERRANEAN CHICKEN EN PAPILLOTE
Provided by Martha Stewart
Number Of Ingredients 12
Steps:
- Preheat oven to 350 degrees.
- In a small bowl, whisk mustard, vinegar, and a pinch each of sugar, salt, and pepper together. Continue to whisk while slowly drizzling olive oil in until completely combined.
- Season chicken on both sides with salt and pepper; set aside.
- Cut 4 pieces of parchment paper into 16-by-18-inch pieces. Fold each sheet in half lengthwise, then open and place on a work surface. Divide asparagus evenly among the four pieces of parchment; place them on the left side of the fold near the crease, centered evenly between the top and bottom of the parchment paper. Place a chicken breast on top of each bed of asparagus. Drizzle with about 1 tablespoon vinaigrette. Top chicken breasts with tomatoes, olives, artichokes, basil, and feta. Drizzle each with about 1 tablespoon more vinaigrette.
- Fold the right half of one parchment paper over contents and, starting with the top right corner, form a half-moon packet making small but tight pleats all the way around to seal completely. Repeat process to form remaining packets.
- Transfer the packets to rimmed baking sheets and cook for 25 to 28 minutes. To serve, place packets directly on each of four plates and use kitchen shears or a sharp knife tip to open packets at the table.

- Make your parchment hearts. Fold pieces of parchment in half along the long side (18″) and crease like a book. Next, cut a large, fat half heart shape from each piece. See photos in the post for example.
- Trim the chicken. With a large sharp knife, slice your chicken breast horizontally into long thin cutlets. See photos in the post for example. If baking right away pre-heat oven to 425°F.
- Prep your vegetables. Peel carrots and cut in half across the center for more manageable pieces. Cut carrots into long, thin strips (julienne) with a knife. You can also use a julienne peeler (a fun little tool!) or a julienne slicer. For leek, cut off the dark green top and the root end, using only the white and light green part. Slice the leek lengthwise and run under cold water to clean out any dirt or sand. Slice the leek crosswise into thin half moons.
- Build your packets.Place half of the carrots and leek on half of the parchment heart. Top with a piece of chicken. Sprinkle chicken with salt and pepper. Mix olive oil and mustard together and spread half on each chicken breast. Sprinkle each with fresh thyme leaves. Squeeze fresh lemon juice over the top of each.

- Combine garlic, honey, cilantro, fish sauce, oyster sauce, white pepper, and ground turmeric in a bowl, and whisk to combine.
- Add chicken to the mixture, and coat thoroughly in the marinade. Pop into the fridge and allow to sit for at least an hour, preferably overnight.
- Line a tray with baking paper/parchment paper, place the chicken on the parchment paper, fold up the sides of the parchment paper so that when you add the sauce it will not escape. Scrape all of the marinade on top of the chicken and fold the parchment into a tight little package around the chicken. Make sure there are no gaps for the sauce to escape.

- Easy baked Italian chicken and veggie packets. Packet-baked chicken-and-veggies is the quintessential lazy girl healthy dinner. It allows you to use anything in your crisper that's on the verge of ending up on the compost bin and spruces them up with a few key spices—plus olive oil for healthy fats.
- Parchment paper baked salmon with asparagus lemon and dill. The benefits of cooking salmon in parchment paper are that it doesn't stick and it stays super moist.
- Vegetable medley packets. Guess what: you don't even need to have fresh vegetables in the fridge to make a satisfying veggie dish—frozen ones cook just fine in packets.
- Greek fish packets. If you lean toward a Mediterranean diet way of eating, this recipe is about to become a beloved go-to. Topping your fish with diced pepper, tomato, and olives in the packet gives it the perfect balance of healthy fats and fiber.
- Chicken breasts in parchment paper. Just like with fish, cooking chicken in parchment paper or foil ensures all the moisture stays locked in. (The steam that basically gives you facial when you open the packets is proof.)
- Chicken fajitas packets. Craving some Mexican? This is the one for you, my friend. Cook your chicken, rice, and peppers together in a packet for a tortilla-ready meal.
- Cajun shrimp boil packets. A traditional Southern boil is quite the spread. Even if you use packets, it can still look just as impressive when plated—you just get to cheat the process a bit.
