1 pound baby bok choy, trimmed and leaves separated
12 ounces cherry tomatoes, halved
1 small shallot, thinly sliced
1 bunch thyme
2 tablespoons extra-virgin olive oil
Coarse salt and freshly ground pepper
4 boneless, skinless chicken-breast halves (about 6 ounces each), pounded 1/2 inch thick
1/4 cup dry white wine, such as Sauvignon Blanc

Steps:

  • Preheat oven to 400 degrees with racks in upper and lower thirds. Cut four 12-by-17-inch pieces of parchment. Fold each in half crosswise to make a crease, then unfold and lay flat. Toss together bok choy leaves, tomatoes, shallot, 1 teaspoon thyme leaves, and oil in a large bowl. Season with salt and pepper.
  • Season chicken with salt and pepper. Dividing evenly, place bok choy mixture on one side of crease on each piece of parchment, then top with chicken and 2 thyme sprigs. Drizzle each with 1 tablespoon wine. Fold parchment over, then make small overlapping pleats to seal and create half-moon-shaped packets.
  • Bake on 2 rimmed baking sheets until chicken is cooked through, 22 minutes. Transfer to plates; serve immediately, carefully cutting packets open with kitchen shears.

"En Papillote" is French for "in parchment," and is a classic and healthy cooking technique. The chicken and vegetables steam in their parchment parcel, adding loads of flavour with a minimum of fat.

4 boneless, skinless chicken breasts
3 tbsp butter, melted
2 tomatoes, large, sliced
4 green onions, sliced
1 cup mushrooms, chopped
1 tsp tarragon, dried
1 tsp basil, dried
1 tbsp parsley, fresh, chopped
¼ cup white wine
4 sheets parchment paper, rectangles

Steps:

  • Preheat oven to 400°F (200°C).
  • Cut parchment into a 12 in x 12 in square or cut into a big heart shape of approximately the same size.
  • With a pastry brush, coat one side of parchment paper with butter. Sprinkle with green onions and ¼ cup (60 mL) of mushrooms. Place 1 chicken breast on top and sprinkle with tarragon. Top with 2 slices of tomato. Sprinkle tomato with basil and parsley and 1 Tbsp (30 mL) of white wine.
  • Secure parchment paper by tightly folding the paper closed on all ends. Leave some space in the parchment for steam to circulate and cook the food, about an inch on all sides. Repeat with remaining 3 chicken breasts.
  • Place parcels on baking dish and put in oven. Cook for approximately 20 minutes or until chicken is thoroughly cooked and reaches an internal temperature of 165°F (74°C). The parchment parcel should puff and brown slightly.
  • Remove parcels from oven. Open parcels and remove chicken and vegetables and place on individual plates. Serve with your favourite rice, salad potatoes, or pasta.

⅓ cup extra virgin olive oil
¼ cup freshly squeezed lemon juice
2 garlic cloves (minced)
1½ teaspoons dried oregano
Kosher salt
Freshly ground black pepper
4 boneless, skinless chicken thighs (or breasts (about 6 ounces each))
4 medium summer squash (thinly sliced into coins)
1 large shallot (thinly sliced)
8 pitted green olives (cut in half)
8 cherry tomatoes (cut in half)

Steps:

  • Preheat the oven to 450°F with the rack in the middle.
  • In a large bowl, whisk together the olive oil, lemon juice, minced garlic, oregano, 1 teaspoon Diamond Crystal kosher salt, and ¼ teaspoon freshly ground black pepper.
  • Add the chicken and marinate for 10 minutes and up to 2 hours. (Don't go too long because the acidic marinade will make the texture kinda funky.)
  • Grab 4 large sheets of parchment paper, and fold each piece in half. Draw half a heart on each piece of paper so that when you cut them out, you get full hearts.
  • Open up the parchment pieces and lay them flat. Tile ¼ of the summer squash and/or zucchini on one side of the crease in each heart. Add some shallot rings on top, and sprinkle the veggies with salt and pepper.
  • Place a chicken thigh on top of the vegetables, and spoon two tablespoons of marinade onto the chicken. Top with ¼ of the olives and cherry tomatoes. Repeat with all 3 packets.
  • Fold the other half of each parchment heart on top of the chicken and tightly crimp the edges together, starting at the top-center of the heart. Make sure each packet is tightly sealed by turning and crimping the edges. At the pointed bottom end of the hearts, twist the paper to seal well.
  • Place the packets in a single layer on a rimmed baking sheet.
  • Cook in the oven for 15-20 minutes or until the chicken thighs register an internal cooking temperature of 165°F. (How do you know the temperature without opening the package? Stab the packet with a meat thermometer! By the way, if you're cooking chicken breasts, the finished cooking temperature is 150°F-and you should start stabbing at the 15 minute mark.)
  • Use a pair of kitchen shears to cut open the packets as soon as they're done cooking (but be careful-the escaping steam is hot!).

20 to 24 thin asparagus spears, trimmed
12 cherry tomatoes, halved
20 Kalamata olives, pitted
3 artichoke hearts, steamed and quartered
8 basil leaves, torn
1/2 cup crumbled feta cheese

Steps:

  • Preheat oven to 350 degrees.
  • In a small bowl, whisk mustard, vinegar, and a pinch each of sugar, salt, and pepper together. Continue to whisk while slowly drizzling olive oil in until completely combined.
  • Season chicken on both sides with salt and pepper; set aside.
