CHICKEN BROTH WITH PORK AND KALE
Kale is just one possibility for bulking out this supper of pork balls and broth. I use it because I like the fullness of its leaves with the smooth pork balls. You could use any member of the greens family, and particularly Savoy cabbage. The important bit is not to overcook the greens.

- Put the pork into a mixing bowl. Finely chop the chiles and add them with their seeds to the pork. Chop the green onions, discarding the roots and the very darkest tips of the leaves, peel and crush the garlic, and add with the green onions to the pork. Pull the parsley and mint leaves from their stems and chop coarsely, then add to the pork mixture with a generous seasoning of salt. Mix thoroughly, then roll into about sixteen balls.
- Warm a shallow film of oil in a nonstick pan and add the pork balls, and cook until they are nicely toasted all over.
- Pour the stock into a saucepan and bring to a boil, season carefully with salt and black pepper, then lower in the pork balls. Decrease the heat and simmer for five to seven minutes, until they are cooked through.
- While the balls are cooking, pull the kale leaves from their tough stalks and cook them briefly-about one or two minutes only-in boiling salted water, then drain (don't be tempted to cook them in the stock). Lower the kale into the soup and serve immediately.

- Heat a large soup pot over medium-high heat. Crumble sausage into pot; cook and stir until browned, about 10 minutes. Drain and discard grease.
- Stir half-and-half, potatoes, chicken broth, milk, onion, oregano, and red pepper flakes into sausage, bring to a boil, and reduce heat to low. Simmer until potatoes are tender, about 30 minutes. Season with black pepper; stir kale into soup. Simmer until kale is tender, 10 to 15 more minutes.

RAMEN WITH CHICKEN BONE BROTH, PORK SHOULDER, SOFT-BOILED EGG & GREENS

- Heat oven to 200C/180C fan/gas 6. For the stock, put the chicken, carrots, onions and ginger in a large roasting tin. Sprinkle with seasoning and roast for 30 mins. Transfer everything from the tin, including the fat and juices, to a large saucepan. Add the shiitake mushrooms and the pork, and pour in 3 litres of cold water. Bring to the boil and turn down to the lowest simmer you can. After the foamy scum rises to the top, skim it off with a ladle and discard. Part-cover with a lid. Let it simmer for 3 hrs but remove the pork after about 2½ hrs, or when it is very soft, and set aside. Strain the stock into a clean pan. Save the chicken and use it for something else. Boil for another 30-40 mins on a medium heat to reduce by a third, then skim the excess fat off. Add about 1 tsp salt and taste to see if it needs more.
- Boil the eggs in a pan for 6 mins, then remove and put in iced water to cool.
- Boil the noodles in a large pan, stirring so they don't stick, until al dente, about 3 mins. In the final minute of cooking, add the greens. Drain and divide between the bowls.
- Mix the ramen seasoning ingredients in a small bowl. Slice the pork and add to the bowls. Pour the broth over each and add the spring onions and bamboo shoots. Peel the eggs, slice in half lengthways and place in each bowl with a dollop of pickled chilli & shallots, if you like. Pass round the ramen seasoning and chilli oil to serve on top.

UNBELIEVABLY PRIMO PORK CHOPS AND GRAVY
Given to me by my best friend, Ronna, under threat of serious injury, this method, along with the use of boneless, thick-cut chops, qualify it as the best pork chop recipe I've ever had. No more dry, tough chops in MY house. Easily good enough for company. We always make it with Better Than Bouillon brand chicken stock concentrate, which is a paste in a jar, but you can use regular chicken stock/broth as well. Please read ingredient list carefully. It's *either* stock concentrate AND water or prepared stock and NO water.

- In a pot, warm the chicken broth (or chicken stock concentrate plus the 3 cups water) over medium heat.
- Heat the oil on high. Trim the chops of excess fat and season with pepper.
- Sear the pork chops in the (very) hot pan. Noisy work... a spatter guard helps here! Sear the chops on all sides including the edges (hold them with tongs edge-side-down). Put them on a plate, cover with foil and set aside.
- Deglaze the pan with the vermouth or wine. Add the chicken stock from the pot, completing the deglazing. Now pour everything from the pan back into the pot. (Confused yet?).
- Put the chops in the pot, reserving the foil that covered them. Check if the fluid level is high enough in the pot; it should be about 1/4 inch or less below the tops of the chops, but the chops should not be covered by the chicken stock.
- Cover pot with lid. Let simmer on medium-low for 20 minutes. Flip the chops over and let simmer for another 20 minutes, checking every now and then to assure there's enough fluid left in the pot. If not, add a little more chicken stock.
- Take the chops out of the pot and cover again with reserved foil. In a small bowl, mix the teaspoon of flour with a tablespoon of water until well-blended and whisk into the stock to thicken. Turn the heat to high and let cook, stirring occasionally, until the stock/gravy reduces slightly and thickens. This may take several minutes.
- Plate the chops with mashed potatoes and introduce them both to that lucious gravy!
