CHICKEN AVOCADO CAESAR SALAD



Chicken Avocado Caesar Salad image

Number Of Ingredients 12

1/2 of a ripe avocado
2 Tablespoons fresh-squeezed lemon juice
2 Tablespoons light mayonnaise
2 Tablespoons plain yogurt
2 cloves garlic
1/4 cup water
1 teaspoon dijon mustard
1/2 teaspoon smoked salt (or regular salt)
1/2 teaspoon fish sauce
4 - 6 cups greens of your choice (I used a mix of kale, spinach and green leaf lettuce but you can use romaine too)
1/4 lb. leftover or rotisserie chicken, cut into chunks
The other half of the avocado, cut into small chunks

Steps:

  • Put all the dressing ingredients in a mini food processor or handi chopper and blend until smooth.
  • Toss the greens with the chicken and dressing to your liking. Top with avocado, parmesan, pepitas and pepper, to taste.

1 ripe avocado, pitted & quartered
3 garlic cloves, peeled
1/3 cup grated Parmesan cheese
2 Tbsp chopped oil-cured anchovy filets
3/4 tsp ground black pepper
2 Tbsp freshly squeezed lemon juice
2 Tbsp rice vinegar
1 cup cold water
Salad:
3 heads romaine lettuce, cleaned and roughly chopped
4 cups shredded rotisserie chicken
1 (5-oz) bag croutons

Steps:

  • 1. To prepare the dressing, place the avocado, garlic, Parmesan cheese, anchovies, black pepper, lemon juice, vinegar, and water into a blender and process until smooth. Place the dressing in an airtight container and refrigerate until needed. 2. To assemble the salad, place the chopped lettuce into a large salad bowl, top with the shredded chicken, and pour the dressing on top. Lightly toss to evenly distribute the dressing. Add the croutons and serve.

  • Rub the chicken breast with the garlic powder, parsley flakes and salt. Heat a non stick grilling pan/skillet with a drizzle of olive oil and fry chicken until golden on both sides. Remove the chicken and set aside onto a warm plate. Add the bacon strips to the same pan, and fry until golden and crispy. While the bacon is frying, boil your eggs to your liking (and don't forget to check your bread in the oven)!
  • Combine yogurt, oil, garlic, anchovies, lemon juice and parmesan. Whisk until well combined; add salt and pepper to your tastes, and whisk again. Taste test.
  • Combine lettuce with the chicken and bacon strips; eggs (halved); avocado slices; shaved parmesan cheese; and bread pieces (halved). Pour over the dressing; mix well to combine, and serve!
