CHICKEN CROQUETTES WITH ROASTED PEPPER SAUCE
This recipe combines finely chopped chicken with seasonings which is then shaped into croquettes and baked. Top these tender tidbits with either a piquant tomato sauce, or the roasted pepper sauce given here.

Steps:
- To Make The Croquettes:
- Either finely chop the chicken pieces, parsley and onions, or place in a food processor and pulse.
- Tear the slice of bread into pieces and place in a bowl.
- Pour the milk over the bread, and let sit a minute or two.
- Squeeze the bread of excess milk and place the bread in with the chicken mixture.
- Add the remaining ingredients except the bread crumbs, and using your hands mix very well. If the mixture is too soft to form into croquettes, refrigerate one hour.
- Shape the croquettes into 3 inch discs or tubes, and roll in the bread crumbs.
- Bake in a preheated oven at 375 degrees F. for about 20 to 30 minutes or until they are cooked through and golden brown in color.
- To Make The Sauce:.
- Place all the sauce ingredients except the olive oil in a food processor.
- Pulse a few times until you have a finely chopped mixture.
- Do not blend!
- Add half the olive oil and pulse.
- Check the consistancy of the sauce. It should be thick, but still be loose.
- Add the rest of the oil if needed.
- Serve the croquettes on individual plates with a spoonful of sauce mixture on top or in a small dish on the side.

CHICKEN WITH RED PEPPER SAUCE

- For the chicken: Put the chicken in a resealable bag. Add the olive oil, salt, pepper and Italian seasoning to the bag and smush everything together. Seal and refrigerate.
- For the red pepper sauce: Melt the butter and add the olive oil in a large skillet over medium-high heat. Add the onion and garlic and saute for 2 to 3 minutes or until starting to soften. Add the red peppers and cook for 2 to 3 minutes, until hot.
- Add the broth (if you like a thicker sauce only add 1 cup broth, for a thinner sauce add 2 cups broth), salt and pepper and stir until heated. Splash in the cream.
- Remove the skillet from the heat. Carefully transfer the contents of the skillet to a food processor or blender. Place on the lid and puree the pepper mixture until totally blended (there will still be some texture to the peppers). You can serve the sauce right away or cool it and bag it up.
- When ready to cook, heat a grill pan over medium-high heat and grill the chicken until cooked through, about 4 minutes a side.
- Heat up the red pepper sauce in a pan. Serve everyone a piece of chicken, spoon some sauce over each piece, and garnish with Parmesan shavings and a sprinkling of parsley. Serve with roasted vegetables alongside.
CHICKEN WITH ROASTED-PEPPER SAUCE
Roasted garlic is milder and sweeter than raw garlic. The peppers and garlic can be roasted ahead of time; refrigerate them in a covered container until ready to use.

- Heat broiler. Place peppers and garlic on a foil-lined baking sheet; broil 4 inches from heat source, skin side up, until peppers are blistered and blackened in spots and garlic is soft, about 20 minutes. Let cool, about 5 minutes. Use paper towels to rub off pepper skin; squeeze out garlic cloves (discard skins).
- Make sauce: In a blender, combine peppers, garlic, vinegar, 2 tablespoons oil, and 3 to 4 tablespoons water; season generously with salt and pepper. Blend until emulsified.
- Heat grill to medium; oil grates. Rub both sides of chicken breasts with remaining tablespoon oil; season generously with salt and pepper. Grill chicken, turning once, until browned and cooked through, 5 to 8 minutes per side. Serve with sauce, and garnish with arugula, if desired.

CHICKEN CROQUETTES
I found this recipe in a cookbook from the library. It turned out to be fast and delicious! My family really enjoyed it. I didn't make the sauce because I didn't have the red pepper or the relish. I just served it with spicy mayo on the side. It tasted good without any sauce...so don't think you have to have any but its a nice addition. This works great with the rotisserie chicken you get at the store and also would be good with leftover cooked turkey. Its something different to make after the holidays that is not a casserole. NOTE: If you just have salted saltines,just omit the salt with the egg.

- Make the sauce: Stir together in a small bowl and set aside.
- Make the croquettes: Toss together all the ingredients except crackers and egg.
- Crumble the crackers over the mixture making fine crumbs.
- Pour egg over all and toss well to combine.
- Use 1/3 cup measuring cup to scoop up mixture.
- Form oval croquettes about 3" long by 3/4" high by putting mixture between palms of hands and pressing down firmly, but gently.
- Heat 1 Tbsp of vegetable oil in a 12" nonstick skillet over medium heat.
- Add croquettes and cook until golden brown on one side,about 4 minutes.
- Turn and cook until the other side turns a light brown and tops are firm, about 2 minutes.
- Press down gently with a spatula and add more oil as needed.
- Serve immediately with a dollop of sauce.
- NOTE: I crushed my crackers in a small ziplock bag before mixing them inches It seemed easier that way. I also got 8 croquettes out of this.

- Broil peppers 4 in. from the heat until skins blister, about 15 minutes. Immediately place peppers in a bowl; cover and let stand for 15-20 minutes. Peel off and discard charred skin. Coarsely chop peppers; transfer to a food processor., Remove papery outer skin from garlic (do not peel or separate cloves); cut top off of garlic bulb. Brush with 1 teaspoon oil. Wrap bulb in heavy-duty foil. Bake at 425° for 30-35 minutes or until softened. Cool for 10-15 minutes. Squeeze softened garlic into the food processor with peppers; cover and process until almost smooth. Set aside., Sprinkle both sides of chicken with 1/4 teaspoon salt and 1/8 teaspoon pepper. In a large nonstick skillet, cook chicken in remaining oil over medium heat for 3-4 minutes on each side or until lightly browned. Remove and keep warm., In the same skillet, cook leek for 2 minutes or until leek is lightly browned. Add broth, stirring to loosen any browned bits from pan. Add red pepper mixture, chicken and remaining salt and pepper. Bring to a boil. Reduce heat; cover and simmer for 3 minutes until the chicken juices run clear. - Combine 1/3 cup of the soup, chicken, bread crumbs, celery, onion and 1/4 teaspoon poultry seasoning. Mix well and shape into 6 croquettes (I make patties). Chill in refrigerator for about 1 hour.
- Remove croquettes from refrigerator and roll in additional bread crumbs. In a large skillet, melt 1 to 2 tablespoons shortening. Brown the croquettes in the shortening. Meanwhile, in a small saucepan, combine the remaining soup, milk and 1/8 teaspoon poultry seasoning. Heat over low, stirring occasionally. Serve sauce over croquettes.

This recipe draws inspiration from the old-fashioned rotisserie chickens sold along Seoul's streets in the 1970s - before Korean fried chicken entered the scene in the next decade. Cornish game hens are an excellent substitute for the smaller, younger birds often used in South Korea for this succulent poultry dish. A simple soy-sauce brine, made even more fragrant with ground white pepper, ensures inimitably juicy, tender meat that, after roasting in the oven for an hour, truly falls off the bone. A nod to pa dak ("scallion chicken"), an early-2000s trend in which shaved scallions were served atop fried chicken to cut the fattiness, this recipe calls for lightly dressed scallions for a verdant counterpoint.

- Place a gallon-size resealable plastic bag in a large bowl. To the bag, add the soy sauce, salt, sugar, white pepper and 6 cups cold tap water; stir to dissolve the salt and sugar. Nestle the Cornish game hens into the liquid, seal the bag set in the bowl and place in the refrigerator to brine for at least 8 hours and up to 48 hours.
- When ready to cook, heat the oven to 350 degrees. Drain the hens in the sink and pat very dry with a clean towel (the drier the hen, the crispier the skin). Using your hands, massage the olive oil all over the birds and place on a sheet pan, breast side up. Roast, rotating the pan halfway through, until golden brown and the legs, when jostled, feel like they're about to fall off (a sign that the meat is tender and cooked through), about 1 hour.
- Meanwhile, in a small bowl, toss the scallions with the rice vinegar and a pinch of salt and sugar to taste. To serve, top each roasted hen with a mound of the scallion garnish and enjoy with steamed white rice and yangnyeom sauce (if using), for dipping.
