EASY CHICKEN CURRY

Recipe video above. This is a Western style curry, and it's the easiest chicken curry I know how to make with the least ingredients possible without sacrificing tastiness! Very mild, not spicy at all (assuming curry powder is mild).

1.5 tbsp oil ((vegetable, canola))
2 garlic cloves (, minced)
2 tsp ginger (, grated)
1/2 onion (, finely chopped)
500g / 1lb chicken thighs, sliced ((Note 1))
2.5 tbsp curry powder ((Note 2))
270 ml / 1.25 cups coconut milk (, full fat (9 oz) (Note 3))
1.5 cups (375 ml) chicken stock low sodium
1/2 tsp salt
3/4 cup frozen peas
1/4 cup coriander / cilantro leaves (, chopped)

Steps:

  • Heat oil in a skillet over medium high heat. Cook garlic, ginger and onion for 3 minutes until onion is translucent.
  • Add chicken and cook until it it changes from pink to white.
  • Add curry powder and cook for 2 minutes.
  • Add coconut milk and chicken stock. Stir, lower heat to medium and cook, simmering rapidly, for 10 minutes until sauce reduces and thickens.
  • Add peas and salt. Cook for a further 2 minutes, then taste to see if it needs more salt. Garnish with coriander.
  • Serve over rice, noodles or mashed potato!

1 chicken breast
1 teaspoon curry powder
1 tablespoon oil
¼ teaspoon pepper
¼ teaspoon salt
2 tablespoons oil
1 cup onion, diced
1 tablespoon grated ginger
2 cloves garlic, minced
1 cup tomato, diced
1 tablespoon curry powder
¼ teaspoon cayenne pepper
1 cup chicken stock
½ cup greek yogurt
3 cups french fries
fresh cilantro, for garnish
½ cup chicken stock
1 tablespoon cornstarch

Steps:

  • Slice chicken breast into strips.
  • Add the curry powder, oil, pepper, and salt to the prepared chicken. Rub in the dry ingredients and make sure the chicken is evenly coated.
  • Heat oil in a skillet over medium heat.
  • Add the chicken and cook until partially done. Remove from skillet and place in a clean bowl.
  • Add onions, ginger, and garlic to skillet. Cook until the onions are translucent.
  • Add the diced tomato, curry powder, cayenne pepper, and chicken stock.
  • Return the partially cooked chicken. Stir and cook until chicken is done.
  • Stir in the chicken stock cornstarch slurry. Cook until the curry has thickened.
  • Turn off the heat and stir in the Greek yogurt.
  • Preheat oven to 450°F (230°C), place french fries on baking sheet, bake for 18 minutes (either from scratch or frozen).
  • Pour chicken curry over french fries, garnish with cilantro, as desired.
  • Enjoy!

3 lb chicken cut into serving pieces
1/4 tsp garlic powder
1/4 tsp onion powder
1 tsp lawry's seasoning salt
1/4 tsp pepper
2 Tbsp curry powder
1 c flour
1 Tbsp paprika
vegetable or canola oil for frying

Steps:

  • 1. Wash chicken pieces and pat dry.
  • 2. In large bowl combine chicken, garlic and onion powders, Lawry's, black pepper and curry powder.
  • 3. Rub into chicken with your hands. In large plastic bag mix the flour and paprika. Put a few pieces of chicken at a time in the bag and shake to coat repeat with remaining chicken.
  • 4. In a skillet heat 1/2 inch of oil to 350 degrees and add in chicken skin side down. Cover for the first 5 minutes, remove lid cook for 5 more minutes and then turn and cook for 10 or more minutes or until the juices run clear.
  • 5. Place chicken on paper towels and let stand 5 minutes before serving. Enjoy delicious curried fried chicken!

3 tablespoons lemon juice
¾ teaspoon curry powder
¾ teaspoon onion powder
¾ teaspoon salt

1 pound skinless, boneless chicken breast halves - cut into 1 inch strips
¾ cup dry bread crumbs
¼ cup all-purpose flour
½ cup unsalted butter

Steps:

  • In a large bowl, mix the yogurt, lemon juice, curry powder, onion powder, salt, and garlic powder. Set aside 1 cup of the mixture to use as a dipping sauce. Place the chicken in the bowl, and coat with the mixture. Marinate in the refrigerator 8 hours or overnight.
  • In a bowl, mix the breadcrumbs and flour. Dredge the coated chicken in the breadcrumb mixture.
  • Melt the butter in a skillet over medium-low heat. Discard remaining yogurt mixture. Fry the coated chicken in the skillet 15 minutes, or until juices run clear. Serve with the reserved dipping sauce.

  • Chop vegetables and prepare the shrimp.

1 lb fingerling potatoes (sliced in half lengthwise)
Olive oil
Salt (to taste)
Black pepper (to taste)
1 can of coconut milk (I use full fat Chaokoh)
3 teaspoon masaman curry paste
2 teaspoon curry powder
3 ½ teaspoon fish sauce
½ teaspoon honey

Steps:

  • Preheat oven to 400 degrees and adjust rack to lower 3rd of oven. Line baking sheet with parchment.
  • Combine potatoes, salt, and pepper in a large mixing bowl. Drizzle olive oil generously over potatoes until well coated.
  • Bake potatoes in oven for 30-40 minutes, turning once. Best if potatoes are roasted skin-side down for 1st half of roasting time, and center-side down for second half.
  • Meanwhile, heat a 1-2 tablespoons of olive oil in a small sauce pan. Add curry paste and saute briefly. Whisk in coconut milk. Bring to a simmer. Whisk in remaining ingredients.
  • Serve potatoes with curry sauce on the side or drizzled over the fries. Use chopped cilantro as optional garnish.

1 to 1 ½ pounds boneless, skinless chicken thighs or breast
1 1/2 teaspoons fine sea salt
1 teaspoon ground cumin
3/4 teaspoons ground coriander
1/2 teaspoon ground turmeric
1/4 teaspoon fresh ground black pepper
1/4 teaspoon cayenne pepper, optional for heat, add an extra 1/4 teaspoon for medium-spicy
6 medium cloves garlic, peeled
A 1-inch cube of fresh ginger, peeled
1 medium onion, roughly chopped
1 1/2 cups water
3 tablespoons vegetable oil or use ghee
2 tablespoons tomato paste
4 tablespoons full-fat plain unsweetened yogurt
1 teaspoon Garam Masala, see notes
3 tablespoons heavy cream
Handful cilantro leaves, chopped, optional for serving

Steps:

  • Cut the chicken into 1-inch pieces, and then add to a bowl. If you'd like to leave the chicken uncut or if you are using bone-in chicken pieces, the chicken can be left whole.
  • Scatter 1/2 teaspoon of the salt, 1/2 teaspoon ground cumin, 1/4 teaspoon ground coriander, 1/4 teaspoon ground turmeric, 1/4 teaspoon black pepper and 1/4 teaspoon cayenne pepper over the chicken. Toss well and set aside to marinate for at least 20 minutes.
  • Make ahead: The chicken can be left to marinate up to 24 hours, keep it covered and stored in the refrigerator.
  • Add garlic, ginger, onion and 1/2 cup of water to a blender or food processor. Blend until mostly smooth. An immersion blender with cup attachment can also be used.
  • Heat the oil or ghee in a wide skillet (with lid) over medium-high heat. Arrange the marinated chicken into the pan so that it is in one layer and brown on both sides. Remove the chicken from the pan and place the skillet back onto the heat.
  • Add the onion-ginger mixture and cook, stirring often, until all of the water has evaporated, about 5 minutes.
  • Stir in the remaining 1/2 teaspoon ground cumin, 1/2 teaspoon coriander and 1/4 teaspoon turmeric over the onion-ginger mixture, and cook for about 20 seconds. Stir in the tomato paste, turn the heat down to medium-low and then cook another minute.
  • Add the yogurt, a tablespoon at a time, stirring it into the sauce before adding anymore.
  • Return the chicken pieces and any accumulated juices to the pan along with the remaining cup of water and 3/4 teaspoon of salt. Bring to a boil, turn the heat down to a simmer, and then cover with a lid. Simmer, covered, for 20 minutes.
  • Remove the lid and stir in the Garam Masala and cream. Taste the sauce and add the final 1/4 teaspoon of salt if you feel that it is needed (we almost always add it).
  • Turn the heat back up to medium-high and cook, stirring gently every now and them, until the sauce has reduced a bit and thickened, 3 to 5 minutes. Serve with fresh cilantro scattered on top.
