1/2 cup finely chopped red apples
1/4 cup raisins
1 stalk celery, finely chopped
1 green onion, thinly sliced
1/3 cup MIRACLE WHIP Dressing
1-1/2 tsp. curry powder
32 Belgian endive leaves (about 4 heads)
3 Tbsp. BREAKSTONE'S or KNUDSEN Sour Cream

Steps:

  • Combine all ingredients except endive leaves and sour cream.
  • Spoon onto endive leaves.
  • Top with sour cream.

I just hosted a 50th birthday party for a very good friend, (and it turned out for myself also!) and I made up this recipe being that I was overwhelmed. It turned out really good stuffed into mini pitas. I used more sambal and all 4 teaspoons curry powder. Everybody said I should put it on Zaar. So here goes:

1 rotisserie-cooked chicken
1/2 cup mayonnaise
12 ounces mango chutney (Laurel's Mango Chutney chopped or 1 bottle , major gray's chopped)
1 stalk celery, chopped fine for crunchiness
4 teaspoons curry powder (or less to your taste)
1 teaspoon sambal oelek (or more to your taste)
1 (12 ounce) bag mini pita pockets, cut in half for stuffing
salt and pepper

Steps:

  • Pull all the meat from the chicken, discarding skin, bones and gristle.
  • When chicken meat is cooled, add mayo and all other ingredients.
  • Combine and let set to develop flavors.
  • I stuff them in mini-pitas cut in half. They were THE recipe at our party -- they are really good!

4 boneless skinless chicken breasts
3 stalks celery, cut in 2 inch pieces
10 baby carrots
1/2 medium side onion, cut in 8ths
2 potatoes, cut in2 inch pieces
3 whole garlic cloves
2 teaspoons madreas curry powder
1 cup sesame ginger salad dressing (Ken's)
1/2 cup white wine (chardonnay or whatever)
1/2 teaspoon crushed red pepper flakes
2 tablespoons lemon juice
2 teaspoons cornstarch
1/3 cup peanut butter

Steps:

  • Place chicken breast on the bottom of the crockpot.
  • Pile all other ingredients on top EXCEPT peanut butter.
  • Turn crock pot to high and walk away for 4 hours.
  • After 4 hours, add peanut butter.
  • Continue to cook for another 2 hours and serve over white rice.

12 slices white bread, crusts removed
3 tablespoons butter, melted
1/2 pound ground beef
5 celery ribs, chopped
1/2 cup seasoned bread crumbs
2 teaspoons curry powder
1/2 teaspoon garlic salt
Optional: Cucumber raita and chopped fresh cilantro

Steps:

  • Preheat oven to 400°. Flatten bread slices with a rolling pin; brush tops with butter. Set aside., In a large skillet, cook beef and celery over medium heat until beef is no longer pink and celery is tender, 8-10 minutes, breaking beef into crumbles; drain. Stir in bread crumbs, curry powder and garlic salt., Spoon beef mixture evenly among bread slices. Roll up bread slices; secure with toothpicks. Place on a greased baking sheet. Bake until golden brown, 12-15 minutes. When cool enough to handle, discard toothpicks and cut each roll-up crosswise into 3 slices. If desired, serve warm with cucumber raita and chopped fresh cilantro.
