Steps:
- Place the chicken legs in a roaster, brush with the mix of soy sauce, plum sauce and oil. Put aside in a cool place.
- Clean and peel the sweet potatoes and cook them in saltwater, to which has been added some sugar. When cooked drain the water and cut the potatoes into large slices.
- Wash and cut the papayas in half, remove the seeds, drip some lemon juice on each half, store in the fridge. Cook the fei (bananas) in the oven at 175oC. (Pos. 6/7) for about 15 minute (don't peel the bananas). Toss the garlic, slice the onion and put aside.
- 1 hour prior to serving, put the chicken legs into the oven, add the onion, garlic and the curry, put salt pepper and oil. After about 20 min cooking time, put 2 ladles bouillon over the chicken legs. 10 min later add the papayas the sweet potatoes and the peeled bananas and wet every 10 minute.
- Before serving, add the coconut milk. Check the finishing of the ingredients and the seasoning.
- Serve in hot plate, put the sauce, chicken leg, half a papaya, the sweet potatoes and half a banana. Baste with sauce decorate with the green onion.

CHICKEN AND SWEET-POTATO CURRY
You can make this as mild or as spicy as you like by adjusting the spices to your liking. We like it on the spicier side with plenty of ginger.

- In a food processor combine onions, ginger, garlic, curry powder,chili paste and 1/3 cup chicken broth, blend until smooth.
- Heat oil in a Dutch oven (approximately 5-quart pot) sauté onion mixture, stirring frequently until just starting to change color.
- Add sweet potatoes, okra and 1 Cup of chicken broth with 2 cups coconut milk. Bring to just where you start to see bubbles, reduce to a medium/low heat. Simmer until potatoes are tender,9 to 12 minutes. Stir in chicken strips, cook until just opaque throughout, 5 to 8 minutes. Season with salt and pepper.

COCONUT, CHICKEN AND BANANA CURRY
Moist, tender pieces of chicken in a rich almond, coconut and banana sauce-always a dinner winner in my house. Serve with boiled rice.

- Mix together the chicken pieces, garam masala and some salt and pepper. Heat the oil in a large pan and add the chicken and onion and cook for 10 minutes, stirring occasionally until golden brown.
- Add the tomatoes and cook for 2 minutes until beginning to soften. Pour in the stock, stir in the curry paste, then bring to the boil and simmer for 10 minutes.
- Stir in the cream, almonds and coconut. Peel the bananas and cut into 2cm thick slices. Add to the pan, Season with salt and pepper to taste and simmer for 5 minutes until the bananas are just tender.
- Divide between 4 plates and serve each with boiled rice, a sprinkle of fresh coriander and a wedge of lemon for squeezing over.

Steps:
- HEAT oven to 450 degrees.
- MIX in blender - Bananas, Curry Powder, Corainder, Mustard, Butter, Lime Juice, Lime Zest, Salt, Pepper, Parsley and 1/4 cup water.
- DICE chicken and place in a roasting pan.
- MAKE several cuts throughtout each piece of the chicken. NOTE: Can just put in whole breasts not diced.
- POUR sauce over chicken.
- NOTE: I made several more cuts into the chicken to make sure sauce gets inches.
- ROAST in over for about 20 - 25 minutes on lower part of the oven.
- REMOVE pan from oven and REMOVE chicken (make sure is cooked).
- PLACE pan over moderare heat on stovetop and WHISK in remaining 1/2 cup water.
- WHISK until sauce is smooth and heated through.
- NOTE: Can add more water if you like sauce thinner.
- GARNISH with fresh coriander.
- ENJOY!

SWEET POTATO, COCONUT MILK, AND BANANA CURRY (ROTISSERIE CHICKEN
This curry uses rotisserie chicken, which makes it super easy. Cooking the spices in the very beginning really helps enhance the flavor. This can be made a day ahead as long as you wait until serving time to add the bananas. Stir them in when the stew warms up and then simmer about 5 minutes.

Steps:
- Make the spice blend: curry powder, salt, allspice, cinnamon and cayenne.
- Add oil to pan.
- Add onion and wait about 4 minutes until softened.
- Add ginger and garlic.
- Add bell pepper and wait about another 4 minutes for it to soften.
- Sprinkle the spice blend over all and cook for 2 minutes, stirring constantly.
- Add the sweet potatoes, broth and water and bring them to a boil.
- With heat at medium-low, add chicken, coconut milk, and raisins.
- Simmer for 10 minutes, stirring frequently.
- Meanwhile cut the bananas, cut the bananas crosswise into 1/2 inch rounds.
- Stir in the bananas and simmer 5 more minutes, stirring frequently.
- Serve over the hot rice.
