CHICKEN CUTLETS WITH SPICY ARUGULA

Chicken Cutlets with Spicy Arugula image

Provided by Valerie Bertinelli

Categories     main-dish

Time 55m

Yield 4 servings

Number Of Ingredients 18

4 chicken cutlets, 4 to 5 ounces each
Kosher salt and freshly ground black pepper
Kosher salt and freshly ground black pepper
2 large eggs
2 cups panko breadcrumbs
1/4 cup grated Parmesan, plus Parmesan shavings, for serving
2 teaspoons Italian seasoning
1/2 teaspoon dried basil
Canola oil, for frying
Spicy Arugula, recipe follows
Lemon wedges, for serving
1 1/2 tablespoons freshly-squeezed lemon juice (about 1/2 lemon)
1 tablespoon chopped shallots
Heaping 1/2 teaspoon Dijon mustard
Kosher salt and freshly ground black pepper
Kosher salt and freshly ground black pepper
1/4 cup extra-virgin olive oil
4 ounces arugula

Steps:

  • Put a chicken cutlet between 2 pieces of plastic wrap and, using a rolling pin or the flat side of a meat mallet, pound it out about 1/4 inch thick. Season all over with some salt and pepper. Repeat with the remaining 3 cutlets.
  • Whisk the eggs in a large shallow bowl. Spread the panko in another large shallow bowl and stir in the grated Parmesan, Italian seasoning and basil. Have a large tray ready nearby. Dip a cutlet in the egg to coat all over, letting the excess drip off, and then press both sides into the panko, coating well. Set aside on the tray and repeat with the remaining 3 cutlets. Refrigerate the cutlets for 20 minutes.
  • Set a large skillet over medium-high heat, add some canola oil and heat until hot (you can check by dropping in a little bit of the panko mixture; it should sizzle). Add 2 chicken cutlets and cook until the bottoms are golden brown, about 2 minutes. Flip and cook until the other sides are golden brown and the chicken is cooked through, about 2 more minutes. Transfer each cutlet to a dinner plate.
  • Carefully pour out and discard any remaining oil and crumbs in the skillet. Heat some more canola oil and cook the 2 remaining chicken cutlets. Top each cutlet with some Spicy Arugula and Parmesan shavings. Put a lemon wedge on each plate and serve.
  • Put the lemon juice, shallots, Dijon mustard and some salt and pepper in a small bowl. Slowly whisk in the olive oil. Taste and adjust the seasoning as needed.
  • Put the arugula in another bowl. Drizzle some of the dressing around the sides of the bowl. Toss to lightly coat the arugula; taste and season with additional salt and pepper if needed.

CHICKEN CUTLETS WITH PEACH AND ARUGULA SALAD

Chicken Cutlets with Peach and Arugula Salad image

This riff on chicken Milanese replaces tomatoes with juicy peaches; their sweetness pairs well with the crisp breaded chicken and peppery greens.

Provided by Laraine Perri

Categories     Main Course

Yield 4

Number Of Ingredients 14

2 large eggs
1 Tbs. milk
1 cup plain, dry breadcrumbs
1/2 oz. Parmigiano-Reggiano, finely grated (1/2 cup)
1/3 cup all-purpose flour
4 boneless, skinless chicken breast cutlets (about 1 lb.)
Kosher salt
Garlic powder
5 Tbs. plus 4 tsp. extra-virgin olive oil
1 Tbs. balsamic vinegar, preferably white
1/4 tsp. Dijon mustard
2 large ripe peaches, pitted and cut into wedges
4 oz. baby arugula (about 4 cups)
1/2 small red onion, very thinly sliced

Steps:

  • Position a rack in the center of the oven and heat the oven to 200°F. Line a baking sheet with paper towels.
  • Beat the eggs with the milk in a wide shallow dish. Combine the breadcrumbs and Parmigiano in a second dish, and put the flour in a third.
  • Season the chicken generously with salt and lightly with garlic powder. Dredge in the flour, shaking off the excess, coat with the egg wash, then dredge in the breadcrumb mixture, patting lightly. Transfer to a wire rack for 5 minutes to set.
  • Meanwhile, in a medium bowl, whisk together 4 tsp. of the oil, the vinegar, and mustard. Season to taste with salt and pepper. Add the peaches and toss gently.
  • Heat 3 Tbs. of the oil in a 12-inch nonstick skillet over medium-high heat until shimmering. Add two cutlets and cook, flipping once, until golden and crisp on both sides, about 2 minutes per side. Transfer to the baking sheet, and keep warm in the oven. Add the remaining 2 Tbs. oil to the skillet, and repeat with the remaining two cutlets.
  • Add the arugula and onion to the peaches and toss well. Serve the chicken topped with the salad.

PRETZEL-CRUSTED CHICKEN CUTLETS WITH CAULIFLOWER PURéE AND ARUGULA

Pretzel-Crusted Chicken Cutlets with Cauliflower Purée and Arugula image

These crunchy, salty, pretzel-coated chicken cutlets are lightened up by creamy cauliflower purée (a great substitute for mashed potatoes) and a crisp arugula salad. It all adds up to the perfect weeknight meal.

Provided by Rhoda Boone

Categories     Chicken     Leafy Green     Quick & Easy     Dinner     Cauliflower     22-Minute Meals     Peanut Free     Tree Nut Free     Soy Free

Yield Serves 4

Number Of Ingredients 15

Vegetable oil, for frying (about 3 cups)
3 cups lightly crushed salted pretzel rods (about 6 ounces)
3/4 cup all-purpose flour
2 1/2 teaspoons kosher salt, plus more for seasoning
1 1/2 teaspoon freshly ground pepper, plus more for seasoning
2 large eggs
1/4 cup plus 2 tablespoons Dijon mustard
4 (6-ounce) chicken cutlets, 1/4-inch thick, pounded if necessary (1 1/2 pounds total)
1 1/2 pounds cauliflower, chopped (1 small head cauliflower)
3 garlic cloves, peeled
2 tablespoons unsalted butter
1/4 cup whole milk, or more to taste
4 cups arugula or baby spinach
1 lemon, halved
Extra-virgin olive oil, for serving

Steps:

  • Set a wire rack over a rimmed baking sheet and set aside. Fill a medium saucepan with 1/4 inch of water; add cauliflower and garlic and cover the pot. Bring to a boil over high heat and cook until florets are easily pierced with a paring knife, about 8 minutes. Drain and reserve.
  • Meanwhile, in a large, deep skillet, heat 1/2 inch of oil over medium-high heat until it registers 350°F on a deep-fat thermometer, or until a pinch of flour sizzles when sprinkled into the oil.
  • While oil is heating, add pretzels to the bowl of a food processor and pulse until some crumbs are ground fine but some are still coarse pea-sized pieces. Spread pretzel crumbs on a large plate or another rimmed baking sheet. Wipe out bowl of food processor and reserve for cauliflower pureé.
  • Place flour on another large plate or rimmed baking sheet and use a whisk to gently blend in 1 teaspoon salt and 1/2 teaspoon pepper. In a shallow bowl, beat eggs, mustard, 1/2 teaspoon salt, and 1/2 teaspoon pepper until blended. Working with one cutlet at a time, coat with flour on both sides, then dip in egg (allowing excess to drip off), then dredge in pretzel crumbs, pressing them to adhere.
  • Working in batches if necessary, fry cutlets until golden brown and fully cooked, 2 to 3 minutes per side. Transfer cutlets to wire rack to drain, and season them with salt.
  • Once cauliflower and garlic are cooked and drained, add them to the bowl of the food processor along with the butter, milk, 1 teaspoon salt, and 1/2 teaspoon pepper. Purée until smooth, adding more milk if necessary. Season to taste.
  • To serve, divide arugula among four plates. Season with salt and pepper, a squeeze of lemon, and a drizzle of olive oil. Divide cauliflower purée among the plates, and top with chicken cutlets.

PICKLED-PEACH AND MOZZARELLA SALAD WITH FRIED CHICKEN CUTLETS

Pickled-Peach and Mozzarella Salad with Fried Chicken Cutlets image

Perfect simple dinners with our fried chicken cutlets, topped with mozzarella, sweet pickled peach, and bocconcini salad.

Provided by Martha Stewart

Categories     Food & Cooking     Ingredients     Meat & Poultry     Chicken     Chicken Breast Recipes

Time 35m

Number Of Ingredients 10

4 boneless, skinless chicken-breast halves
2 large eggs
Coarse salt and freshly ground pepper
1/2 cup all-purpose flour
Safflower oil, for frying (about 4 cups)
4 Sweet-Pickled Peaches halves, cut into 1/2-inch-wedges, plus 1 tablespoon brine and more brine for serving
5 ounces (1 cup) small mozzarella balls (bocconcini)
2 tablespoons extra-virgin olive oil, plus more for drizzling
Arugula, for serving
1/4 cup small fresh basil leaves, for serving

Steps:

  • Cut each chicken breast horizontally almost completely through, leaving one side intact. Open up like a book. Cover with plastic wrap and pound to an even 1/4 inch thick.
  • Whisk eggs in a shallow dish; season with salt and pepper. Put flour in another dish, season with salt and pepper, and whisk to combine. Heat 1 inch safflower oil in a large straight-sided skillet over medium-high until a thermometer registers 375 degrees (a bit of flour should sizzle immediately when dropped in).
  • Working with one breast at a time, season chicken with salt and pepper, then dredge in flour mixture, tapping off excess. Dip in eggs, letting excess drip off, then coat again in flour mixture. Immediately place in hot oil and cook until golden brown, about 1 1/2 minutes a side. Remove with tongs and let drain on paper towels. Season with salt. Repeat with remaining chicken, adjusting heat as necessary to maintain oil temperature.
  • Toss together peaches, brine, bocconcini, and olive oil in a medium bowl. Season with salt and pepper. To serve, top cutlets with peach mixture and arugula, sprinkle with basil, and drizzle with more olive oil and more brine.
