TRADITIONAL EGGNOG
A great traditional eggnog with brandy and dark rum. I found this recipe a few years back and have been making it around the holidays and giving it as gifts every year since. It usually goes pretty quick and a lot of my family and friends who say they don't like eggnog like this stuff!

Steps:
- Beat eggs with an electric mixer on medium speed until very frothy, 2 to 3 minutes. Gradually beat in sugar, vanilla extract, and 1/4 teaspoon nutmeg. Stir in cream, milk, brandy, and rum. Chill before serving. Sprinkle individual servings with remaining nutmeg.

Steps:
- Start by preheating your oven to 325°F and then making the crust. I used my blender to crush the gingersnaps, then poured them into a bowl and added the sugar, cinnamon and melted butter. Mix it all up until the crust is all soaked with butter!
- Pour the crushed cookies into a 10″ spring-form pan and up the sides at least an inch.
- in a large mixing bowl, beat the cream cheese until very light and fluffy. Then add the eggs, one at a time, mixing after each addition and scraping down the sides as needed.
- Next you'll need to add in the eggnog and mix until smooth. After that, add the sugar, flour, and cinnamon. And yes... mix again until smooth and creamy.
- Pour mixture into your crust and bake it for 1 hour, then turn the oven off and crack the oven door. Leave the cheesecake there for another hour. After that, you can move it to a cooling rack to come to room temp or cover it and move it directly to the frig.
- cool and chill for 6-8 hours before serving.

UNCLE ANGELO'S EGG NOG
What makes this recipe special is its lightness: twice as much milk as cream, and the white of the egg whipped stiff and folded into the mix, so it was almost like clouds on top of the eggnog.

Steps:
- Beat the egg yolks well until they turn light in color, adding 1/2 cup of the sugar as you beat. Add the milk, cream, and liquor. Then beat the egg whites with the remaining sugar until they peak. Fold the whites into the mixture. Grate the fresh nutmeg over the drink.
4 ROSES EGG NOG
Steps:
- Separate 6 egg yolks from whites. Reserve whites in fridge, covered. Add yolks to the 12 remaining whole eggs and mix thoroughly. While stirring eggs, gradually drizzle in bourbon, rum, and brandy until fully mixed. Place in fridge overnight. The following day, add 2 cups sugar to egg mixture. Start with 1 1/2 c then add remainder to taste. Stir until completely dissolved. May add more sugar to taste. Add half/half and milk to mix. Whip egg whites to soft peaks, fold gently into mix. Whip cream with 1/2 c sugar, then fold into eggnog. Sprinkle nutmeg on top. Serve very cold, sprinkle additional nutmeg in individual cups to taste.
